Yesterday I tried making breaded portobellos. I only dipped them in a vegan coconut yogurt, salted them and sprinkled a bit of pepper on them. Then I covered them in bread crumbs and fried them. Well, not exactly the healthiest option, true. But I haven't had anything breaded in ages, so I guess I had a free pass 😂 We ate quinoa salad with them.
Took my 'peaceballs' to work 🚗⏰📑💼 I had them with vegan pasta and tomato sauce yesterday 😋 They are super healthy and high in protein 💪 It has a nice texture (The lighting at my office was terrible so the colour looks darker in the last pic 😬) and I will make them as Burger patties next time. For this one, I used the following ingredients:
2 cups of cooked Purple Jasmine Rice
1 cup of Quinoa
1/2 cup of Red Lentil
1/2 cup grated carrots
1 Flax egg
2 tsp Black pepper
1/2 tbsp Mixed Spice
1-2 tbsp low sodium soy sauce
2-3 cups of veggie stock
1/2 tbsp Garlic powder
A small handful of dried oregano or Italian herbs
Cook lentil and Quinoa with veggie stock in a pot until they are soft and Quinoa is fluffy. Leave them to cool down. (While waiting for the lentil and Quinoa to cook, make a flax egg.)
Preheat the oven @ 220c.
Once they are cooked and cooled. Mix with rice and add the rest of ingredients.
Mix well and scoop the mixture to make small balls. Roll each ball with your hands for a smooth surface.
Bake for 20 minutes. Rotate each ball half way of baking for a nice equal brown colour.
Once cooked and smell lovely. Take them out and leave to cool a bit before serving with your delicious pasta.

Lunch today was an abnormally large serving of basmati rice, roasted sweet potato, avocado, lemon + tomato relish. I smashed it all together and it was really yummy! And of course filled me up ☺️

One of the reasons I went to CVS today was for to get a new eyeliner but they were sold out of what I wanted. Instead I purchased these lipsticks and highlighter stick. I am excited to try them. I am still trying to find different makeup products I really like but at a decent price from vegan and cruelty free companies. This is proving kind of difficult for certain items but easier for others. 🤔

Jimmy and I went to LA Vegan so he could try their pancakes/breakfast plate and he really liked it. I got this wonton soup, "seafood" fried rice, and Thai ice tea with soy milk and it was all amazing. 🍲

We got a box full of strawberries from @westendfoodcoop this evening. Some might call it a flat, or 6 pints. I just call it a fuck tonne.
So you can't let these dudes sit around. You have to eat them or do something asap. 👉Tonight we had strawberry shortcake parfaits because I still had vegan graham cracker crumbs left over from yesterday and I wasn't feeling creative.
These strawberries are in our overnight oats right now, and are also destined to find their way into a rhubarb strawberry pie or a few hand pies this week(end)
