New Recipe [Dakota Kale soup] 💚

Ingredients: 2 cups dry Dakota beans, 1 bag of roughly chopped Kale 
1/4C olive/vegetable oil, 1 large chopped onions 2 medium size chopped tomatoes, 1 tsp garlic salt, 1 tsp Adobo seasoning, 1 tsp salt seasoning, 1 tsp berebere Ethiopian spice(may substitute with any hot pepper spices) 💚

Instructions: 
1. In a large pot, pour water to the brim and let it come to a  complete boil. Use a separate pot to rinse beans and add to the boiling water. Boil for an hour until you notice a tenderness of the beans. Add water as necessary. Add seasoned salt while the beans continue to boil. 
2. To prepare the sauce, heat oil in a large pot on medium heat for 1 min. Add onions to the pot until it begins to turn brown; add tomatoes, adobo seasoning, garlic salt, bebere(or substitute with any other hot spice), and cook for 5 minutes, occasionally stirring. 
3. Add chopped Kale to the sauce; cook for 15 mins and bring to a simmer. 
4. Add boiled Dakota beans to the Kale. Let it cook on medium-low heat for 10 minutes, adding water as necessary. 
Enjoy!
Serves: 10 people

Day 1- Meal 2 of #detox 
Its time for a wholesome meal. 
Ingredients (serves 1)
1/2 of a large australian sweet potato
1/2 cup sprouted boiled lentils (or chickpeas if can digest them).I use mix of sprouted lentils like mong, black eyed and black beans
1 cup cooked quinoa
2 cups of greens 
1-2 tbsp of coconut oil
Salt, pepper , lemon to taste

Dressing
1/2 avocado
Few sprigs of coriander leaves
Lemon juice
Salt + pepper
Chilli flakes
1/4 cup almond / plant based milk
Water (as required)

Method
Cut the sweet potato and drizzle coconut oil. Roast them in the oven or cook them on a pan. While they are cooking, prepare the dressing. 
Mix all the other ingredients in a bowl. Serve over bed of lettuce. Top over with the dressing. 
Its looks beautiful and taste delicious

Tip - drink a lot of water/ herbal tea between lunch and dinner. Be strong 🤛

It taste so good that I will have it for the first 2 days of my detox plan :) you can try it even if you aint on detox.

Basil Walnut Pesto Recipe:
- 4 cups basil leaves (I added some lemon Basil too)
- 3 cloves garlic peeled
- 1/2 cup walnuts toasted
- 1/2 cup Vegan parmesan-reggiano (I used Follow Your Heart)
- zest and juice of one lemon
- 1/4 teaspoon red pepper flakes
- 1/2 cup extra virgin olive oil *throw it all in the food processor and drizzle the oil in as you blend & add freshly cracked black pepper & sea salt to taste. We spread it on toasted sprouted Ezekiel bread with tomatoes. So yummy & fresh...and healthy!

When you carve out a pineapple and use it as your bowl 🍍😍. Spiralized sweet potato, pineapple and red onion, and rice with BBQ sauce. (I took the @mealmentor recipe for Hawaiian Sliders but over rice instead of on bread.)

Meal prep tip for chard and kale 🌱🌿🍃 as soon as you bring them home, chop them into thin ribbons, wash and dry (my IKEA salad spinner is a lifesaver), and store in large glass containers. They'll last 4-5 days this way and you don't have to store them in plastic bags in the crisper where you'll forget about them 👌 They'll be ready to add to salads, bowls, stir fries, soups, pasta, sandwiches, smoothies. No excuse not to get those greens in 💚💚💚

We tried this as an alternative of macaroni with white sauce and pineapple. It turned out to be different, delicious, much lighter and healthier than the original dish. However I won't consider it as a substitute. But if you like sour sweet fresh flavors..this one is for you
Ingredients:
Wholewheat macaroni/elbow pasta
Avocado paste: mashed avocado, lemon, salt, pepper, finely chopped cilantro
White sauce: vegan butter, gluten free flour, almond milk
Pineapple compote: Fresh Pineapple cubes, vegan butter, sugar, ginger

Sri Lankan-style Romano Bean Curry 
It's moderately #spicy (but can be easily adjusted) and very bright in flavour. It takes under 15 minutes to make and serves 2.

Romano #beans are long, flat green beans, but you can substitute them for French green beans, sugar snap peas, mangetout, etc.

