Breakfast: Vegan Pumpkin Spice Scones with Chocolate Glaze (Recipe below) .
* 2 cups flour of choice * 1 tablespoon baking powder
* ¼ cup cake sugar * 2 teaspoons of pumpkin spice * 6 tablespoons cold vegan butter
* ¾ cup pumpkin puree
* ¼ cup coconut milk
* ½ cup vegan dark chocolate
* ⅛ teaspoon fine grain sea salt
* 1 tsp coconut oil * 1 tsp pumpkin spice
1. Preheat oven to 425 degrees.
2. In a medium mixing bowl, combine the flour, baking powder, sugar, and spices in a bowl and whisk together.
3. Use a fork to cut the butter into the dry ingredients.
4. Stir in pumpkin puree and milk.
5. Form dough into a circle that’s about an inch deep all around. Use a chef’s knife to cut the circle into 8 even slices.
6. Separate slices and place on the baking sheet covered with parchment paper. Bake for 15 to 17 minutes or until lightly golden brown.
7. While the scones are baking, whisk together the glaze ingredients in a water bath on the stove until all incorporated.
8. Dress the scones with the glaze when cooled

I swear me and oil just do not get along. In the moment the food tastes good but after 😷 I also tend not to include oil in my diet for health reasons. Oil is just plain fat meanwhile if you eat an avocado you're not only eating healthy fat but you're also getting vitamins, fiber, etc. Oil, you and I will have to part for a couple days. You and my tummy just don't agree sorry won't miss ya 👋🏼

"Homemade Kombucha" - Recently I was in Barcelona and I got hold of some Kombucha. I posted the health benefits and why I love to drink it and how it makes me feel. Luckily enough, a friend of mine had extra Scoby that she kindly passed onto me so that I can create my own fresh batch! I've been hooked on it since and really feeling its benefits! Today we went to Oía which is the place you see when you see pictures of Santorini - it was beautiful but BUSY! We found a little place for lunch that overlooked the water and the volcanoes and the waiter knew about veganism! He was super friendly and checked things with the kitchen ☺️ I had the stuffed aubergine which came with a small side salad 😋 it was surreal eating lunch next to such dramatic views - my measly snap doesn't capture it enough 🌊🌋🛥
Simple (but oh so tasty) banana maple nicecream 🍌🍌 Topped with flax seeds, buckwheat, and of course kiwi 🥝 Kiwi is my husband's favorite fruit, and it is quickly becoming one of my favorites as well! This weekend I'm in Madison, WI visiting one of my best friends 👯 We're about to hit up the farmer's market and to say I'm excited would be an understatement 😂 Happy Saturday everyone!!
