My latest obsession, ovenbaked onions in all ways - rings, the whole one, cubed, sliced... I basically marinate them like all my oven veggies in chickpea water, garlic powder, tamari sauce and spices. Find the basic recipe is on my blog.
So guess what, dinner was a bowl full of ovenbaked goods as onions, tomatoes and potatoes topped with a bunch of parsley. Plus nutritional yeast of course, #NoDayWithout . This pic is from Friday where I had the same. It’s just too dark for taking a pic of my dinner right now.

Good morning Thursday!! Yoghurt, cinnamon and vanilla fried apple, granola and peanut butter for breakfast today 😋 ➡➡ 11 hours sleep was much needed😴 it's easy to forget how much energy your brain requires (i.e your brain needs c.a 800kcal a day) and then when your studying and focusing it requires even more. So even if you may just be still while studying, Don't forget that you need lots of good fuel and rest to focus on your studies! (I.e even if you dont workout you still need to eat and nourish your body and brain. How can you expect to concentrate and focus if your brain doesnt have enough energy?)
➡➡I know most students have lots of tests and exams when it's Christmas time (myself included), but don't forget about your mental health and resting enough! There is no point stressing so much that by Christmas and New year's all you do is stay in bed because you are so exhausted. (It's easier said than done, to not stress) but remember to take care of yourself and eat nourishing food and take pauses every now and then! Good luck to everyone with exams and finals and assignments due 💕💕

They were really expensive, two tiny tubers for £2.50 😱 Well...I didn’t think they were special, especially not for £2.50 😂 At least I can say I’ve tried them...

✨🍃 Some gofio (Canarian food, flour made from roasted grains) cooked in cinnamon and soy milk, with some banana and coconut flakes. With some coffee of course 💫☕ to kickstart my morning!
A while ago I decided to cut down in coffee and now I only have a cup in the morning, and then some tea at mid-morning if I feel like it. There's nothing wrong with coffee, but it's true that I tended to overdo it some years ago. I felt at the time like I had to cut the habit completely - I felt really hooked and I believed (and still do) no extremes are good at all. From my experience, not having some coffee at ALL in something like a year and a half, made me feel pretty good. Now I have some every now and then and it's cool - I learnt that I cannot have more than a cup a day, I already have enough energy from good food and get some kind of anxious if I have a lot of caffeine! Plus it can make me suffer from sleep deprivation.
🍇🍋🍎🍒Eating plants and drinking enough water gives me way more energy than any coffee in this world! That's something I've learnt in the last 3 years :) #vegan
happy holidays everyone!!!! finally back after a long long while — it's been a struggle trying to juggle school, exams, dance and all while placing a greater focus on my own self-care these days :) my school term operates slightly differently from normal unis; we have a 3 trimesters a year, with shorter breaks instead of 2 semesters with long winter and summer break, so the short break ahead of me is definitely something worth treasuring before I hurtle into the next term again in 3 weeks 😌 I've learnt lots in this last quarter of a year, and as the end of december approaches, I think it's really a rather timely opportunity to reflect upon the past year :) perhaps I'll share some little thoughts along the way, but for now #throwback to this delicious meal I had the luxury of whipping up a few weeks ago: stuffed mexican sweet potato (💜🍠💜🍠💜🍠) with a large plate of greens~ homecooked meals have been rare, and I'm really excited to be experimenting more in the kitchen with baking and cooking delicious plant-based treats for my family!!! may the kitchen gods bless me hehe. happy Friday everyone!!!! have a lovely weekend ahead 💜☺️
Smoothie bowl 🍧 I kind of miss having these for breakfast. I haven't had one since beginning of October 🙈 time flies! But I can have them every day when I get back home and compensate for this time 😉 But breakfast here is really good too so I'm not complaining 💁🏼

Erfahrungen lassen uns wachsen, selbst wenn es anfangs nur weh tut oder wir etwas verlieren. Mein all-time-favorite Frühstück: (Schneller) Cremiger Vanille Milchreis mit Himbeer-Granatapfel Soße, Granola, Himbeeren, Khaki und Mandelmus😋 Natürlich aus Reisflocken, dauert nämlich nur 15 Minuten und wird super cremig und sticky😍🙌🏼 In die Himbeersoße habe ich getrockneten Granatapfel hinzugegeben, schmeckt nämlich viel aromatischer😍 (gibts bei @buahfruits - wer mag👉🏼 10% mit „anja“ /Werbung) HAPPY FRIDAY♥️
Schneller Vanille Milchreis: •100g Reisflocken •500ml Milchalternative aufkochen •10 Min. köcheln (gut umrühren) • Süße und gemahlene Vanille hinzufügen •5-10 Min. quellen lassen .

