Asian breakfast broth for six.
This is super fresh, yummy, nurturing and cleansing, it only takes around ten minutes and the kids love it.
Shitaki, enoki mushrooms, tofu, fresh ginger cooked in sesame oil, deglaze pan with tamari and mirin, add water, add bok choy and spring onion, serve over cooked rice noodles. Enjoy!
I just wanted to take a second out of my busy day to give the biggest shout out to my husband @caleblowery . I haven't been sleeping well, I've been sick from stress, my life has been chaotic the last few weeks..(actually the last 5 years with him/my entire life before that). This man is not only my best friend through adventures, but he is my soul, my rock, my home. No matter where we go or what we do if I'm with him everything is okay. I've been stressed over not having a dedicated workspace and he took the leaf out on the kitchen table and everything and set this all up for me to wake up to. He does little things all of the time that are just so thoughtful and caring. He makes mr pictures and puts them where I see them all day long. For anyone out there who doesn't believe guys are out there that are thoughtful, smart, caring, successful, and strong I'm here to tell you I married one so they are out there. It's not our anniversary or any holiday and this is my every day life. Breakfast in bed, a shoulder to cry on, a strong man to belay me as I climb, and an architect who makes sure I don't have to worry about bills and going out to work while I've worked on getting 3 degrees 2 of which are in engineering. As a family that is gluten free and vegan, I get asked, “What in the world do you eat?”, a lot! So I thought it might be helpful, especially to a mom who is interested in going plant-based to see a week’s grocery run.
This week’s menu:
Breakfast - oatmeal, fruit and veggie smoothies, steal cut oats, or gluten free waffle (not my favorite to serve but let’s face it, some mornings you just need to get out the door!) Lunch -
The girls get a sandwich, wrap, or pasta salad (peanut butter or chickpea salad is a favorite). Then they get a veggie, like carrot sticks or peppers. A fruit- Apple, banana, or peaches. Then some sort of chip’ish food, this week I got veggie straws. For snack at school they get nuts (we are very fortunate to be in schools not affected by nut allergies). At home, I keep washed berries, coconut milk yogurt and guacamole in the fridge that they can get to anytime (pic included)
Me and Mr. Vegan Savage eat salads, sandwiches, left overs, and I got some baked potatoes for one day this week.
Dinner plan this week- Eggplant Parm
Ramen Buddha Bowls
Green Chile and pinto burritos
Mushroom French Dips
Wild rice and sundried tomato stuffed peppers
Cauliflower steaks w/ quinoa and Swiss chard
Veggie Stir fry

Lola took this photo of us. She says “ok now one more for safety”. The last few days have been absolutely killer. Odin and I both have a sore throat, he’s teething, Lola’s been so freaking rude and flat out telling me “NO!” a million times when I ask her to do something until finally giving in and saying “fine motherrrrrr”. I haven’t slept with Odin nursing ALL night; he’s wide awake as soon as my boob isn’t in his mouth. I’m trying real hard to enjoy every second but I’m I just feel like I’m in the depths of this trying, exhausting season of motherhood and sometimes I just want a nap, ya know? 😫😴

Okay, this weeks meal prep is more simplified and streamlined. M-F is all business, as we are jam packed schedule wise and found we don’t have a ton of extra energy to exert in custom meals daily. More fun and creative cooking will be reserved for our weekends. 🤗
Breakfasts- overnight oats and fruit thanks for the suggestion @veganwithmuscles 😘! Lunches for kids- peanut butter, cinnamon and banana sammie’s with fruit and carrots(not pictured because I already had on hand). Lunches for mom & dad- sweet potato, greens and sauerkraut(not pictured, had on hand. I only buy @edenfoods sauerkraut though)
Dinners- sweet potato, broccoli, greens with a dessert protein smoothie bowl using @vivolife protein
I will probably make a mid week run for more greens, citrus fruit and sweet potatoes. Due to freshness purposes, I didn’t buy all at once. Unfortunately, the fresh fruit and produce isn’t the best and cost effective here right now, so we’ll be using some frozen until we can get our hands on quality fresh. #emeraldcoastvegan#veganfamilymealprep#mealprep#veganonabudget
