I'm two recipes away from having cooked my way through the first Thug Kitchen Cookbook. 😊 This was one of the stragglers that I got through this week—summer squash soup, made creamy with a puréed russet potato and topped with green onions. 🥔🌱
I feel like I spend so much $$ on groceries. It makes me wonder how much an average young adult spends per week. I've been tracking my expenses for the last week when it comes to groceries and eating out & will continue for the next month. Excited to see what I find! To be fair I dont eat out often and when I do it's usually a date night aka I'm not paying. But these Whole Food bills on the other hand... 😱😩

Nenhum desses é motivo suficiente pra comer mal! 🙌🏼 Invente uma gororoba simples, com tudo misturado, fica uma delícia! 😋 Essa maravilha nutritiva Vegana levou uns 10 minutos pra ficar pronta. Enquanto eu cozinhava as ervilhas congeladas em água fervente, cortei 1/2 abobrinha e 1/2 cenoura e refoguei no azeite com orégano seco, fogo médio até elas amaciarem um pouco. Pode usar qualquer legume/verdura que esteja sobrando aí tá? Brócolis, espinafre, tomate... 🍆🍅🥕 Depois escorri as ervilhas e tasquei nos legumes. Temperei com pimenta e sal e deixei apurar um pouquinho o sabor. Poderia já ter servido assim, já fica delicioso! 😋 Mas eu tinha um potinho com molho pesto no congelador, então misturei uma colher aí e depois é só alegria! 💃🏻 Ervilhas e edamame congelados são ótimos pra ter em casa e dar essa salvada!

✨So it was my mama's birthday yesterday, and being that she's trying to improve her diet I made her a healthy dessert to end our cute picnic with - packed with fibre, healthy fats + plant protein and just enough sweetness + fancy flavours 😊👌🏼
🌹 This rose, cardamom + pistachio chia pudding is layered with coconut yogurt and can be a snack on the go (left jar) or a fancy post meal dessert (whip jar 😏)
To make ✌🏼 jars:
1.5 cups nut milk (I used homemade hemp milk)
1/4 cup chia seeds
1/4-1/2 tsp rose water @nielsenmassey
1/4 tsp cardamom
1 tbsp maple syrup
1 tsp vanilla @nielsenmassey
1/4 cup pistachios (chopped - thanks SlapChop.. remember those? 🤣)
1/2 tsp beet powder (for colour + sweetness)
Coconut yogurt (I used plain @lovemysilk)
Optional: honey, coconut whip, granola
STEP 1: mix the above ingredients [minus the yogurt] and let sit a couple hours (or overnight in the fridge)
STEP 2: layer the chia pudding + coconut yogurt until jar is almost full. If limiting sugar you can omit the honey as the maple syrup in the pudding will be enough, but if you're into making a sweeter treat, drizzle a layer of honey after the first 2 layers of the jar.
I topped mine with @orchardpond Nutty granola, some extra chopped pistachios, a couple squares of lavender dark chocolate @organicfair and coconut whip 🤤 Seriously even if you're not dairy free this shit is wayyyy better than regular whipped cream 😉 and it's good old GayLea from @loblawson

Vegan goulash with beans and potatoes and some salt pretzels. So good and needed after the past two days. The last night was a mess too. I b/ped my brain out. I dreamed creepy shit and had to cope with lots of difficult emotions. But physically I am way better and I will be healthy at the weekend. My sis, her man and his son, my dad and me wanna drive to the sea. Dad booked us all a hotel room. I am still a little upsad that I missed dad's birthday. But the weekend will be great and my feelings were ugly on yesterday. I Thank you all so much for your loveley words. We can't choose our feelings. But we can choose how to cope with them. I choosed to Let them celebrate a nice party without a break down or something like that - and this was the best solution I guess. It's not their fault that I sometimes feel this way so I used to take responsibility for myself. It's not easy. Alsoe a healthy mind has bad days. But it's about how to cope with it. We can't choose feelings but actings. I b/ped my anger out. One day I will be able to use other strategies. It's frightening what kind of "human" I could be without selfreflexion and what kind of human I just was. At least our actings define us. Not our emotions. But honestly I am afraid sometimes. Afraid that someone who can feel this mean and bad could never be a good human. Let's keep on fighting. I am back on track ❤
Summer version cinnybuns from @veganlov 🍓😍
•310g Spelt flour
•160g Whole grain spelt flour
•60g Brown sugar
•1/4 tsp Salt
•155g Soy milk
•150g Apple puree
•230g Brown sugar
•4tsp Vanilla -
1. Put the flour, sugar and salt into a big bowl and mix them.
2. Put the soy milk, margarine and apple puree in a pan and slightly warm it up (Stir constantly). Try to reach body temperature, add the yeast and don’t stop to stir. Attention: When the temperature is over 40°C, the yeast bacteria will die and the buns won´t rise, so in this case, let it cool down before you add the yeast.
3. Knead the flour mixture and the soy milk mixture together (knead 3 minutes).
4. Cover it with a kitchen towel and let it rest in the sun (or any other warm place) for about an hour.
5. Continuing with the filling, melt the margarine and mix it with the sugar, cinnamon and vanilla.
6. Preheat the oven (180°C)
7. Cover your worktop with flour and roll the dough into a square shape.
8. Brush the dough with the filling (you can also fill it with some berries if you want to).
9. Roll the dough up into a long starting at the long side. Then cut into 12 slices. Place the rolls cut side down on a with a baking sheet covered baking tray.
10. Bake rolls in preheated oven until golden.
11. Mix about 1/2 cup icing sugar with a little bit lemon juice and pour it over the buns (it works best if you let them cool down first).
12. Top the buns off with some berries and nuts.

Blueberry Basil Smoothie
1 zucchini - chopped
3 oz blueberries
1 plum - pitted
1 tbsp flaxseed
1 sprig basil
1 cup water
1 cup ice
