People often complicate what or how eating healthy should be, well I honestly believe, simplicity is key. Don't complicate it too much, in other words, don't be fussy, and just eat simple whole foods. Like you should know exactly what goes on your plate and yeah, that's basically it😉 Add some salt and spices or other fancy condiments like ketchup, mustard, chilli sauce, and BAM! Easy yummy nutritious meal😉🍠🥗🥑
I personally am a lover of simple foods like just eating the food as it is, but if you need some fancy sauces to go with it, by all means do so! There's so many recipes online for easy vegan sauces like teriyaki, bbq or you can even go and buy some and save some time, because I know how lazy most of you are because I am too LOL😹

On the plate: 3 sweet potatoes, red bell pepper, coleslaw mix with apple cider vinegar, beetroot, avocado mashed with chilli flakes and white pepper, sprinkled cayenne, black pepper and Himalayan pink salt over it all✨
Green curry potatoes, zucchini, and squash topped on some brown rice and spinach. 💛💚 I tossed the chopped zucchini, squash, and potatoes in a bowl with #traderjoes Thai Green Curry Sauce. I added the mix to a glass pan and popped it in the oven at 475 degrees for 45 minutes. After it was done, I added the glass dish to the broiler for 5 minutes to crisp it up a bit. 👌🏻 Add the mix to some rice and greens...and enjoy! 😊 #curry

Mother Caroline Cadwell—along with a team of educators—will open private vegan preschool and kindergarten, Heärt Montessori, in Cincinnati next year. The school will follow the mindful teaching techniques developed by Italian educator Maria Montessori, which emphasizes building self-esteem and compassion through meditation and yoga, while simultaneously focusing on a traditional academic curriculum. “It’s not that other schools don’t teach empathy and compassion, but we wanted it to be the focus,” Cadwell said. “Optimally, we’ll be cooking food that we grow in season. We’ll have healthy, plant-based meals that are organic and amazing.” The school will also encourage children to interact with rescued animals at the nearby Jubilee Animal Sanctuary—which currently houses rescued horses but plans to expand to include farmed animals such as cows, goats, and pigs. Once open, Heärt Montessori will join several vegan schools across the country—including California-based MUSE school (opened by director James Cameron and his wife Suzy), which became the first school in the nation to go fully vegan in 2015.

This quick pic is a throw together, clean out the fridge before we leave in the morning kind of salad. Spinach, arugula, red leaf lettuce, raw broccoli, purple cabbage, orange bell pepper and gf pasta marinated in a garlic, fresh herb infused olive oil and avocado.

RECIPE OVERNIGHT OATS
• 1/2 cup of oats
• 1/2 cup of plant milk
• handfull of raisins
• 1 teaspoon of flaxseeds and chiaseeds
• cinnamon and ginger powder
Topped with peaches, strawberries, red berries and pecannuts.
I believe the food u crave, the food and nutrients u need. I think the body knows what it needs and tells u what to eat. Maybe not always the right product but if you look at the nutrients of a product it knows. Like if u crave pizza, your body probably needs salt and healthy fats. When u crave cookies, your body probably needs carbohydrates and sugar.

The Quickie (for real). ⚡️
People ask me a lot about how making smoothiebowls take sooooo much time. But honestly, no. Well, yeah, decorating them with flowers and taking photos does take time (duh). But that's not for everyone, right? 🌸
This one took me a few minutes, including chopping up fruits and placing them. It didn't even include a blender, just to make it real quick. Mixing it, including cleaning the blender (always, ALWAYS clean it before you sit down and eat! It makes everything soooo much better!) would have taken me maybe 2 more minutes. Still quick, folks! ⚡️
The Quickie: • Chop up fruits of choice, put in bowl. Inside banana, nectarine and kiwi under there.
• Add you favorite yoghurt (tjis is vanilla oatghurt).
• If you have a blender (and two more minutes), mix it up! Would have made this one a lovely yellow color! • Put some toppings on it, whatever you like and have at home! • Enjoy ☀️☀️☀️

🌱 INGREDIENTS (yields 2 servings):
- Sweet potatoes (2 medium)
- Black beans (1 cup, cooked)
- Corn kernels (1 cup, frozen)
- Green onions/scallions (2 stalks)
- Cilantro (1 small handful, chopped)
🌱 INGREDIENTS FOR THE VINAIGRETTE:
- Limes (2, juice only)
- Agave syrup (1 tbsp)
- Olive or grapeseed oil (1 tbsp)
- Adobo sauce (2 tsps, from a can of chipotle peppers in adobo)
- Sea salt (1/2 tsp)
- Black pepper (1/4 tsp)
1. Prick the sweet potatoes all over with a fork (this will prevent them from bursting) and place them in the microwave for 6-8 minutes. Flip them halfway through.
2. In a medium or large bowl, add the vinaigrette ingredients and mix. Unfreeze the corn (in the microwave for 1 minute or in a pot with boiling water) and add them to the bowl along with the black beans, green onions and cilantro.
3. Let the sweet potatoes cool before for a bit. Then slice them lengthwise, and push them open from the sides. Squish them a bit from the sides if necessary so they keep their shape. Stuff them with the salad. Serve and enjoy!

It's all about meal planning. If you make your beans on the weekend, weekday meals are super duper easy.
I just chopped some lettuce, and made my salsa in the food processor: tomatoes, cilantro, lemon juice, sea salt. So easy! Pulse, pulse, pules, and done!
And then I put a bit of tahini with chili spice sprinkled on top.
This stuff is amazing!

I don't normally eat ramen in the Summer months, but tonight I just craved my usual. Red miso broth with organic ramen noodles, sprouted crispy shoyu tofu, baby bok choy, fire roasted corn, fried garlic and scallions. Sometimes we need a bit of comfort, even when we're already warm, no? X
PART 2: Also, throughout those hard times, my body has tried its ultimate best to heal to its best capacity and serve me as much as it can. I cannot believe how much abuse and torture I've put it through, thanks to societal pressures and expectations that never served anyone well in all its lack of substance and authenticity. How we were expected to look a certain way and how sexuality was laced with guilt and put into boxes of condemnation. It messes with you. Those were really dark times of the soul. I felt that I was suffering physically with so many health complications and spiritually with too much disconnect. Like for REAL, we really have to take care of ourselves. We have to educate ourselves with what we're putting in our bodies. It's our responsibility to investigate and question things. You have to know that you have a choice in every single situation. No one should tolerate ignorance when we can fully equip ourselves with knowledge. No one should also feel ashamed of their bodies because it is fucking awesome. It's wonderful and it's a work of art. So please really do your best to honor your body and be proud of it. It took me years to appreciate mine. Okay this is turning into Hallmark card post but I just wanted to put it all out there. 🙏🏼
