Tonight's dinner was so easy to make. As soon as I got home from work, I reached into the fridge, grabbed whatever veggies were in sight, heated my oven to 425 degreesF, lined a sheet pan and plopped onto it a chopped tomato, quartered mushrooms, 3 whole cloves of garlic, diced sweet potato and onions, and a jalapeño. Baked it for 40 or so minutes, dressed a plate with warmed @raoshomemade roasted garlic pasta sauce added some fresh basil, avocado, and a crumbling of @yvonnesvegankitchen crackers and voila--a super flavorful and nourishing, warm, and saucy dinner for ma belly. Picnic Box ⛱ || Jalapeño Falafel 🌶, hummus, chopped salad with all the sauces, and the fluffiest pita bread you'll ever have. 😌☁️🥖 @the_hippea made special Jalapeño Falafel yesterday, so we planned a family hang day and walked to go get some! I had the box so I could take leftovers home, and my counterpart 💘 had the special falafel pita with everything and some of the best fries in Long Beach. 🍟 My expectations were far exceeded when I tasted the falafel and the jalapeño flavor came through so strongly, and worked so well! We loved it. Such a great special, guys!! 😍

Steamed brown rice and quinoa - edamame - diced cucumber - falafel - homemade hummus - multiseed sprinkle - sweet chilli sauce.
I've been using the @tildarice packets recently and love their mixed grains for a #basicvegan combination of carbs and protein.
Enjoyed a refreshing and delicious Mediterranean dinner last night. Baked chickpea fritters with roasted mushrooms, jalapeños, onions, hummus, tahini, and tangy fresh salad. Crisp romaine, arugula, kale, tomato, onion, kalamata olives, beets with an easy dressing of smashed garlic, sea salt, lemon juice, olive oil, cayenne, and black pepper. Mmm so good 😍🤤, and always funner cooking and eating with friends.✨🌱#LifeIsGood 🙏🌅

It's been a while but I'm baaaack! Word on the street is it's national left handers day. Shoutout to all my fellow lefties, we do it better ✋🏼I celebrated with some homemade falafel over a bed of quinoa, topped with vegan basil pesto. Made with only using my left hand... Just kidding guys I used both, I'm not that talented ✨
We found these super great falafels at our local Mediterranean supermarket! Roasted potatoes and red peppers, fresh veggies, kebab peppers, and homemade garlic sauce with sriracha. These fresh potatoes are outta this world. Gonna miss them when they're out of season!
Finished product of today's falafel recipe! Super proud of how everything turned out. Got to christen my new food processor today with this new recipe :) Also super happy because today marks my first official month as a #vegan 💚I am at a point in my life when I really want to treat my body as my temple and be conscious of the decisions I make on a daily basis across all disciplines. I cannot say it's always easy to be vegan but self discipline and conscientiousness is truly important to me and something that I want to continually work on!
Ingredients: Chickpeas, cumin, garlic, red pepper, parsley, red onions, and panko whole wheat bread crumbs. ***Also want to note that these falafel balls are sans oil/frying and are baked instead!!! On the side is Swiss chard and tomatoes with a homemade sun-dried tomato, garlic, cilantro tahini sauce and pita bread.

Ingredients: * 1/2 cup oats flour * 1 can chick peas * 2 cloves of mince garlic
* 1 tablespoon ground cumin * 1/2 teaspoon turmeric * Pinch salt/pepper to taste * 1/2 cup carrots, grated * 1/2 cup red onion, roughly chopped * 1/3 cup fresh parsley, roughly chopped * Olive oil in pan
1. Add pat flour to food processor. If you do not have oat flour, blend oats they reach a flour like consistency
2. Add washed chickpeas, minced garlic, cumin, turmeric, black pepper, and salt to food processor. Blend until mixed and chickpeas are mostly a smooth consistency
3. Add carrots, red onion and parsley to food processor and mix well
4. Heat pan on medium-high heat with olive oil
5. Form falafel mixture into size and shape you want
6. Cook until top and bottom are golden brown then pop into the oven for 10 or so minutes •