Ingredients
1/2 yellow onion, sliced
1 tsp mustard seeds
1 tsp black onion seeds
6 curry leaves
400ml can coconut milk
1 tsp turmeric
1 tbsp garlic-ginger paste
Pinch ground cloves
Pinch red chilli flakes
2 tsp hot or medium curry powder
Pinch ground cardamom
1 tsp lemon juice 🍋 
Pinch suitable-for-vegans sugar
400g Romano beans, topped, tailed, and sliced on the diagonal into 2cm lengths

Directions
1. In a large, stainless steel pan over a medium-low heat, sauté the onions until starting to soften. Remove from the pan and set aside. 
2. Add the mustard seeds, black onion seeds, and curry powder. Cook until the seeds start to turn fragrant. 
3. Add the remaining ingredients and mix well. Bring to the boil, reduce heat to a simmer, and cook, covered for 8 minutes. 
4. Season with salt to taste. En los días fríos resulta, para algunas personas, menos agradable consumir verduras como ensalada. Les dejo esta excelente opción de un plato más contundente 😉 📄INGREDIENTES: (2 porciones)
🏜1/2 taza de quinoa sin cocinar
🏜1/4 taza de choclo
🏜1/4 taza de zanahoria 🏜12 tomates cherry (o 1 tomate normal picado)
🏜12 aceitunas negras
🏜1 palta
🏜Aceite de oliva 🍽PREPARACIÓN:
✔ Lava bien la quinoa antes de cocinarla para eliminar las saponinas (una sustancia amarga que se utiliza para hacer jabón). If your a Spanish vegan. I got you!!! This is Causa Rellena de Tofu. When I say it taste the same I mean it. It's hard to be a vegan with Spanish family members so you gotta get creative. I don't know if they made a recipe for this but this is mine -Depending on how much you want I used two potatoes 🥔 - boiled till soft- peeled them then pressed them. - added salt and lime juice to the potatoes with a tiny bit of bijol - 1/3 of the box of tofu - chopped onions for your choice
- parsley - lime juice -then mix the tofu, onions, parsley and lime juice together add salt and pepper and as well some chopped garlic
- then put it together like lasagna( one layer of potatoes then a layer of tofu and then potatoes) - finishing touches the parsley on top and then tomatoes on the border. Then your DONE. And I just watched that new movie 47 Meters Down and yikes... I love sharks, and it didn't really antagonize the sharks that much. But boy, it was a nail biter 😬 halfway through I considered just going on my phone and asking my friends what happened 😂 but I made it! Haha

"Emmer-Penne mit Vitalpilzen" (vegan)

Zutaten:

200g Emmer-Penne 
350g Pilze (Champignons, Shiitake, Kräuterseitlinge)
130g Oliven
250g kleine Tomaten
1 Bund Basilikum
Pinienkerne nach Belieben 
2 EL Erdnussöl
3 EL Olivenöl
Salz, Pfeffer, Chili 
Penne kochen, ca. 8 Minuten. In der Zwischenzeit 2 EL Erdnussöl in der Pfanne erhitzen und die Pilze ca. 3 Minuten unter ständigem Rühren scharf anbraten. 
Pilze in eine Schüssel füllen und mit 2 EL Olivenöl, Oliven und fast dem ganzen Bund Basilikum vermengen. Mit Salz, Pfeffer und Chili abschmecken.

1EL Olivenöl in die Pfanne geben und bei geringer Hitze die Tomaten glasig anbraten.

Pfanne von der Herdplatte nehmen, Penne und die Pilzmischung dazu. Mit dem restlichen Basilikum und gerösteten Pinienkerne garnieren.

Pilze sind reich an wertvollen Nährstoffen, Vitaminen sowie Eiweiß. Heilpilze wie der Shiitake findet vielseitige Verwendung in der TCM. 
Das Gericht ist einfach und schnell in der Zubereitung, so lässt sich auch bei einem engen Zeitfenster eine ausgewogene Mahlzeit anrichten.

My new mit and pulled jackfruit from @thejackfruitco So easy and quick to make if you are lazy or on the go a lot. All it needs is to be heated up which I did in a cast iron skillet. Great for so many recipes. The oven mit I found down at @citymarketkc in a plants store of all places. I got some funny socks from the same company as well. Moving into a new place which means rebuying a lot of things. Definitely upping my game as I do it.
