So today's breakfast is some tofurkey kielbasa, cut in half and then lengthwise and seared in a pan with about a teaspoon and a half of vegan friendly butter:) I use @smartbalance dairy free with omega threes and it's a definite staple in my fridge. In-love. Then I've got some roasted yellow cherry tomatoes for a little sweetness. Lastly, I've got my scrambled tofu! I'll post my recipe in the upcoming days. ✨🍓It's been a stressful week over here. We are in the midst of a custody "battle" over my six year old daughter and have spent HOURS upon hours with lawyers and in meetings all week. I've had to be away from both of my girls, eat a lot of meals out of the home (not something I normally like to do) and talk about all of the real life "ugly" stuff. Anxiety and stress have taken a HUGE toll on my body & brain and I am now slowly coming out of the "fog" I've been living in all week. Last night I forced myself to slow down and go to bed much earlier than I normally would, I slept for 10 hours and this morning I ate this HUGE bowl of fruity goodness to start my day. I am so thankful this vegan lifestyle choice has made such a huge impact on me because in highly stressful situations previously, I would have ate my feelings in meat & dairy filled pizzas, burgers and ice cream and in turn felt even worse all around. This season of life we are in is probably one of the hardest I've experienced in my 29 years earth side but I am bound and determined to make it through this a stronger woman, mother, partner and friend without allowing my health to fall to the wayside. So that's a small peak into our life right now and I appreciate you reading, sending you ✨ good vibes only for the up & coming weekend. ✨

2 🍌- 1 frozen
1/4 cup raw oats
2 tsp chia seeds
1 tsp @earthcircleorganics maca powder
1/2 cup frozen bluebs
2 HUGE handfuls of baby spinach
1 cups @lovemysilk almond+coconut milk 🌿Toppings 🌿
1 tsp @traderjoes raw sunflower seeds
1 tsp raw pepitas
1 tbsp @traderjoes unsweetened coconut flakes
Handful of homemade maca coconut granola
We were feeling so tired after a long day for both of us and we kept contemplating ordering food but it's been one of our recent goals to eat at home whenever possible! So we decided to help each other and we made these burritos rather quickly and without a ton of effort or thought.
Flour tortillas with jasmine rice, black beans, red & orange bell peppers, black olives, cilantro and avocado slices inside then we mixed nacho cheese and salsa together and drizzled that on top along with more avocado slices and cilantro and we crumbled blue corn tortilla chips on top also:) They turned out to be super tasty and we were so glad we are healthy and saved money:)
Spent my 6 month 'veganniversary' in Thessaloniki, Greece, where the fresh OJs are as good as the sunsets.
According to the math on vegancalculator.com, apparently six months vegan equates to savings of 1640kg of CO2, 750,000L of water, 3,300kg of grain and 500 sq m of forest. And 180 animals lives.

Yesterday we harvested Marigolds for natural dye "potion". 😁🏵️✨ We took our time picking and choosing the blooms, he liked the ones with more red the best. Then trimming the pedals and adding water for their over-night soak. The Man Cub was totally immersed in this whole process as he usually is with anything to do with outside and nature. Not to mention this little bee loves busy work! 🐝 Stay tuned for dyeing process and finished products!! 💛

🍿🍿 so! Homemade non-fried thin potato chips! Peel the boiled potatoes (6-8 pieces) and mix with 2-3 tablespoons of neutral oil and 1 tablespoon of sesame seeds (can be left out). Season after your own taste. I love cayenne and red peppers. Or sea salt and black pepper. Roll between two baking paper with a rolling pin, remove the one on the top and bake for about 130 C hot air for 30 minutes. Or 150 c in a regular oven. Keep an eye!

I'm leaving for a much needed vacation in the morning to meet up with my dad, so I cleaned out the last bit of produce.
BREAKFAST: Apple Carrot Beet Juice (this picture does no justice for how pretty the color was).
LUNCH: Pineapple Orange Juice.
SNACK: I went a little nuts 😜*badumtshh 🥁* 😐 Pistachios, Walnuts, and Pecans.
DINNER: Raw Hummus Veggie Wrap.
DESSERT: Homemade Vanilla Cashew Nice Cream, Raw Chocolate Sauce, and Banana Peanut Butter Raw Wrap.
Pray for me, maaayne. I'm hoping I can stay strong and stick to being raw on this trip. It might be hard not having access to a kitchen. 😖
2 YEARS VEGAN!!!
On August 18th, 2015, I made the switch. The road to veganism wasn't direct, nor did it happen overnight, but when I made the decision, my life changed. My health journey started in late 2008. I was 26 and felt like crap. I was overweight, experienced joint and muscle pain, and I was tired ALL OF THE TIME. Now, being athletic for the majority of my life, I knew that this was no way to feel. I was too young to be feeling this way. What would I feel/look like at 30? 45? Luckily, I quickly discovered the link between sickness and diet. Because not only did I feel horrible, although I was "healthy" according to medical standards, everyone else around me, if they were honest with themselves, had something going on to. After doing a little research, I decided to move to a pescatarian diet the day after boxing day. That continued for about 7 years. I somehow believed that eating only fish was healthier and less harmful to the animal. Wrong. I did improve my health significantly, but then somehow found myself floating back to the vegetarian SAD. When I studied Nutrition, a vegan diet was not encouraged. Which was disappointing because I went to school to learn how to heal with food. Plant-based foods to be exact. Thanks to the universe, on the first day of school, I would come to learn that the only vegan in the class sat right beside me. That summer, along with a couple other classmates, we went to a farm sanctuary and then the rest was history. That was it. Decision made. Well kinda...when I came back from our trip I remember having cheese pizza ONE MORE TIME! That cheese is a drug y'all! By the next day, I was VEGAN!!! I haven't looked back since.
Over the next week or so I will be speaking more about my journey. I will also be posting more information regarding veganism.
Why did I become vegan? Simple. Because it made sense.
My first attempt on making vegan mushroom swiss burger. My little brother who's actually a meat eater couldn't believe that this is vegan. The bun is vegan, the patty is vegan, and yeah, the cheese is also vegan 😉. Gonna make another of this with extra fillings, hopefully will come out even prettier. #gueyangmasak#myowncooking

This is a beautiful example of how the world is changing. I commend farmers for having the courage and compassion to donate "their" animals when they make the decision to no longer farm them. Read carefully: one farmer, Jay, states how he has seen a range of emotions from cows, that they have good memories, how they form relationships, and that he has even seen them cry 😓. The farmer, who wishes to remain anonymous, explained his decision:
. “How could I send them to slaughter when there is this option for them? After all these years, they deserve more from me and they are very bonded as a herd. I can retire with peace of mind now, knowing they will live out their days together.”
The herd will be sent to live at Hillside Animal Sanctuary in Norfolk. Hillside has running since 1995 and is now home to over 3000 animals, and is one of the largest campaigning organisations for the animals’ cause in the UK.
The Irish farmer is not the first to donate his herd, many of whom were pregnant, to Hillside in order to save them from slaughter, as earlier this year, Jay Wilde – a vegetarian farmer in the East Midlands – also sent his herd of cows to live at Hillside animal sanctuary and decided to focus on growing crops instead. Speaking about his decision at the time, Jay said:
. “I’m relieved to have made the decision to no longer farm animals, something which I always found quite upsetting. Cows have good memories and a range of emotions. They form relationships. I’ve even seen them cry.”
Since then, one of the 59 cows donated to has given birth to beautiful twin calves.
