Wedding season is full of love and laughter, travels, adventures and celebrations. But it's also full of countless hours being glued to our computers culling and editing, writing invoices and replying to emails. The contrast from one day to another couldn't be any bigger these days. So today is one of those editing days, but it's also taking me back to this wedding so full of love and laughter, reminding us why we still love all of this ☺️
We drove over w/ the sanctuary owners to help pick up and relocation Sundance from his old ranch to his new home.
Sundance was the lone ostrich remaining from a Colorado ostrich-meat ranch. His rancher seemed to care for him these last 23 or so years (he was the last one remaining b/c he was a his favorite male) but was ready to walk away from this life and responsibility so Sundance had to go somewhere. If the sanctuary hadn't agreed to take him in the rancher could have made an easy sale for the bird's rare meat, skin, & feathers.
We are thrilled Sundance found his way to the sanctuary and honored we could play a part in this transport & transition. •••
Largest bird on the planet • Only bird w/ 2 toes (40 mph speed) • Average lifespan 50-75yrs • a solid kick from those legs can kill a lion. •••
This female peacock was take by him instantly. He couldn't shake her and didn't seem to know what to think.
And those feet!!! Dinosaur!! What an amazing creature. What a crazy experience!!! So wild & wonderful. I hope he is happy in his new home and with all his new friends 💚🙌🏿

VEGAN SCALLOPED POTATOES AND CAULIFLOWER WITH JAMAICAN CURRY SPICES 3/5⭐️
•2 tsp oil
•½ medium onion
•3 cloves of garlic
•3.5 tbsp flour
•1 Tbsp Jamaican Curry Powder: Recipe below
•2 cups unsweetened non dairy milk
•half a small head of cauliflower sliced into not more than ¼ inch thick slices
•2 medium potatoes thinly sliced, ⅛ inch thick
•¼ cup water or vegetable broth
•⅓ cup breadcrumbs
•¼ tsp salt
•2 cloves of garlic
•¼ tsp dried thyme
•¼ tsp black pepper
•¼ tsp smoked paprika
Jamaican Curry Powder
•½ tsp ground coriander
•¼ tsp ground cumin
•¼ tsp ground mustard
•¼ tsp onion powder
•½ tsp dried thyme
•½ tsp dried parsley
•¼ tsp or more cayenne
•¼ tsp black pepper
•⅛ tsp or more allspice
•a good dash of cinnamon, ground ginger
•½ tsp lime juice after roasting the spices and flour
If you have someone in your life who is encouraging you to learn new things and be more self aware and present in your actions, that is a f-ing GIFT. That person loves you, wants to empower you, and can't wait for you to grow too.
Some of us have to learn and grow w/out anyone encouraging us and that is difficult. Most never take the first steps and find themselves stagnant and unhappy.
I hope you recognize the gift of self awareness and conscious choice.
Humanity need more individuals who aren't afraid to defy social norms and indoctrinations and to step out of our habitual existence and into a life of purposeful good intent and conscious decision making.
We all benefit from a collective conscious awakening.

If you want a peaceful world, you must personally engage in a compassionate lifestyle; which means you are always attempting to cause the LEAST amount of suffering possible.
Why people argue against a compassionate lifestyle is confusing and disheartening but I trust those individuals are uneducated as to what the true picture of living with compassion reflects.
Any institution or person who teaches peace but neglects to incourage a vegan lifestyle is missing out on the biggest opportunity to live that message. You are missing out of the biggest opportunity to align your morals with your actions and to cleanse your body, mind, & soul with light, love, and good energy.

Hey! I posted I was going raw and then have been terrible about posting what I am eating! I remember as I am eating that I forgot to take the photo so I guess #priorities Anyway I am on Day 3 and LOVING it! Last night I had a friend in town and we ventured to one of my already favorite spots @blossominglotus and I finally had the courage to try the RAW nachos and omg 😲 probably the best vegan nachos I have ever had! They did not disappoint 🙌

We feel it's important for people to know the impact our every day choices has effects on sentient beings, the environment and own own health.

Vegan Palak "Paneer"!
It's a common Indian curry which is spinach based... paneer got switched with firm tofu.
Curry: •Wash the spinach (you can either use baby spinach for a quick start or the more budget friendly big spinach leaves and cut off the ends, it also has a slightly stronger taste)
•Sauté chopped onions and organic garlic in a hot pan in a little bit of coconut oil
•Once the onions are glassy, drop the spinach and mix it well. After some time the spinach will change its consistency •Season with black pepper, paprika, ginger, gram masala, curry powder, cumin, coriander, lemon grass (these are all powdered seasonings, but they can be substituted with their non dried conditions like fresh ginger etc)
•Fill all in a food blender (should not be plastic, otherwise you can use a blending stick) and blend till it becomes a paste
•Add one can of coconut cream and blend again •Fill it back into the cooking pan to let it simmer for another 5-10min and if you like add some cut firm tofu pieces to it
•Serve with a side of rice or paratha •Yum ✅
