Pesto Chicken Tortellini 👌🏻
Cook 1 cup of packaged tortellini of choice according to package instructions.
Heat a pot and add 2 tablespoons of extra virgin olive oil. Add sliced chicken breast or tofu and season w/ salt. Add 1/3 cup of chopped sun dried tomatoes (remove oil from canned sun dried tomatoes before cooking). Cook and stir until chicken is fully cooked. Remove chicken and sun dried tomatoes from pot. Leave oil in pot and add 1 pound of asparagus (trim ends first) and 1/4 cups of chopped sun dried tomatoes. Cook until asparagus is cooked through. Remove asparagus. Add chicken back into pot and 1/4 cup basil pesto. Stir and coat chicken w/ pesto sauce. Cook for about 2 minutes. Turn off heat and add tortellini and 1 cup cherry tomatoes (halved). Mix with chicken and pesto sauce. Add more pesto if you'd like. Taste and add salt as needed. Serve with asparagus and enjoy! So good!! You're welcome!!!

Thai Green Curry with crispy tofu and veggies. I made this last week and attempted my own curry paste because the store bought ones all seem to have fish sauce in them 😤
Not too bad but I need to get the balance of flavour a bit better. Love the taste of fresh ginger and lemongrass though 😋
