Although there are no sweet potatoes involved, I’m pretty sure this is going to be one of my new favorite dishes! .
👉🏻Super easy to meal prep, perfect balance of macros, very filling, and seriously taste delicious .
🤷🏼♀️How to make⁉️.
1️⃣Farro: cook on the stove in water or vegetable broth for more flavor. I used water bc I had no broth, and added some liquid aminos at the very end!
2️⃣Chickpeas: toss in olive oil, garlic powder, seasoning salt, and paprika. Roast in the oven for about 25 minutes. Just until they harden a bit, but not too crispy
3️⃣Once the farro is cooked and drained and the chickpeas are roasted, combine in a bowl + a can of white beans, edamame beans, and cubed tempeh (you can marinate it in sauce beforehand for more flavor...I’d recommend coconut aminos) .
4️⃣Pair this carb and protein packed mixture with some micros and healthy fat, then top with my favorite @traderjoes eggplant spread and nutritional yeast for a nice cheesy vegan touch 👌🏻

Happy Weekend, beautiful citizen of the world! Today I'm keeping it simple and spicy with Cauliflower Wings! 🔥 🔥 🔥
This recipe offers you healthful baked cauliflower wings; so, if you're looking for something savoury to snack on without feeling guilty- this one is for you. 😄
Cauliflower (Hot) Wings
• 400 g cauliflower florets (about 470-500 g of cauliflower head)
• 1 cup plain/ white whole wheat flour
• 1/4 tsp ground cumin
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1 tsp smoked paprika
• 300 ml sparkling water, refrigerated
• 2 tbs coconut oil for greasing the baking tray
• 1/2 hot sauce • 1-2 tbs vegan butter, melted
• 1 tsp white wine vinegar
1. Bake cauliflower florets in the oven at 400 for about 30-40 minutes, flip half way through. This is to get rid of the moisture so the batter won't become wet and soggy later on.
2. Combine flour with garlic powder, onion powder, cumin, and smoked paprika. Then, add sparking water and mix well.
3. Once the cauliflower florets are baked, transfer to a bowl before greasing up the baking tray and popping it back into the oven.
4. Once the tray is hot, coat the florets in your batter and transfer them onto the hot, sizzling pan.
5. Continue to cook at the same temperature for another 20 or so minutes- until the batter crisps up, and that's when you know they're done. (Or just deep fry them if you're hangry)
6. Whisk together hot sauce, vegan butter, and vinegar before pouring the sauce over your baked cauliflower wings and toss until fully coated.
7. Broil the "wings" for about 5-10 minutes or until the sauce is caramelized and glossy.
8. Serve with a side of tofu ranch and fresh vegetables.
9. Indulge. ❤️

Today I simply roasted them with Extra Virgin Olive Oil, fresh Herbs, and Garlic!
So simple and delicious! 🍽
•Romanesco - "has great nutritional value, providing zinc, carotenoids, iron, vitamin C, and folate!"
•Cheddar Cauliflower - "contains a fair amount of folate, calcium, potassium and selenium and is high in both fiber and vitamin C. It also contains a higher amount of Vitamin A than traditional Cauliflower."
