A short commentary on the few “faults" during my meal at @whitegrassrestaurant, which I believe are mostly based on personal preference.
(Pic 1, Course 6) Australian Black Angus Beef, Fermented Black Beans, Truffles, Veal Broth
While it was a creative use of fermented black beans, the beef here reminded me of what pork liver tastes like, and I am not a fan of pork liver. You occasionally get that from beef cuts such as tenderloin, or when it is grass-fed, both of which I suspect were characteristics of the beef used in this dish.

For me, the texture of the jelly felt a little too hard compared to the rest of the ingredients on the plate, especially when juxtaposed against the subtlety in flavours.
(Pic 3, Course 4) Japanese Red Bream, Geoduck Clam, Lettuce Heart, Green Almonds, Roasted Fish and Seaweed Broth
Both my friend and I agreed that the fish was a little dry.

Umami Pearls was just a fancy way of naming “Sago”…
(Pic 5, Amuse Bouche) Sesame Biscuit with Garrotxa Cheese, Pickles
Tartlettes of Sweet Peas in Kombu Butter
Deep Fried Fresh Water Crabs with X.O Sauce and Salted Egg Yolk
(Pic 6, Amuse Bouche) Beetroot, Feta, Cherry Crumbs
Chocolate Truffles 🍫
– 1 cup Ground Almonds
– 1/2 cup Of Cacao
– 2 tbsp of Peanut Butter – 2 tbsp of Dairy Free Milk
– 2 cups of Dates – 2 tbsp of Honey
– 1-2 tbsp of Chia Seeds
- Choc Protein Powder (Cacao)
- Kcal Free Syrup/Flavouring (Honey) 🐝
- Maca Powder (Chia Seeds)
Blend all ingredients - BLITZ!!
Then roll into balls and set in the fridge for 2 hours.
I rolled some of mine in Cacao Powder & Coconut 🥥 - great decision! .
