One of my besties Anouk wanted to cheer me up and so she made me homemade vegan cheeses. As in, two huge rounds of cheese. Vegan brie and vegan chevre. They are heavenly and I am the luckiest! Last night, I finally got to eat at one of my vegan dream restaurants, @modernlovebrooklyn. Everything was amazing, and it was beyond anything I could have imagined. Back in DC, I’m still basking in the glow of vegan witchery at its finest. Meeting my vegan role model, @isachandra was pretty much the cherry on top of an amazing night. 🖤
We know it's only Wednesday but we're looking forward to the weekend and these Un-Brie-lievable Pistachio Mini Cheeze Balls. A combo of @nutsforcheese Brie, pistachio and dried cranberries make these a delicious appetizer for any party. Swipe ⬅️ to see how we're serving them up with @nealbrothers pretzels. 💚 •
2 packs (240g) @nutsforcheese Brie
3/4 cup pistachios
3/4 cup dried cranberries (we used @patiencefruitco cranberries that are flavoured with apple juice 👌🏼)
1/8 tsp sea salt
Optional: pretzels for serving
✨Steps: Place pistachios in a food processor and pulse to a fine chop. Remove from processor and add cranberries. Pulse again to a rough chop or longer if you want smaller pieces. Remove about half of the cranberries. Next, add the cheese, sea salt, and a 1/4 cup of the pistachios back to the food processor. Process until smooth. Place mixture into a bowl place in fridge for about 5 minutes to stiffen up. Meanwhile, combine remains pistachios and cranberries together. Next, remove mixture from fridge and form into balls. Roll each ball into the pistachio cranberry mixture. Once complete put back in fridge until you're ready to serve. Put pretzels in just before serving. Two and a half weeks later and I finally dared to try my Cashew Camembert. This is the only 1 of the 3 cashew based cheeses I made that made it all the way through to tasting or fruition.
The other Camembert didn’t grow the mold as well and went patchy so I gave up on it and the blue cheese I think I left too long as it got over moldy and I couldn’t bring myself to try more than a smidge of it before binning it. 🤢 This was my first go at making vegan cheeses so I’ll take 1 out of 3 as a good start. I had put coriander seeds in this- the successful one. It was surprisingly yummy and a tasted just like a more nutty version of actual Camembert funnily enough. Not sure what I expected. 🤔😂The coriander seeds are a complementary addition but I would use a little less next time as quite a strong flavour. Now I have learnt a leason or two I shall be getting my next batch of cheeses on the go ASAP. One of those lessons will be to make sure my cheese still fits the “proper” wooden box when I have finished aging it. 😂 Fail!
