Makes 16 brownies
320g cooked chickpeas (drained)
210g Medjool dates (soaked in water for at least 2 hours)
55g cacao powder
60g buckwheat flour
30g oat flour (simply blend oats in a food processor to reach a flour-like consistency)
1/4 tsp salt
1 tsp vanilla extract
70g The Groovy Food Company coconut oil, melted
60g maple syrup
120g almond milk (or other milk)
1/2 tsp baking powder
3 tbsp dark chocolate chips
Preheat your oven to 180°C.
Add the dates, coconut oil, vanilla extract, maple syrup and milk to a food processor and blend until a smooth mixture forms.
Add the chickpeas and blend again until fully combined.
Pour the mixture into a large bowl, then stir in the oat flour, baking powder, cacao and salt.
Transfer into a small greased cake tin. Roughly chop the Oreos, sprinkle them on top and lightly press down into the batter.
Bake for 25 minutes, then leave to cool completely before slicing.
This was the @sarahlynnfitness @baketobefit healthy brownie recipe I made over the weekend. I used @gonutritionuk vegan chocolate blend to add a decadent taste, more sweetness and to boost the protein 💪🏽 @gonutritionuk sweetens their blends without refined sugar, which I love! It also made the batter fudgy and thick so that I could roll some of it into little chocolate balls, featured on the top 😍 Tasted like cookie dough!!! You could probably make blondies using the same recipe and replacing the chocolate protein with vanilla protein.

Okay soooo last night, Avocado Walnut Brownies happened and let me tell y'all, these things are soooo good it's unreal. They have a nice top crunch and a chewy middle. I know I'm doing this raw thing but a girl couldn't help herself lol And it's only 10 ingredients.
1. 2 whole organic Avocados
2. 1 1/8 Cup of unsweetened vanilla Almond milk
3. 1 Tsp of Pink Himalayan Salt
4. 1 cup of Spelt Flour(I tried Coconut flour and it was horrible with the texture and taste so count this as a one time thing)
5. 1/2 cup of pure cane sugar or coconut sugar
6. 1 TSBP of baking soda (Bob Red mills brand because it doesn't have aluminum)
7. 1 tsp of baking powder
8. 2 TsBP of Coconut nectar
9. 1 cup of Cacao Chips or the vegan ones I usually use.
10. 1 1/2 cups of Walnuts (optional)
Preheat over to 350°
1. Melt the Chips in a little water and mix in avocado, sugar, flour, salt, baking soda and powder, coconut nectar, and milk.
2. Mix with a blender until smooth and then add the walnuts and mix again.
3. Pour into desired pan and let it bake for 20- 40 mins or less until you see it brown.
