My latest obsession, ovenbaked onions in all ways - rings, the whole one, cubed, sliced... I basically marinate them like all my oven veggies in chickpea water, garlic powder, tamari sauce and spices. Find the basic recipe is on my blog. 
So guess what, dinner was a bowl full of ovenbaked goods as onions, tomatoes and potatoes topped with a bunch of parsley. Plus nutritional yeast of course, #NoDayWithout . This pic is from Friday where I had the same. It’s just too dark for taking a pic of my dinner right now.

Sharing 😃 That’s why I love food so much. It’s all about sharing with others. When I’m preparing a meal I’m thinking about the people with who I will share it. During the meal, I’m enjoying the time we have together around the table. Food is so much more than eating. I remember the great brunch I had home with friends few weeks ago when we enjoyed these green smoothie bowls with other yumminess. Sharing food creates memories ❤️

Ratet mal bei wem der Wecker heute morgen nicht geklingelt hat🙋🏼‍♀️🙄 ich habe dadurch nicht nur verschlafen sondern auch meine Vorlesung verpasst 🙊😃 aber alles halb so wild: die Vorlesung lässt sich gut nacharbeiten und die Handy Probleme wurden hoffentlich behoben🙆🏼‍♀️😃 Trotzdem werden heute Nacht mindestens 2 Wecker eingestellt...für den Fall der Fälle😃 Das mein Wecker nicht klingelt ist wirklich mein Alptraum und es wird lange dauern, bis ich dem Handy wieder voll vertraue😃 Wann habt ihr das letzte mal so richtig verschlafen? Oh God do you remember the spicy  mango coconut curry I mentioned in my story a couple of days ago? 🙈 Well this is it. 💚 I gotta admit this is a whole new level of creaminess. 😁 And I must admit that the caramelized cashews perfected it. 🙌🏼 Now while dreaming of this curry I ll head over to a christmas market to finally get into a bit of a christmas mood.😂 Question of the day: are you an early Christmas gift shopper or is it always a last minute situation? 😅

Good morning Thursday!! Yoghurt, cinnamon and vanilla fried apple, granola and peanut butter for breakfast today 😋 ➡➡ 11 hours sleep was much needed😴 it's easy to forget how much energy your brain requires (i.e your brain needs c.a 800kcal a day) and then when your studying and focusing it requires even more. So even if you may just be still while studying, Don't forget that you need lots of good fuel and rest to focus on your studies! (I.e even if you dont workout you still need to eat and nourish your body and brain. How can you expect to concentrate and focus if your brain doesnt have enough energy?)
➡➡I know most students have lots of tests and exams when it's Christmas time (myself included), but don't forget about your mental health and resting enough! There is no point stressing so much that by Christmas and New year's all you do is stay in bed because you are so exhausted. (It's easier said than done, to not stress) but remember to take care of yourself and eat nourishing food and take pauses every now and then! Good luck to everyone with exams and finals and assignments due 💕💕

Happy Friday my fellow foodies! 😅 I have lunch plans on my mind. I think I’ll make something like this bowl: simple chili with spinach tagliatelle. We tried this green pasta the other day. Delish!

This was my first time using tagliatelle. It’s basically a thick starchy noodle, like a really long ribbon. Traditionally made with eggs, this one from Barilla is vegan because it only contains wheat flour, water, and dried spinach. Most pastas (like spaghetti, fusilli, macaroni...) are vegan though.

If you want to recreate this bowl, I have a chili recipe on my blog vegannomadchick.com as well as several veggie-packed marinara recipes. That should help you get your pasta fix. 😉 These sauces are also tasty on top of potatoes or rice.

Now we are almost to the end of 2017. 😱 I’m happy to say that this month has been full of new opportunities. I’m excited to see where they lead me!

Déjeuner 🥗 Pousses d'épinard, quinoa, courge spaghetti, poivrons grillés (avec ensuite sel, poivre et huile de sésame), poêlée de shiitakes, avocat et tofu caramélisé. 
J'ai fait mariner le tofu dans un mélange de tamari, sirop de coco, gingembre frais, citron vert et piment. J'ai roulé mes cubes dans de la fécule de maïs avant de poêler. 
Pour la sauce j'ai fait un mélange de tamari, huile de sésame, sirop de coco et piment rouge. 🇬🇧 today's lunch 🥗 Baby spinach, quinoa, spaghetti squash roasted bell pepper (and after with sesame oil, salt and pepper), shiitakes mushrooms, caramelized tofu and avocado.

