Another day another fall "oatspiration". My morning oatmeal was lightly sweetened with dates and coconut sugar and topped with persimmon slices, kiwi and raw granola (ground oats, dates and nuts). Mini potato pizzas with homemade marinara, vegan cheese, tomatoes, onions, mushrooms, bell peppers, and basil by @thefoodietakesflight 💛
Recipe.
Potato crust: 4 small-medium potatoes, makes 1 1/2 cup mashed potatoes. 1 tbsp nutritional yeast. 1/4 cup water. Salt. Pepper.
Steam/boil the potatoes. Mash the potatoes and add the water. Mix well until well incorporated. Add in the nutritional yeast, salt, and pepper.
On a lined baking tray, form into small crusts. Bake at 350F for 20-30mins, flipping halfway through, until golden brown. 
Tomato sauce: 1/2 cup tomato purée. 2 tbsp nutritional yeast. Herbs of choice.
Mix all the ingredients into a bowl.
Assembling the pizza: Potato crust. Marinara Sauce. Toppings of choice. Vegan cheese.

So I had to eat lunch alone yesterday, though obviously I wasn’t really alone cuz this monster was with me, at least for 10 minutes or so 😋. The @dogfishhead IPA wasn’t bad either. @theherbivorousb makes amazing shredded chicken (happily they ship nationwide) which was the main ingredient in this memorable sandwich!

Ingredientes
🔸1 xic de amêndoas naturais, sem sal
🔸1 limão espremido (fica com um sabor suave de limão, se desejar sem esse sabor diminua a quantidade de limão)
🔸 1 col sopa rasa (5g) ágar-ágar
🔸temperos a gosto (usamos apenas sal rosa)

Modo de preparo
Deixe as amêndoas de molho em um copo de água por cerca de 8 horas. Despreze a agua do molho e bata as amêndoas com 2 xic de água fresca, coe o leite usando uma peneira, redinha especifica para preparo de leite vegetal ou mesmo um pano de prato limpo. 
Em uma panela, coloque o leite de amêndoas, temperos, suco do limão e o ágar-ágar. Vá mexendo em fogo baixo até ferver. Desligue o fogo, deixe esfriar. Coloque em um recipiente de vidro e leve a geladeira por aproximadamente 2 horas

Obs: O ?bagaço? do leite não será usado nessa receita. Voce pode secá-lo no forno para obter uma farinha de amêndoas, que pode ser utilizada para enriquecer diversas receitas

Bite-Size Blue Matcha Cashew Cakes by @ehvegan 💙

BASE
1/2 cup raw almonds
1/2 cup shredded coconut
1/2 tsp cinnamon
1/4 tsp ground ginger
1/8 tsp nutmeg
1/8 tsp salt
1/4 cup pitted dates

FILLING
1 cup soaked raw cashews
3/4 cup creamed coconut
1/4 cup melted coconut oil
1 tbsp maple syrup
1 tsp blue matcha (optional)

Place all the ingredients for the base in the processor, except the dates. Process until the almonds are in small pieces.
Add the dates to the food processor and process until the mixture sticks together.
Press the base mixture firmly into the bottom of your mold and then freeze while you prepare the filling.
In a high speed blender, place all the ingredients for the filling. Blend until smooth.
Pour 1/2 the mixture into your mold and freeze 1 hour. (If you don't want multiple colours or flavours, you don't need to split the mixture)
Mix the remaining filling with the blue matcha (or other natural colour) and pour onto the first layer.
Freeze for at least 4 hours before serving.

Vegan enchiladas and a cranberry walnut salad🇲🇽🌱🌰. Shared this meal with my dad the other day and it was so good👅. I love taking people to vegan restaurants because it opens a door to new experiences for them. Veganism isn’t tasteless nor does it have to be boring in any way. I personally used to eat steak (years ago😷) SMOTHERED in seasoning (aka plants) and sauce before I even touched it🙅🏽. Plant foods have so much flavor are are so versatile when you know how to use them in dishes. If you’re new to a vegan lifestyle give yourself time to adjust. My friend messaged me a couple weeks ago saying how she went vegan and everything she ate tasted bland and gross and just a few days ago she messaged me again saying how her meals taste so good and are so flavorful! Taste buds actually change and adapt which is pretty cool if you think about it. 🤔

My friend messaged me a couple weeks ago saying how she went vegan and everything she ate tasted bland and gross and just a few days ago she messaged me again saying how her meals taste so good and are so flavorful! Taste buds actually change and adapt which is pretty cool if you think about it. 🤔 Anyways it’s Wednesday so happy hump dayyyyyy 🐪 can’t wait for the weekend 🙌🏼

These were the usual Vanilla Protein Pancakes with fresh figs, banana, toasted coconut and goji berries!👌🏼
Enjoyed these with my dear friend Signe, of course hehe. We always have the nicest routine when exams are coming up. We meet at her place, eat breakfast together, study until our brains are toasted and then go and lift heavy weights at the gym😁

1/2 cup frozen pineapple chunks🍍
1/2 frozen banana🍌 
Handful mung bean sprouts
1 tsp maca 
1/2 tsp turmeric🔸
A crack of black pepper
1 tbs @sunfood sacha inchi protein powder
1/4 cup fresh coconut water

Topped it with luscious homemade fresh cashew yoghurt swirls + toasted sunflower seeds 🌻 + toasted cashews + toasted coconut flakes + sprouted activated buckwheat grouts.

