Chef Krista Kern Desjarlais held the first of her monthly dinner series at The Purple House last night. The 10+ course meal featured fish, waterfowl and shellfish from Maine. It was an excellent feast, some of my favorites dishes were the crab and caviar, lobster (with herbs, greens, brioche, coral butter and husk cherries), yellow squash ravioli, and the charred tuna belly. You can see the full menu at the end of this photo series. The meal itself ended with a set of mignardises including gummy bears made with Brachetto d'aqui. Chirashi don 🍣| I wanted to try as much variety of fresh seafood as possible when visiting Tsukiji Fish Market, so this is what we ordered! Salmon, squid, chuutoro,?? (Snapper? Yellowtail? Let's be honest, was busy stuffing my face shortly after this photo to ask), maguro (Bluefin tuna), octopus, kazunoko (herring roe), amaebi (sweet prawn), anago (sea water eel), ikura (salmon roe) and tamago (egg). The highlights were the maguro, chuutoro, amaebi, uni, tamago and the ?? 😅Tuna tastes so good in Japan! Tuna back home is mostly mushy 😐 Once again, the sea urchin was sweet and creamy, with none of the fishiness. The herring roe (yellow bits) was very firm and crunchy, much to my surprise, as I was expecting a softer texture like their orange counterparts. Didn't like that too much. I usually avoid squid and octopus sashimi back home because they more often than not taste like gasoline and/or too chewy/rubbery. The ones here didn't taste like gasoline, and were less chewy, but still... not for me. The giant globules of ikura were a nice surprise; not as salty as I had expected, but rather had a hint of sweetness. Texture is like popping boba. I find tamago to be underrated by most (guilty)- the subtle sweetness makes it the best ending to the seafood bowl.
The other bowl was basically a combo of all the good things from the first 😋 Oh, for the record, chuutoro (medium-fatty tuna belly) > ootoro (fattiest tuna belly)
Beautiful Toro (Tuna Belly) has arrived today at best/freshest condition, I was dealing with these this morning found it is not as fatty as last time since each lived in different habitats.