A while ago I decided to cut down in coffee and now I only have a cup in the morning, and then some tea at mid-morning if I feel like it. There's nothing wrong with coffee, but it's true that I tended to overdo it some years ago. I felt at the time like I had to cut the habit completely - I felt really hooked and I believed (and still do) no extremes are good at all. From my experience, not having some coffee at ALL in something like a year and a half, made me feel pretty good. Now I have some every now and then and it's cool - I learnt that I cannot have more than a cup a day, I already have enough energy from good food and get some kind of anxious if I have a lot of caffeine! Plus it can make me suffer from sleep deprivation.

happy holidays everyone!!!! finally back after a long long while — it's been a struggle trying to juggle school, exams, dance and all while placing a greater focus on my own self-care these days :) my school term operates slightly differently from normal unis; we have a 3 trimesters a year, with shorter breaks instead of 2 semesters with long winter and summer break, so the short break ahead of me is definitely something worth treasuring before I hurtle into the next term again in 3 weeks 😌 I've learnt lots in this last quarter of a year, and as the end of december approaches, I think it's really a rather timely opportunity to reflect upon the past year :) perhaps I'll share some little thoughts along the way, but for now #throwback to this delicious meal I had the luxury of whipping up a few weeks ago: stuffed mexican sweet potato (💜🍠💜🍠💜🍠) with a large plate of greens~ homecooked meals have been rare, and I'm really excited to be experimenting more in the kitchen with baking and cooking delicious plant-based treats for my family!!! may the kitchen gods bless me hehe. happy Friday everyone!!!! have a lovely weekend ahead 💜☺️

Currytime. 😋💚 Got some massive love for spicy food and craving some rice at the moment after the last couple of days were packed with potatoes and pasta. 😅🍝🍟Found this little chilli's at an shop right around the corner of our office.✌🏼 If you need fresh spices and good Tofu always check asian shops. They are often better and way cheaper than the usual supermarket. 😉 Question of the day: What is your favorite rice? (Mine is definitely Basmati) 💚

I haven't been posting regularly lately due to kitten, work, college etc. These days I just eat whatever I can get my hands on (plants of course) and don't have the time to take pictures. Also my face is flared with hormonal acne and that's annoying me SO much!! Anyhoo, comment below if you want the chole masala recipe. It's sooooooo quick and easy to make.

• Schoko-Kaiserschmarrn
Du brauchst:
2 Becher Mehl
2 Becher Milch Deiner Wahl
3TL Backpulver
1/2 TL Vanille
3TL Kakao
1 Prise Salz
Fett zum ausbraten

Zubereitung:
Alle trockenen Zutaten mischen und anschließend mit der Milch zu einem glatten Teig verrühren.
Eine große Pfanne mit dem Fett einreiben und heiß werden lassen. Nun ca. die Hälfte des Teiges in die Pfanne geben und nach einigen Minuten wenden. Nachdem Du die erste Hälfte etwas weiter braten lassen hast, gibst du den restlichen Teig dazu und wiederholst das Ganze.

Wir machen uns so oft Gedanken über HÄTTE, WENN und ABER, was in 90% der Fälle einem selbst rein gar nichts bringt und einen nur verunsichert.

Sprouted tofu is made from sprouted soybeans which makes it easier to digest. It's also richer in protein, calcium and iron. Roasted Cranberries, Brussels Sprouts and Pecans with Maple Mustard Dressing ☆

Looking for a Holiday dish with a punch of colour, flavour and texture? Have the boiled Brussels sprouts you had as a kid ruined these cute tiny cabbages for you? Then try this combo....it might be just what you need to fall in love with Brussel sprouts! Roasting at a high temperature is key to unlocking their sweetness and giving them some crispness. 
Here's what you'll need:

2 lbs Brussels sprouts, trimmed and halved
1 cup whole fresh cranberries
1 cup pecan halves, toasted
6 tbsp olive oil, divided
3 tbsp maple syrup
1 tsp balsamic vinegar 
2 tsp yellow or Dijon mustard
Salt and Pepper, to taste

Preheat your oven to 450 degrees F. Line 2 baking trays with parchment paper.

Place the trimmed and halved Brussels sprouts on one of the baking trays, drizzle with 3 tbsp olive oil and toss to coat evenly with your hands or a wooden spoon. Place in the oven for 25-30 minutes or until tender and some of the outer leaves are starting to crisp and get a bit of char, tossing once during baking.

Place the cranberries on the other baking tray, drizzle with 1 tbsp of olive and toss evenly to coat with your hands or a wooden spoon. Place in the oven for approximately 10 minutes or until they burst and have started to release their juices.

