Let's talk about iron and excuses to have pasta *again* 💪🏻🥙 🌱 when the pasta sauce has been made in an iron cast skillet, it can ⬆️ the iron content of food ~2000% if the contents are acidic, allowing the iron to leach into the pasta sauce (tomatoes = acidic), and then the sauce includes spinach, also high in iron so there you go, excuses to make pasta for the 473972947x this week 😊 🌱 especially important to have more iron if you are a menstruating person, especially so if you have a heavier period 🌱 no, vegans do not usually need iron supplements 🌱 no, vegans aren't iron deficient 🌱 you can be iron deficient as an omnivore or even eating a high amount of red meat (see @annietarasova's story) 🌱 to absorb iron better, eat it with acidic foods such as tomatoes, lemon juice etc 🌱 spinach, tofu, pumpkin seeds, quinoa etc are all great sources of iron

I made @willfrolicforfood 's delicious golden beet romesco and bbq eggplant bowl last night and I think it might kill the sauce game. I just wanted to spoon the sauce directly into my mouth after I had finished blitzing it, it's absolutely heavenly ✨
But I waited and was rewarded with a beautiful mingling of flavours from the bbq eggplant to the - barely visible in this picture - mushrooms.
