Breakfast Burrito from @vertical_diner smothered in red sauce, tofu sour cream and 'cheeze'.. stuffed with black beans, rice, tofu scramble and breakfast 'sausage' / tempeh bacon. 🌯👌
Top that off with some guac and a side of potatoes 🥑🥔

I don't often eat cooked breakfasts except as a very occasional weekend treat and my fav in the old days always used to be French Toast. 🍞🍳
I've been looking for the perfect recipe since becoming vegan and one day while cooking for an omnivore friend I decided to try using tofu & I think I've finally cracked it! ...yip pun intended😂, it was rich, creamy and delicious on the inside and golden on the outside. So without further ado here's what I did.
I used thick slices of fresh bread so feel free to adjust amounts as to how many people your feeding, how stale your bread is and the consistency of your tofu etc as all these factors may make a difference as well.
Into a blender I added:
*Half a packet of tonzu organic tofu (this is a medium firm tofu)
*enough oat milk to cover it, you can add water as well if it's to thick and you could use other unsweetened plant milks.
*1/4tsp turmeric powder - for that egg yellow colour 🍳
*1/2Tbsp massel vegan chicken stock powder
*1/2tsp each nutritional yeast, garlic & onion powder + tapioca flour
*1/4tsp black salt - This is an absolute must! It gives it the eggy flavour, table salt won't do the same thing.
*a pinch of fresh grated nutmeg & cinnamon
*Pinch black pepper
*slices of your favourite bread🍞
And although I never normally use oil I made an exception here and I spritzed the pan very lightly with olive oil to help brown the bread, but I now think with a good non-stick pan it may have worked just as without.
*If you want a sweeter version of French toast I recommend adding a splash of real vanilla essence.
I then blended the 'egg' ingredients until they were smooth and the consistency of heavy cream, I poured it into a large roasting dish, lay my sliced bread in the pan, turned to coat and left to soak for a few mins while I heated my pan.
I cooked the bread on a medium heat until golden on both sides and cooked through.
You can season with black salt after cooking as well if you prefer a more egg flavour.
I have to say I was totally in love with this recipe and my omnivore friend loved it as well, always a good sign you've got it right! 😊👌🍳🍞
I LOVE these dumplings😍 And after a long day of training these are exactly what I am craving! It's so important to have time to yourself, you can't help others if you've got nothing to give. Refuelling your mind is just as important as refuelling your body - and you do that every few hours! And let's just take a second to appreciate this toast.. never in my life have I had vegan friendly GF toast that tastes this good 😳 I had to hide it on myself 😂😂 what is self control??

I'm new at this smoothie thing, I used to look on every recipe because it didn't look like a real smoothie but like a juice.
So after trying recipe after recipe I found out that the mistake I was making was not freezing fruits before using them.
I made this one with banana and strawberries🍌🍓 only because I ran out of other stuff but you can use any frozen fruits you like!! Hope all of you are having such a beautiful day💕🙌

TROPICAL FRUIT P A R A D I S E.🌴 Multiple varieties of mangos, piña 🍍, jackfruit, passionfruit, watermelon 🍉, chocolate sapote, mamey, dragonfruit, starfruit 🌟, sugar apple, coconuts, papaya, rambutans... the list is never ending of EPIC fruits in Tulum, Mexico. In Tulum town there were multiple FRUTERÍAS selling some of the most delicious produce for ridiculously amazing prices! 🙌🏻 So grateful for my time in Tulum, but extremely happy to be back home, reunited with my friends, back at work, working out and sleeping in my own bed. Now I'm off to sleepyyy 😴 because I'm exhausted. Sweetest of dreams friends!🌜
Extra hyped to teach spin tomorrow morning 'cuz I get to enjoy these CHOCOLATE COCONUT OVERNIGHT OATS 💯🍫 in a Mason jar I threw in oats, hemp hearts, cacao powder, shredded coconut, unsweetened vanilla coconut milk, coconut extract, vanilla extract, cinnamon, plain yogurt (I use @foragerproject cashew milk yogurt), and lotssssss of chocolate sea salt granola (@purely_elizabeth, obv😉). Just throw it in the fridge overnight and they're ready to eat in the morning! Add fruit if ya like 😉🍓🙌🏼

Nana ice cream with a fall twist.
2 frozen bananas + chocolate protein powder + coconut milk in the blender topped with hemp seeds and pumpkin pie spice.
I ran almost 4 miles today with a little speedwork and a bike ride.

1 natures promise organic blueberry waffle (pop in toaster)
handful of blueberries
1/2 banana sliced
1/2 tbsp organic peanut butter
1 tsp enjoy life vegan chocolate chips
3/4 frozen banana
put in @yonanas machine,
and mold in ball form!
