Dinner!!!! Sweet potato fry goals with a side of veggie burger, and quinoa mix. Delish ! I made my fries simply with a little sprinkle of cinnamon in my air fryer and then I drizzled with some @madhavasweet maple agave. Sooo good 🤤
Wanted to give the little one her first taste of pizza tonight with @daiyafoods supreme vegan pizza. Was hoping to test her tolerance for red sauce and also at close to 18 months finally get a taste of this American tradition. She had other plans.... and didn't even try a piece; I think she was confused by the texture of the melted "cheese" as she has never really seen that. I guess I'm destined to continue having a picky one to keep me on my toes 🙈
You guys, I feel like a real gourmet vegan chef right now 😩 I finally made my own burger patties using @plantbasedvibe's spicy black bean beet burger recipe :) this burger is so nutritionally dense as it's made from black beans, beets, quinoa, walnuts, and other spices. A 100% plantbased burger that tastes amazing!!! Our #gardein luck continued! Our meatloaf had a bonus fifth slice in it! 😍 I think Gardein did it on purpose to make families argue about who would get the fifth slice. 😂 But we're a diplomatic household so we split it. 😉 #vegandinner
Eric and I hit the #gardein jackpot at Target today!! Cartwheel had a 25% off coupon (which only worked for 4 of the 6 for some reason) and the bags had $2 off coupons on them!! So we spent just $8.42 before tax for six bags of deliciousness. I understand extreme couponers now, I felt so excited when I bought these. 😂 #veganfoodie

Hoy, tortilla de papa 🌱 | Rinde para una tortilla pequeña
1 papa grande
1 cebolla chica (opcional)
1 cachito de morrón (opcional)
3 cucharadas de harina de garbanzo 3 cucharadas de agua
Sal y pimienta
⚬Cortar la papa en cuadraditos chicos y hervir hasta que estén tiernas pero firmes (o freír 😉). Dejar enfriar.
⚬Cortar la cebolla y el morrón chiquitos y saltearlos (opcional).
⚬Hacer el ligue: Mezclar los dos ingredientes bien, sin que queden grumos y condimentar con sal y pimienta.
⚬Meclar la papa, cebolla, morrón y el ligue.
⚬Volcar la preparación en una sartén caliente con un poquito de aceite de coco (o el que uses) y cocinar a fuego medio.
Cuando la tortilla se despega de la sartén es el momento de darla vuelta (Nos ayudamos con un plato y la damos vuelta). Terminamos de cocinar del otro lado y servimos ☺☺
🚨🚨 IMPORTANTE: El secreto de la tortilla es la sartén, si en el primer intento no salió bien o se pegó para la próxima usar otra sartén ☺☺

Another quick and easy vegan dish (recipe included below) This delicious corn risotto is great for lunch or dinner, and it's kids approved 😉
Enjoy the recipe:
* 3 Cups Vegetable Broth
* 1 Tbl Extra Virgin Olive Oil
* 1/2 of a medium chopped Onion * 3/4 Cup Brown Rice
* 1 Cup frozen organic Sweet Corn * 1/2 Cup Sweet Peas
* 1/4 Cup nutritional yeast * Salt and Pepper to taste
* Fresh Italian Leaf Parsley for garnish
DIRECTION * In a large pan, add the oil and sauté onion over medium heat for 2-3 minutes, or until onion is softened. *Add rice and saute for 3 minutes, or until rice is opaque. Stir constantly. *Add vegetable broth and cook for about 10 minutes. Stir frequently. *Add the corn and peas and cook for another 15 minutes or until the rice is tender and creamy. *Stir in nutritional yeast and season with salt and pepper. *Garnish with fresh parsley and enjoy! 😊🌱 #veganfoodie
I did it guys!! I made it 5 whole days eating vegan!! I am really proud of sticking through this little self-challenge that I put on myself. And I gotta say... I am quite surprised that I've had no desire to have any meat/seafood/dairy/eggs! The food I've had (like tonight's lentil sloppy Joe's) has been so tasty and satisfying. I'm not sure if I'll stick it out over over the weekend or not, but I'll definitely be doing another 5 days next week along with the others in my clean eating challenge. Cheers to Friday and crushing goals!!
