Lemon Water with chiaseeds to Start the day 💪🏻🍋

This is what Monday looks like in my food world. A take on PB&J with coconut chia pudding, peanut butter, blended strawberries (with previously made port cherry sauce - naughty) and a swirl of Nutella. Just because 💁♂️

Banana cake 🎂 🍌
2 large bananas (very ripe)
1/4 cup oil of choice
1/2 cup water
1/2 teaspoon vanilla
1/2 teaspoon orange oil (optional but highly recommended)
1/2 cup brown sugar
1 1/2 cup flour
1 1/2 teaspoons baking powder
3/4 cup chopped walnuts
1 large banana for the top (optional)
Preheat the oven to 350F.
Oil and flour 8-inch cake or pie plate.
In a large bowl mash 2 bananas until very smooth.
Add oil, water, vanilla, orange oil and mix well.
Add brown sugar and mix.
Add flour and baking powder and mix just until flour disappears.
Add walnuts and mix well.
Pour the batter into the prepared cake pan.
If you are using another banana on top, then slice it lengthwise into 4-5 slices and place on top. Alternatively you could dice it into circles and cover the top with them.
Bake for 1 hour and 15 minutes or until a toothpick inserted in the middle of the cake comes out clean. Let cool and enjoy! .

Found this new, vegan, ice cream - esque dessert at Fred Meyer next to the So Delicious. They had this one (sea salt caramel) and butter Pecan for $3.29 each. It's not amazing, but not bad either; a bit overly sweet for my taste, and not as creamy as I prefer. But the price is right, and at under 600 calories for the entire pint, is a good alternative for those of us who like to polish off the whole thing in one sitting (sorry to bring up calories... Normally I don't care, but I have a serious ice cream habit and compete in a sport with weight classes, so it sometimes comes up). #vegan#veganfoodshare#whatveganseat#vegansofig#vegansofinstagram#whatveganpowerlifterseat#whatveganseat#portlandvegans#pdxvegans#stumptownvegans
No living being should be killed for any reason 😞@lightmoveme▪️51.4 billion chickens are artificially hatched, fattened up and slaughtered as 42-day-old every year globally. A chicken’s normal lifespan is 10–15 years. 🔹Chickens bred for meat are arguably the most genetically manipulated of all animals, forced to grow 65 times faster than their bodies normally would, and the industry continually seeks to increase their growth rate. ▪️Chickens are housed in giant, overcrowded sheds, where they are packed in by the thousands and forced to stand and sit on filthy, manure-laden flooring, which is typically cleaned out only every 2 to 4 years. “Free range” is a meaningless term in this sense, since almost all chickens raised for meat are uncaged. 🔹Heart failure afflicts chickens at a rate of at least 4.7% and is attributed to genetic manipulation, but this figure only covers birds within their first 42 days of life. 🔹The rate of heart failure increases in the weeks to come. Rescues often die of heart failure in their first 3 to 4 months of life. Their baby hearts cannot keep up with their adult-sized bodies. ▪️“Ammonia burn” and respiratory diseases and fatalities are also common from exposure to high concentrations of ammonia emanating from large accumulations of feces. ▪️At the slaughterhouse, chickens are not stunned, but shackled and dragged upside down, fully conscious, through electrified water that paralyzes their muscles so that their feathers will come off more easily after they are dead. 🔹Millions of chickens and turkeys are scalded alive after their throats are cut. Former slaughterhouse worker Virgil Butler reports that in the scald tank, “the chickens scream, kick, and their eyeballs pop out of their heads.” ▪️So-called “humane” slaughter alternatives include the “kill cone,” decompression, and gas chambers. The kill cone is the most barbaric and cruel form of killing imaginable; chickens are stuffed head first down a long funnel. Their heads are pulled through a small opening, and their necks are slashed as they thrash and scream in agony as blood flows out of their mouths.
third trimester has brought with it the delightful fatigue of first trimester (yay, couch naps!), which hasn't at all been helped by a decent drop in my normally formidable iron levels - thanks for that, pippy!! whilst my levels are still far from deficient, i need to get on top of them before they get worse. so! daily green smoothies it is, along with this little trick - a couple spoons of blackstrap molasses washed down with organic orange slices. vitamin c increases iron absorption and helps to take away the not so delicious taste of the molasses! any other tips for increasing iron levels during pregnancy? let me have them! #30weekspregnant#vegan#veganpregnancy

MONDAY MOTIVATION. "We teach girls shame. Close your legs. Cover yourself. We make them feel as though by being born female, they are already guilty of something. And so girls grow up to be women who cannot say they have desire. Who silence themselves. Who cannot say what they truly think. Who have turned pretence into an art form."
Chimamanda Ngozi Adichie, We Should All Be Feminists
'Look around you. How many people do you think are settling? Probably a hell of a lot. People settle into okay relationships, okay jobs, okay friends and an okay life. Why? Because "okay" is comfortable. Okay pays the bills, and provides a warm bed at night. Some people are fine with okay and guess what? That's okay. But okay isn't thrilling, it isn't passionate, it's not life changing or unforgettable. Okay is not the reason you risk absolutely everything you've got for the smallest chance that something absolutely amazing could happen.' - Kovie Biakolo 💫
Last year this time my life was okay, but I was thriving for more. I wanted to see what's out there. So I quit my comfortable okay job and my safe life in Munich to try something new, to go for what I was passionate about and apply for uni again. To learn something new, to challenge myself, to make room for my creativity and my hunger for more! ✨
And I couldn't be more happy about my decision! I love my life at the moment even though exam period isn't the most enjoyable time of the year. But I'm working towards my dreams every single day! ⭐️
Thank you @tinap233 for sharing that quote! 😘

Two more days in Thailand. Two more days to soak in the beautiful Chiang Mai sun, eat all of the best vegan food, and spend time with some of the most beautiful souls. I can't express how grateful I am to be living this life. This photo was from the Pilgrim's hike up to Doi Suthep, one of my first experiences in Thailand 🤙🏼💖
