Recipe: 2 eggplants-Cut in half and insides scooped out, 1/4 cup onion minced, 3 cloves minced garlic, 1 cup crushed tomatoes, 1 cup cooked quinoa, 1 tbsp onion powder and garlic powder, 1/2 tbsp salt, dash of pepper, 1/2 tbsp basil leaves chopped and dried oregano and 1 cup mozzarella (or vegan mozz)
Directions: preheat oven to 375. Bake the 4 halves of scooped out eggplants for 10 mins lightly brushed with olive oil. In meantime, in sauté pan, sauté the scooped out eggplant, minced onion and garlic, 1 cup crushed tomato, and all the spices together with 1 tsp olive oil, together for 15 mins(the amount of time the quinoa takes to cook). While sautéing cook the quinoa. Once quinoa is done, add the quinoa to the eggplant tomato mixture. Then evenly scoop the mixture among the 4 halves of the eggplants, sprinkle the mozzarella on top and bake for 20 mins. ENJOY 😊

Before I was vegan I thought that vegans only ate salads and fruit... I believed that living this way was so restrictive and not fulfilling. Once I educated myself on this way of living and eating I couldn't be more fulfilled and I feel no restriction. I actually feel like I've been opened up to so many more foods and flavors since I went vegan 🍃😋 there are so many varieties of fruits, vegetables, grains, beans, potatoes, lentils, seasonings, nuts, seeds, etc that I didn't even know of before. Example 👉🏼 my dinner yesterday.. edamame burger with sprouts 🌱 + tomato 🍅 + homemade vegan russian dressing... sweet chickpea + raisin + cranberry + veggie salad on the side! 🥗🌈 non-vegans typically eat a hamburger w melted cheese and maybe a fried egg & bacon on top ❌🍔 but seriously how many different types of veggie burgers could you make?! I was really feeling pancakes today for some reason so I stole this recipe for banana oat pancakes from my bestie up north 😏 @bringtheveggies <---- go follow her! She posts really yummy food and is so sweet 💗💗 Also, today I finally ran long enough to *almost* hit my max hr 😂😬 getting there one day at a time!!! • I'm just now noticing that I didn't crop the picture to show my highest hr lolol 🤦🏼♀️ it got to 184bpm and my max hr is about 193-200bpm. And I didn't run the entire time either bc I'm deff not there yet 😂 I ran a mile, walked a mile, and then ran another.

I'm back from vacation and decided to try juicing for the first time to get some nutrients in my body! I ate pretty healthy all week because I was pretty limited as to what was available for me (all inclusive resort in Punta Cana.. mostly had meat/animal based options), but I wasn't perfect the whole time (ate vegan still- of course) My body is craving a healthy juice! This juice is loaded with celery, kale, romaine, carrots, cucumber, apple, ginger, and turmeric. I am very satisfied with how this turned out! What are your favorite ingredients to put in your green juice?