I searched for a restaurant serving traditional Indonesian food on trip advisor. It took me ages to find with a little help from google maps! When I finally arrived I realised this was not the restaurant I was looking for. I gave it a go anyway and it was fantastic! This dish was tofu satay, fried rice and crackers. With a mango smoothie cost me £2.40!!!

I made this cake from @minimalistbaker for my grandmother’s birthday, and wow, it was amazing 💛 Everyone loved it, the cake itself is very chocolaty and delicious, the frosting adds a nice creaminess and sweetness, and the roasted hazelnuts add the perfect crunch.

Firstly, make vanilla chia pudding by adding 1/4 cup white chia seeds, 1 tsp vanilla extract, 1 Tbsp lime juice, 1/4 cup coconut cream and 3/4 cup almond milk to a bowl. Whisk, then allow to set for 10 min. 🍼⠀

Next, make the green layer. To a blender, add the the above chia mix, 1/4 zucchini, 3 heaped tsp natural protein and 10 mint leaves. Blend until smooth, then pour between two jars. 💚⠀

Next, add a layer of vanilla chia pudding to each jar, and set aside while you make the pink layer. 🍶⠀

Ingredientes
🔸1 xic de amêndoas naturais, sem sal
🔸1 limão espremido (fica com um sabor suave de limão, se desejar sem esse sabor diminua a quantidade de limão)
🔸 1 col sopa rasa (5g) ágar-ágar
🔸temperos a gosto (usamos apenas sal rosa)

Modo de preparo
Deixe as amêndoas de molho em um copo de água por cerca de 8 horas. Despreze a agua do molho e bata as amêndoas com 2 xic de água fresca, coe o leite usando uma peneira, redinha especifica para preparo de leite vegetal ou mesmo um pano de prato limpo. 
Em uma panela, coloque o leite de amêndoas, temperos, suco do limão e o ágar-ágar. Vá mexendo em fogo baixo até ferver. Desligue o fogo, deixe esfriar. Coloque em um recipiente de vidro e leve a geladeira por aproximadamente 2 horas

Obs: O ?bagaço? do leite não será usado nessa receita. Voce pode secá-lo no forno para obter uma farinha de amêndoas, que pode ser utilizada para enriquecer diversas receitas

This alternative, vegetarian pate is just delicious! and spreads beautifully over fresh bread, toast or gluten free crackers (okay, it’s pate so maybe not beautiful) 😉

Anyway, it was a jump to the left for hubby, and a step to the right for me ... either way the flavour had us standing with your hands on our hips, bringing our knees in tight. But ultimately it was the pelvic thrust that really drived us insane! 😉😂🤣 STOP !!! ... wait ... what!!!! 😳😳😳

Enough of this nonsense! 😉🤣😂 here’s the quick and easy recipe l used by The Green Kitchen @gkstories

Ingredients:
🍅200g Sundried tomatoes in oil, drained
🍅200g walnuts, soaked in cold water overnight
🍅10 Sage leaves
🍅Sea Salt
🍅Freshly ground Pepper

Method:
Place all ingredients with 2 tbsp water and blitz with a hand blender until smooth. Transfer to an airtight glass jar where it will keep in the fridge for up to a week (if it lasts that long 😉)

Anyone who knows me knows that I am obsessed with cashew nuts and that my favourite mithai is kaju barfi/katli. 
Here’s my vegan healthy (ish) take on Kaju katli. This is a 2 ingredient 5 minute recipe. 
1 big cup of roasted kaju/ cashew nuts with a pinch of salt 
5 pitted medjool dates
1 tablespoon rose water (optional)
Blitz into a paste 
Roll into balls or cut into slices! A word of caution slices tend to get a bit messy & need to be kept in the freezer (balls/laddoos are easy peezy & low maintenance)
Coat wit roasted sesame (optional) 
Keep refrigerated! These quantities make 10 balls! And oh my lord they are freaking delicious! Enjoy!

Having a huge bowl of cinnamon millet porridge topped with cooked cinnamon apples and some hazelnuts! So yummi! Did you ever tried millet instead of porridge with oats? It takes a little bit more time but it's worth the try! 😍⠀

Finally got a chance to eat at @grown_bne, with @thealexred and @jadekristel yesterday, and it certainly did not disappoint. Perhaps my all-time favourite cafe in all of Bris, and happens to be 100% plant-based. Very friendly staff, and delicious meals.

We ordered a bunch of things - turmeric / beetroot / chai lattes, creamy polenta and lentils, their housemade hash-brown, lemon pannacotta and a brioche French toast with pepper icecream.

Definitely worth checking out! 🌱

Such a shameful and disappointing post by @rudehealth. I used to admire their products as they are natural, fresh and vegan 🌱 which means hormone, puss, guilt and cruelty free as well as a healthy clean product.
With this post promoting for dairy 🥛 🐮❌I boycott the page and the products! The vegan community who are your biggest audience have not be considered and looking at the comments I can see a huge number of people leaving your page and boycotting your products too....shame #boycottrudehealth

Eggplant is the best! I made this yummy oven-roasted eggplant by just cooking it on parchment paper at 400F/200C for about 40 minutes. I sliced it in half and made a cross-hatch pattern with a knife before putting it in the oven, and then topped it with the yummiest home-made red pepper cashew cheese.