In a small mixing bowl, whisk together the remaining 3 tbsp olive oil, maple syrup, balsamic vinegar and mustard. Roasted Cranberries, Brussels Sprouts and Pecans with Maple Mustard Dressing ☆ Looking for a Holiday dish with a punch of colour, flavour and texture? Have the boiled Brussels sprouts you had as a kid ruined these cute tiny cabbages for you? Then try this combo....it might be just what you need to fall in love with Brussel sprouts! Roasting at a high temperature is key to unlocking their sweetness and giving them some crispness. Here's what you'll need: 2 lbs Brussels sprouts, trimmed and halved 1 cup whole fresh cranberries 1 cup pecan halves, toasted 6 tbsp olive oil, divided 3 tbsp maple syrup 1 tsp balsamic vinegar  2 tsp yellow or Dijon mustard Salt and Pepper, to taste Preheat your oven to 450 degrees F. Line 2 baking trays with parchment paper. Place the trimmed and halved Brussels sprouts on one of the baking trays, drizzle with 3 tbsp olive oil and toss to coat evenly with your hands or a wooden spoon. Place in the oven for 25-30 minutes or until tender and some of the outer leaves are starting to crisp and get a bit of char, tossing once during baking. Place the cranberries on the other baking tray, drizzle with 1 tbsp of olive and toss evenly to coat with your hands or a wooden spoon. Place in the oven for approximately 10 minutes or until they burst and have started to release their juices. In a small mixing bowl, whisk together the remaining 3 tbsp olive oil, maple syrup, balsamic vinegar and mustard. Hey everyone! I know it’s been a little while, but better late then never. 🤗 Work training has been a total brain buster (in a good way), and I’m exhausted, but I’m still so excited for this opportunity. I get to head on over to my unit tomorrow, so it is going to be an early morning for me. 🤷‍♀️

I want to stress how important it is to retrain your brain to think positively and in the moment. That has helped me immensely this week with not getting overwhelmed. Also, getting into my bible and constantly praising God for giving me the courage to do this is the cornerstone. 💕☺️

‘Tis the season to eat all the yummy food 🎄 I’ve been busy in the kitchen this morning creating these healthy Gingerbread Blondies with Salted Maple Caramel sauce 🤤 the perfect treat for Christmas. They are refined sugar free, easily made gluten free and VEGAN of course! 💛 I hope you all have a wonderful Christmas and be kind to each other, the animals and our planet. Here is the RECIPE (also linked in my profile): Ingredients
1 can chickpeas, rinsed and drained
Heaped ½ cup almond butter
1/4 cup @natvianaturalsweetener stevia
6 medjool dates, soaked in warm water until soft (discard the water after soaking)
1 tbsp plant based milk
2 tsp vanilla
1 tsp cinnamon
½ tsp ginger
½ nutmeg
¼ tsp cloves
½ tsp salt
2 tbsp self raising flour
Salted Maple Tahini Sauce: mix equal parts tahini and maple syrup with a pinch of sea salt.
Instructions
Preheat oven to 175 degrees celcius . 
Line a 20cm x 20cm baking dish with baking paper and set aside.
Place all ingredients into a food processor and blend until smooth. You may need to stop and scrape down the sides of the processor a couple of times.
Pour the mixture into your prepared pan and spread out evenly.
Bake in preheated oven for 25 minutes until the top is set and slightly golden.
Let them cool for at least 15 minutes before drizzling sauce all over the blondies and eating the entire tray on one sitting.....or;
Store in an airtight container in the refrigerator. You can eat them cold or warm them before serving #vegan #instafood

The main ingredient is white mushroom 🍄 white mushrooms have more copper, potassium, and protein than its oyster and shiitake counterparts. Did you know you can’t absorb all the nutrients of mushrooms unless you cook them? The more you know 😎 This is definitely going to be a regular meal for me. .

Before getting started with aerial things a few years ago, I did triathlons. I try to get a run in every once in a while to maintain my running endurance (and because my sister makes me sign up for races with her). I usually run 5 miles MAX but today I did 6.5! I truly believe the only way this happened was through some serious positive self talk. Now I am celebrating with the best vegan nachos in southern California. Sharing 😃 That’s why I love food so much. It’s all about sharing with others. When I’m preparing a meal I’m thinking about the people with who I will share it. During the meal, I’m enjoying the time we have together around the table. Food is so much more than eating. I remember the great brunch I had home with friends few weeks ago when we enjoyed these green smoothie bowls with other yumminess. Sharing food creates memories ❤️

I was in a bit of a bind for what to make for my lunch today and then I saw this sad lil lonely leek in my fridge and it reminded me of a recipe by @thevegancorner. 🤤 25 minutes later I had whipped up this delicious Leek Pappardelle - I also chopped up a couple of Linda M chorizo sausages with it but they were still in the oven when I took this.. 🤷🏼‍♀️ Also if you have read this far I would love to know what you have been reading! I am trying to read for at least 30 minutes every night so need lots of recommendations. 🤓 I am currently reading Sweetbitter by Stephanie Danler. So let me know what you’re reading, whether it be fiction, non fiction, self help, spiritual or a magazine - My boyfriend got me a subscription to @justbreathemagazine and I’m loving flicking through it! ✨💛
