Tonight is he first new moon of 2018. All new moons are powerful but this full moon we move in to Capricorn while aligning the sun and moon together with Mercury, Venus and Pluto. This starts an emotional shift (yes again) and we need to ground ourselves and set our intentions. Not only did a create my first ever crystal grid on a new moon but I am also eating for my chakras on this full moon. All colors of the rainbow to help my chakras stay balanced during this energy shift is super important! What are your intentions on this new moon?
1 cup chickpeas.
1/2 cup packed fresh parsley leaves.
1/2 cup packed fresh cilantro leaves.
1/2 cup chopped white onion.
3 cloves garlic.
1 teaspoon ground cumin.
1/2 teaspoon salt.
1/2 teaspoon baking powder.
2 teaspoons fresh lemon juice.
3 Tablespoons olive oil.
Bake on 190 °c for 15 minutes, flip them and bake for another 10 minutes.
Make sure you grease the baking sheet.
You can choose whatever toppings you like. I topped mine with hummus dip and salad.

I can't believe how real these look! I think making them out of red kidney beans gives them the perfect "meat" color.

What’s your favorite kind of beet? This year we’re going to grow chioggia and golden! I love classic red beets, too. But we want to add some variety. I love having a rainbow of foods available to cook and add to salads.

So today, treat yourself with this delicious Butterscotch Macchiato, packed with Huel too!

– 200ml almond milk (or other non-dairy milk of choice)⠀
– 1 scoop vanilla Huel⠀
– 20g cashews, soaked overnight⠀
– 3 dates, soaked in warm water ~15 mins⠀
– 1 tsp coffee granules⠀
– 3 ice cubes⠀
– 10ml butterscotch syrup (sugar free if possible)
– Soak cashews and dates.⠀
– Add all ingredients to a blender and whiz until smooth

Chickpea Salad Bowl by @veganreset ✨ (serves 1)
3 sliced radishes
¼ sliced or chopped cucumer (tip: marinate in lemon juice)
1 cup frisé lettuce
2 cups shredded kale
½ cup cooked chickpeas
⅓ cup cherry tomatoes, halved
2 tbsp sunflower seeds
¼ sliced green apple
2 tbsp unsweetened dried cranberries or raisins
2 tbsp olive oil
Dressing (optional): 1 tbsp balsamic vinegar
Massage the kale with the olive oil (that’ll make it less dry and easier to eat and enjoy, as an alternative you can also use 1/4 - 1/2 ripe avocado)
Mix with all other ingredients and enjoy!
What to do with an endless SOUPply of canned pumpkin? Make a SOUPer good pumpkin soup!
I would make pumpkin puns (PUNkins!?) instead, but I feel like most people would assume it's tomato soup before reading this 🎃
2 cans pumpkin + 2 cans water (or broth) + 1/2 onion + 1 cup spinach + 2 tbsp soy sauce + 1 tbsp Italian seasoning + 1 tbsp ginger + chili flakes
Canned pumpkin was on sale, so I stocked up! I love pumpkin in oats, as pasta sauce, and obviously as soup!
I feel like some people forget about pumpkin when the new year rolls around, but I think as long as the weather is cold, pumpkin should still be enjoyed. (I would probably still eat it in the summer tbh)
I bought some frozen wild blueberries yesterday - they‘re smaller than the big ones you usually find in stores 🌱☀️💗