Had the pleasure of trying this beautiful Acai bowl @cafferepublic this morning 😍🙌🏼 This acai sits on a bed of crunchy vegan maple granola and is topped with loads of fresh fruit 🍉🍏🍓 Must day that I’m mpressed that it is still standing strong in the intense heat! It made the perfect refreshing & cooling breakfast after a morning workout! 😇 It’s also awesome to know that @cafferepublic actually make their own raw vegan cakes that look stunning and taste amazing! Can’t wait to go back and try all the flavours 👅

When you don't have dinner planned and throw some stuff together to make a "shrapnel bowl" 👌🏻 Farro, sprouted tofu (heard about sprouted tofu from @badassvegan), peas, 🍅, 🥑, artichoke hearts, nooch, hemp seeds and of course crispy capers 🍲 P.S. Sprouted tofu is made from sprouted soybeans which makes it easier to digest. It's also richer in protein, calcium and iron. I usually don't do much soy at all but thought I'd give this a go. #megandbryn
Roasted Cranberries, Brussels Sprouts and Pecans with Maple Mustard Dressing ☆
Looking for a Holiday dish with a punch of colour, flavour and texture? Have the boiled Brussels sprouts you had as a kid ruined these cute tiny cabbages for you? Then try this combo....it might be just what you need to fall in love with Brussel sprouts! Roasting at a high temperature is key to unlocking their sweetness and giving them some crispness.
Here's what you'll need:
2 lbs Brussels sprouts, trimmed and halved
1 cup whole fresh cranberries
1 cup pecan halves, toasted
6 tbsp olive oil, divided
3 tbsp maple syrup
1 tsp balsamic vinegar
2 tsp yellow or Dijon mustard
Salt and Pepper, to taste
Preheat your oven to 450 degrees F. Line 2 baking trays with parchment paper.
Place the trimmed and halved Brussels sprouts on one of the baking trays, drizzle with 3 tbsp olive oil and toss to coat evenly with your hands or a wooden spoon. Place in the oven for 25-30 minutes or until tender and some of the outer leaves are starting to crisp and get a bit of char, tossing once during baking.
Place the cranberries on the other baking tray, drizzle with 1 tbsp of olive and toss evenly to coat with your hands or a wooden spoon. Place in the oven for approximately 10 minutes or until they burst and have started to release their juices.
In a small mixing bowl, whisk together the remaining 3 tbsp olive oil, maple syrup, balsamic vinegar and mustard. Place the roasted Brussels sprouts, toasted pecans and cranberries in a medium sized serving bowl. Drizzle with the dressing and toss to coat. Add salt and pepper, to taste. Serve immediately. Enjoy!

‘Tis the season to eat all the yummy food 🎄 I’ve been busy in the kitchen this morning creating these healthy Gingerbread Blondies with Salted Maple Caramel sauce 🤤 the perfect treat for Christmas. They are refined sugar free, easily made gluten free and VEGAN of course! 💛 I hope you all have a wonderful Christmas and be kind to each other, the animals and our planet. Here is the RECIPE (also linked in my profile): Ingredients
1 can chickpeas, rinsed and drained
Heaped ½ cup almond butter
1/4 cup @natvianaturalsweetener stevia
6 medjool dates, soaked in warm water until soft (discard the water after soaking)
1 tbsp plant based milk
2 tsp vanilla
1 tsp cinnamon
½ tsp ginger
¼ tsp cloves
½ tsp salt
2 tbsp self raising flour
Salted Maple Tahini Sauce: mix equal parts tahini and maple syrup with a pinch of sea salt.
Preheat oven to 175 degrees celcius .
Line a 20cm x 20cm baking dish with baking paper and set aside.
Place all ingredients into a food processor and blend until smooth. You may need to stop and scrape down the sides of the processor a couple of times.
Pour the mixture into your prepared pan and spread out evenly.
Bake in preheated oven for 25 minutes until the top is set and slightly golden.
Let them cool for at least 15 minutes before drizzling sauce all over the blondies and eating the entire tray on one sitting.....or;
Store in an airtight container in the refrigerator. You can eat them cold or warm them before serving #vegan#instafood

Before getting started with aerial things a few years ago, I did triathlons. I try to get a run in every once in a while to maintain my running endurance (and because my sister makes me sign up for races with her). I usually run 5 miles MAX but today I did 6.5! I truly believe the only way this happened was through some serious positive self talk. Now I am celebrating with the best vegan nachos in southern California. I was in a bit of a bind for what to make for my lunch today and then I saw this sad lil lonely leek in my fridge and it reminded me of a recipe by @thevegancorner. 🤤 25 minutes later I had whipped up this delicious Leek Pappardelle - I also chopped up a couple of Linda M chorizo sausages with it but they were still in the oven when I took this.. 🤷🏼♀️ Also if you have read this far I would love to know what you have been reading! I am trying to read for at least 30 minutes every night so need lots of recommendations. 🤓 I am currently reading Sweetbitter by Stephanie Danler.
