🍑 Peach tofu ricotta flatbreads 📷 by 🚨🚨Recipe: Garlic herb butter:
2 tbsp vegan butter or olive oil
2 to 3 large cloves of garlic minced or crushed
2 tbsp fresh herbs, finely chopped. I used cilantro and dill. use any of parsley, tarragon, basil, rosemary, thyme
1 cup unbleached white flour or all purpose flour
1 tsp baking powder
1/8 tsp baking soda
1/3 tsp salt use less if your aquafaba is highly salted
1/3 tsp garlic powder
2 tbsp chopped herbs of choice
2 tsp oil
3 tbsp aquafaba chickpea water, thick viscous water from a can of chickpeas, or from home made chickpeas , or use non dairy yogurt.
2.5 tbsp non dairy milk
1/2 tsp lemon juice
a pinch of sugar omit if using sweetened non dairy milk
Prep your garlic herb spread:
Melt vegan butter in a bowl or warm the olive oil. Mince or crush the garlic and mix in. Mix in half of the chopped herbs.
Make the flatbread:
In a bowl, whisk all the dry ingredients until well combined. Mix in the herbs
In a small bowl mix the non dairy milk and lemon juice. Add to the dry. Add aquafaba, oil and sugar to the dry. Mix well and knead for a minute. The dough will seem dry then start to get sticky as you keep kneading. Add a tsp or more flour if too sticky or a tsp non dairy milk if too dry. You want the dough to be somewhat sticky. Cover the bowl and let it sit for 5 minutes.
Spray oil on the dough and knead for a few seconds to smooth out.
Divide dough into 3 parts. Roll each into a smooth ball. Flatten one, dust in flour and roll out into an oval or circle shape.
Heat a skillet over medium high heat. When the skillet is evenly hot. Place the rolled out flatbread on it. Place a lid on the flatbread and cook for 2 minutes.
Flip and cook for another 1 to 2 minutes. Place directly on the flame or grill to blacken, or continue to cook on the skillet until golden brown spots.
Place on a serving plate and immediately brush with garlic herbed butter Sprinkle some herbs
Repeat for all flatbreads. 🍑

Rosenkohl putzen und in Viertel/Hälften schneiden. In etwas Kokosöl anbraten und mit Deckel drauf etwa 5 Minuten dünsten lassen. Salzen pfeffern , eine Prise Zimt überstreuen, Walnüsse und Orangen hinzugeben und noch kurz mit braten. Curried lentil, kale and potato Soup
1 Tbsp (15 ml) coconut oil
1 cup (160 g) diced yellow or white onion
1 tsp minced fresh ginger
2 whole (120 g) carrots, peeled and chopped
Pinch sea salt + black pepper,
4 cloves garlic, minced
3 cups (450 g) diced potatoes
1 1/2 Tbsp (5 g) curry powder
5-6 cups (1200-1440 ml) vegetable broth
1 cup (192 g) green lentils, thoroughly rinsed and drained.
4 cups (240 g) chopped green or purple kale
Heat a large pot over medium heat. Once hot, add oil, onion, ginger, and carrots. Season with a pinch each sea salt and black pepper and stir. Cook for 3-5 minutes, stirring frequently, until onions are soft and fragrant. Add garlic and potatoes and stir. Cook for 3-4 minutes to brown slightly, and then add curry powder. Stir to coat. Cook 2 minutes more. Add 5 cups (1200 ml) vegetable broth and increase heat to medium-high. Once at a low boil, add lentils, stir, and reduce heat to low. Simmer for 20-25 minutes, uncovered, or until lentils and potatoes are tender. Taste and adjust seasonings, adding coconut sugar for a little sweetness (optional), more curry powder for intense curry flavor, or sea salt and pepper for more balance. I added more of each. If the soup has thickened too much, add remaining 1 cup (240 ml) vegetable broth, stir, and cook until warmed through. In the last few minutes of cooking, add the kale and cover to steam until tender but still vibrant green - about 2-3 minutes. Serve immediately as is or with cilantro and fresh lemon juice (optional). Store leftovers in the refrigerator up to 5 days or in the freezer up to 1 month. Courtesy of @minimalistbaker

It offers a delicious vegan green curry - and always gives me the feeling that the Thailand adventure has begun 😇
