I really enjoyed making this Triple Chocolate cake this morning! Two layers of rich chocolate cake, perfectly creamy chcoolate frosting and some shaved chocolate and ganache to finish it off...Oh and did I mention its gluten-free too! Such a simple cake, yet it's one of the most delicious!
What? It's my birthday!
- Caramel coated, chocolate dipped, peppermint-bark rolled apple
- some delicious cake
- homemade licorice (which I have watched the makings of with great anticipation!)
- coconut chew, tahini meltaway, and bleeding heart
- 6 different cookies I was in too much of a blur to make specific note of, beyond marzipan-pretzel-pecan swirling goodness.

@mscupcakeuk Peanut butter Cookies (vegan ofcourse 😉🌱) - Makes 18 cookies
275g creamy peanut butter
125g dairy free margarine
140g maple syrup
85g caster sugar
70g brown sugar
1 tbsp vanilla extract/essence
240g plain flour
Preheat oven to 160°C/325°F and liberally grease 2 large baking sheets or line them with parchment paper
In a large bowl mix together all the ingredients except the flour. Once mixed, slowly add the flour to the mix and stir until combined. Form about 18 balls of dough and place on the baking sheets. Leave a couple of inches between them to allow room to spread as they cook. Lightly press the balls down with a fork in a criss-cross pattern
Bake for 15-20 minutes, leave them on the sheets to cool for a few minutes and then transfer then to a wire rack to cool completely 💛✌
