When I first met @raw_manda, I was surprised. Trying really hard right now to push out the negative and nagging emotions and thoughts I’m feeling, and only let in the positive. Thinking positively when you’re feeling anxious and run down is the absolute hardest time to do this, but that is what makes it all the more powerful. If we learn to do this, we take hold of our strength. We are NOT our thoughts. Learning to overcome this feeling and turn it on its head, learning to accept it and move on, learning to let go of negative emotion and invite positive thoughts in. Meditation, gratefulness and perspective. Thinking intuitively and listening to your gut. Getting in touch with yourself. I get carried away with my emotions, sensitivities and sweat the small stuff far too often. The last week has been hard on me and today I’m setting myself the goal to overcome it. Learn from it. What can I do better in these situations? What should I stop worrying about? How far have I come in the last year? What options do I have to solve the problem? Everything is temporary; every feeling, emotion, thought, and it does not define you. The sun will rise again tomorrow. Today I am asking myself what I am happy for, what I am grateful for and what makes me smile just like I am in this photo. What are you happy about? What are you grateful for? (I am also going to clean the heck out of my house because feeling down/stressed does not make for a tidy Maddie)

Trying out the last of this years massive variety of Christmas lunch options - @caffenero falafel wrap. 🌯🌱
Honestly I didn’t think the cranberry sauce would work well with falafel, but the flavors actually tasted pretty good together. The spiced slaw was a welcomed change from the usual hummus, so I’d say a tasty wrap that would be great to have available throughout the year. 💁🏼♀️🌱
Not forgetting the salted caramel soya latte. 💁🏼♀️☕️🌱
I’m not even a fan of salted caramel, but after those Morrison’s doughnuts the flavor has definitley grown on me. 🤷🏼♀️🌱
The festive lunch choices this year have just been amazing. Personally I would go with the Pret sandwich as the best option (vegan stuffing anyone? 💁🏼♀️) but the supermarkets have embraced vegan food and given well thought out lunches. 👏🏼🌱

BAHN MI STYLE COLLARD WRAPS 😱🍃💥I haven't made veggie wraps in a while and these totally filled the void 👌 They're like nifty lil on-the-go salads!! 🏃♀️🥗 Recipe dets below:
- 1 bunch of collards (about 6 leaves depending where you shop)
- 1/2 head of purple cabbage (shredded)
- 1 carrot (julienned)
- 3 cucumbers (julienned)
- 2 avocados
- 1 bell pepper
- @Hopefoods curry coconut hummus (I usually make hummus from scratch but I really needed a time-saving shortcut for this elaborate recipe haha and this flavor of hope Foods hummus is my absolute fave)
- Mango-ginger chutney (let me know if you want this recipe!!!)
Not a perfect photo, since this is too delicious to not be eaten immediately 😋 Ever since I went to Helsinki 🇫🇮 and had my first vegan Korean Bibimbap, I knew I wanted to create something similar myself. I don't have a Gojichuang sauce to make it authentic, but my glutenfree mixture is equally delicious to me and maybe easier to recreate 😊 Let me know if you want me to figure out the ratio of my ingredients and I'll post it. ✨

Leider hab ich keine Gojichuangpaste/-soße, weshalb meine glutenfreie Mischung nicht so authentisch ist. Aber ich finde sie ebenso lecker und man kann sie wahrscheinlich auch leichter nachmachen 😊 Sagt bescheid, wenn ich meine Mischungsverhältnisse mal für euch aufschreiben soll. ✨
Toppings: Grünkohl (roh, nur mit Salz massiert = weich), rohe Möhren, marinierter Tempeh mit Knoblauch, gebratene Zucchini, Frühlingszwiebeln, gebratene Pilze und Mungbohnensprossen.

Holiii, ya todo es felicidad porque estamos a casi viernes🙌 sin embargo ya saben que el frío ha hecho aparición en estas tierras calurosas así que ultimamente lo único que se me ha antojado es comer cosas calientitas, y una avena hervida es mi solución al frío mañanero❄
Lo que hago es hervir la avena(aprox 1/4 de taza y un poquito más) con agua, cacao (1cda), vainilla y canela, lo mezclo y lo pongo a fuego medio hasta que el agua se absorba, oigan el olor de esto cuando se va cociendo es riquiiiisimo!😍 huele como a pan recien horneadito🍞 jajaja, luego lo paso en mi platito y decoro, esta vez usé blueberry, plátano y zarzamora con amaranto espolvoreado🌱

• 1 sachet (28g) @missfitsnutrition choc
• 2 tbsp @indigo_herbs coconut flour
• 1/4 cup smooth @pipandnut pb
• 1 tbsp maple syrup
• 50g mixed nuts
• 3 tbsp almond milk
• blitz nuts in a blender so you have a mix between ground & chopped
• in a bowl mix all the ingredients together until well combined
• roll into different size balls. just for the fun of it
for the chocolate layer, melt 1 bar (75g) @miaflavour hazelnut & cranberry dark chocolate in a bowl over a saucepan with boiling water. dip your balls into the chocolate.
for the nutty topping, blitz 1 tbsp mixed nuts & 1 tbsp @naturya goji berries. sprinkle on top.
leave in the fridge to set for 1-2 hours or 30 mins in the freezer.

Visited a piece of "the most magical place on earth" - Epcot- for the food and wine festival back in late September! Vegans are totally welcome at the Food and Wine Fest 😉 nibbled on some yummy vegan goodies like the fully loaded nachos in Greece. Also enjoyed the spicy red lentil stew in Africa 👌🏻 Spicy hummus fries in Morocco. Dessert was the banana almond soft serve with berry sauce from the Almond Orchard 🙌🏻 A great ending to the many delicious drinks and food consumed that day!

CROSS TRAINING// taking the next week or so off of running (perfect timing, it’s fucking cold outside) and focusing on things that I’ve let slide like strength work. This morning I did some plyo, light weights and stretching and it felt good. I also realized that im pretty weak and have zero balance. 🤷🏼♀️
these are both delicious. Like, eat until the bag is finished kind of delicious. So they’re also dangerous but 🤷🏼♀️ really nice fruity flavour rather than just sickeningly sweet and the texture is soo nice

🌱Medio vaso de agua o leche de almendras (yo uso la de @sanisimovenezuela)
🌱3 Cucharadas de avena en hojuelas
🌱1 Cucharadita de canela en polvo
🌱 3 Bananas
🌱1 Cucharada de cacao en polvo
🌱1 Chorrito de vainilla orgánica
🌱1 Cucharada de azúcar de coco (Stevia también sirve) **
🌱2 Cucharadas de linaza en polvo
🌱½ cucharada de polvo de hornear
🌱Pizca de sal marina
1. Utilizar un sartén de teflón (No necesitan agregarle aceite, solo dejen que caliente bastante para que no se pegue)
2. Mezclar todos los ingredientes en la licuadora (Yo uso nutribullet)
3. Ir colocando la mezcla en el sartén, del tamaño que prefieras
4. Cuando le salgan burbujistas es cuando estará lista para voltearse, no lo hagas antes porque puede ser fatal
Stuffed Bell Peppers: This is one of my favorite dishes in MiRAWge’s Vegan Kitchen Vol. 1. It is perfect for meal preps, quick weeknight dinners, and parties and tailgating! The filling has a meaty flavor and texture. It is super savory and loaded with umami! I served it with the Nacho Cheese dip (also featured in the recipe ebook) to give it a spicy creamy element and to really push the tex-mex flavors through. Garnish it with some cilantro, smoked sweet paprika and a little avocado 🥑 and it was the perfect dish to finish any day! 🤤 🤤 🤤
