Loaded baked potato fries topped with corn, tomato, black beans, steamed broccoli (can't forget the veggies), mashed avocado, and a vegan sour cream drizzle 😋😋 what's your favorite way to eat fries? Normally I would just dip them into ketchup and barbecue sauce, but this time I felt like getting a little fancier 😊😊
To make the fries:
Preheat the oven to 400°F. Cut the potatoes into 1/4 inch thick fries and toss with your favorite spices--this time I went with turmeric, garlic powder, chili powder, cumin, and black pepper. Spread the potatoes out onto a parchment lined baking sheet and bake for 20-30 minutes ☺☺🙂
For the mashed avo, I combined an avocado with lemon juice, garlic powder, cumin, nutritional yeast, salt, and black pepper 😋😋 so good!

Nourishment in a bowl 💚😍 This Buddha bowl contains micronutrients from the veggies, protein from chickpeas and tempeh, iron from the greens and beans, just to mention a few! 🙌🏼So if you are ever stuck for ideas, just put all your fave wholefoods onto a bowl, top it with your favourite sauce (I used @mayversfood tahini, but sriracha, ketchup or anything would work) and wallah! - a healthy nourishing meal is ready! Buddha bowls also work well 👅

On busy nights I am so glad I took time to prep veggies for the week! I think some call this batching - I just call it stress reliever! 😂 Because when you are hungry you are haaangry right?! Okay, I have been known to be this definition of the urban dictionary - so hungry your angry (haaangry!?). Yes, don't encounter me in a dark alley on my way to seek out food. 😈 I see food, I will conquer. 💪 And that is what happened to this bowl. It was conquered! What's in the bowl? Grilled peppers, onion, summer squash, zucchini, asparagus - sliced beets and roasted chickpeas. Avo, Salsa from @gardenfreshgourment, a drizzle of cashew less queso from @minimalistbaker and some garden fresh yellow cherry tomatoes!! #gardenfresh#mealprep#veganbowls#hungry

Went out to lunch with a couple of coworkers to aloha kitchen. They didn't have many vegan options there but what I ended up getting was delicious. I just got a veggie bowl with white rice and teriyaki sauce and then I added mushroom and onion. 🙌🏼

Tofu, frozen banana, frozen blueberries, maca powder and coconut water for the base. Kiwi, strawberries, frozen blueberries, chia seeds and hemp seeds for the toppings!
I decided to turn my daily green smoothie into a prettier green smoothie bowl topped with passionfruit and nasturium leaves & flowers from the garden 💚
I change it up most days depending on what's in the fridge, but if any wants the recipe just let me know. .
