Ontem rolou na minha casa um natal vegano digno de master chef! Na real muito mais digno já que tava surreal de bom e ainda sem nenhuma crueldade animal! Pensa em uma pessoa se acabando de comer (zero maturidade 😂). Rolou só comida boa já que tivemos os chefs @nordsveggie e @ericyazaki que prepararam um tender de tofu mara e uma “jacalhoada” que me da até arrepio de lembrar de tão boa que tava! Por minha conta ficou a sobremesa: bolo de chocolate com uma cobertura super cremosa com coco e blueberries. Da pra ser Natal vegano toda semana? 😂🤩

All the holiday parties means all the holiday baking. Top secret, the blondies are packed with vitamins and made with butternut squash, and Christmas chocolate chips of course 🎄
Make them 👇
in a bowl combine:
1/2 cup coconut flour
1/2 cup oat flour (gluten free)
A lot of (vegan) chocolate chunks/chocolate chips
3 - 4 tablespoons cocoa powder
1/2 cup coconut oil
1 cup puréed butternut squash
2 flax "eggs"
2 tablespoons maple syrup
1 tablespoon molasses
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp baking powder
Pinch of salt
Mix well and pour into 8 x 8 pan, bake for about 20 minutes at 350F
Let cool and enjoy! Totally acceptable for breakfast right?
Advent day 18 already! Did someone say chocolate peanut butter fudge with sultanas and puffed buckwheat? I have a batch in the freezer and it takes every ounce of self-control to not go grab it and munch it all down. I forgot to write down the recipe when I was making it so I'll have to remake it on order to give you guys the recipe - which I don't mind at all cuz then I get to eat more of it. Downside: I'm almost out of peanut butter so it'll have to wait. Reason enough to eat this batch of fudge very very slowly. Frankly, this is the yummiest version I've ever made *humble as ever*. Sidenote: today's quote is in German. With Quinoa, Chickpea, Kale and Orange Zest, it's difficult to think of a more wholesome vegan meal that pack a complete protein profile and tonnes of fiber. There's so much fiber in this meal that you'll have to fight every single one of your sense to overeat and consume too much for your required calorie intake for that particular meal. When you focus on micronutrients and fiber, it's always easier to get a thoroughly complete meal that's low in calories and keeps you fit, strong and healthy. Advent day 17, exactly one week to go! Today I went for an impulsive run. I didn't plan to workout today but I needed it after an entire day of sitting behind my desk struggling to get out an essay. I left my heart rate tracker at home on purpose, so I could just run and not focus on how long I was already going or how many kcals I had burned and it was so much fun! 5 days left here in Italy and only now I discover two other supermarkets just around the corner, a beautiful dusty path with a view on the mountains and a long lane with a stunning villa!
