Just had the opportunity to try FOUR plant based meals that @simplyfitmeals is now offering and man did they blow me away! The @beyondmeat tacos were seriously the best tacos I’ve had outside of my own 🤔 the texture is spot on, the ingredients all tasted fresh. The avocado salsa that came with it was the perfect pairing. The black bean burger was also loaded with flavor. Did not need any salt or cholula like I’m known to dump on everything else I eat. I will eat the other two meals tomorrow which is a loaded sweet potato and @beyondmeat crumbles on whole wheat pasta. Do yourself a favor and go get those tacos, I guarantee that you will fall in love at first bite.
How almost all my meals have been lately - protein, potato and veggies. Its easy to prepare, plus, my stomach has been giving me issues, so when that happens I also like to stick to my basic foods. Not sure if it's stress or a flare up of inflammation, but it's good to know your body and gut and have a list of foods that make it happy!

Just made this amazing veggie burrito 🌯 with tempeh. I was very skeptical about tempeh with its texture and taste, but it is actually very tasty if you cook it properly😋 never stop trying 👍

DISCLAIMER 👉👉I think butternut squash is made for soups. Roasted butternut squash tastes terrible to me. Same with mashed butternut squash. But in a soup... 👅😍😋 Here's my pot of gold recipe aka the lazy girl butternut squash soup: in a pot on medium heat cook one chopped onion and few cloves of garlic (maybe a minute). Add chopped and steamed butternut squash (I used 1 big one). Add a pinch of salt, pepper, curry powder, cinnamon. Next- 3 cups of broth and 2 cups of coconut milk, and a bit of maple syrup. Cook for 5 minutes. Transfer everything into the blender to smooth is up and viola! So easy. Vegan. Delicious. Good for you. 🎃🎃🎃🎃🎃🎃
