These are made with sweet potatoes, dates, maple syrup - something different 🤷🏼♀️
a scoop of @thatprotein raw cacao powder and a few chunks of @sofreechocolate dark chocolate. 👏🏼🍫🌱
Although these crumbled slightly as I took them out the oven a little to early. 🤷🏼♀️🤦🏼♀️🌱

Birthday dinner for my son, made a vegan pizza from a rosemary focaccia bread and the mango icing I made on the cake thickened up really nicely as it cooled and tasted amazing however the cake itself was very heavy 😞

It's mandarin season & with tons of mandarins in our fruit bowl, I wanted to find a recipe to use up a few. I'd seen a non vegan cake recipe in a magazine, so decided to try making a vegan version. I started by covering the bottom of a pan with a mandarin & sugar mixture, & then used my regular vanilla cake recipe, adding a little mandarin juice & zest to make it zingy. Success! Unfortunately, the mandarins on the bottom of your cake pan may move, despite your best efforts. It happened to me even though I crammed them together. Just try your best. ☺️ Vegan Mandarin Cake
* 1 & 1/2 Tbsps vegan margarine
* 2 Tbsp caster sugar
* 10 mandarins, peeled & sliced in half
* 3/4 cup + 2 Tbsp soymilk
* 1 tsp apple cider vinegar
* 2 Tbsps mandarin juice
* 1 1⁄4 cups flour
* 2 Tbsp cornstarch
* 3⁄4 tsp baking powder
* 1⁄2 tsp baking soda
* 1⁄4 tsp salt
* 1⁄3 cup canola oil
* 3⁄4 cup sugar
* 2 tsps vanilla
* Zest of two mandarins
* Preheat oven to 175C/350F. Prepare a cake pan (I used a 22cm/9" pan) by spraying with cooking oil & lining with baking paper.
* Smear margarine across the bottom of your pan. Sprinkle on caster sugar & arrange mandarins across the bottom. Try to fill all gaps with mandarin segments. Some will shift, unfortunately! For the cake photographed, I covered every cm with mandarins, but while baking some moved.
* Whisk soy milk & vinegar together & let sit a few minutes until curdled. Add in mandarin juice.
* Beat together soy milk mixture, oil, sugar & vanilla in a large bowl.
* Sift in the flour, cornstarch, baking powder, baking soda & salt, & mix until no large lumps remain. Fold through mandarin zest.
* Carefully pour mixture into your pan.
* Bake for 35 - 45 mins or until done. * Transfer to a rack & cool completely. Carefully tip cake upside down, so mandarins are on top.
When I LOVE something I cooked, I never know if it's because I was super hungry before eating it, or it was just that good 😂. Nevertheless, can you believe this Warm Potato Salad Bowl came together in 20 minutes??? I put in some work the day before to make the seitan, from Vegan With A Vengeance, but when I was ready to make it, the prep work only involved cutting the potatoes, washing and trimming the asparagus, and cutting up some onions and garlic. After being boiled, the potatoes are simmered in a sauce of whole grain mustard, mayo (I used Hellman's vegan mayo 🤤) and broth. The seitan and asparagus are grilled simultaneously on a grill pan for those grill marks 😛. @isachandra is an absolute genius, and this was perfect for a hearty summer dinner. 👏🏻

We have been talking lots about kindness and how the world is full of kind, generous, good, brave people. It was this that led us (armed with a plate of freshly baked lemon biscuits!) to the doorstep of a local fire station. The boys said thank you to the firefighters for being brave and helping others. We had expected to give the biscuits and go but instead we were invited in and were blown away by the firefighters hospitality and kindess. A huge thank you to the firefighters of White Watch at Eastleigh Fire Station, your extraordinary kindness has given my 3 year old memories that, I have no doubt, will last a lifetime.
