Tofu Satay with Spicy Peanut Sauce and Pickled Vegetable Relish by @mymeatlessmeals 💚
* 220 g firm tofu, cut into pieces as shown in video
* 1 tsp curry powder
* 1 tsp cumin
* 1/2 tsp turmeric * 1/2 tsp garlic powder
* 1/4 tsp sea salt
* 1/2 cup coconut milk
After being marinated for the minimum of 10 minutes, insert a bamboo skewer into each piece, and grill tofu in a grilling pan.
Spicy Peanut Sauce:
* 1 tbs Thai red curry paste
* 1/2 cumin * 2 tbs coconut oil * 2/3 coconut milk
* 2 tbs organic sugar
* 1/2 cup crushed roasted peanuts
* 1 tsp tamarind paste
Begin by stir frying curry paste, cumin, and coconut oil on low heat until well combined (and fragrant). Then, add coconut milk, stir well. Season with sugar and salt if needed. After that, add crushed peanuts and tamarind paste.
Aa-Jaad (Pickled Vegetable Relish) * 200 g cucumber
* 70 g red onion * 25 g chilies * 1 cup water
* 1/2 cup organic sugar
* 1/2 cup white vinegar
* 1/2 tsp sea salt
Mix all ingredients in a sauce pan and simmer on medium low heat for 15 minutes. Cut up the vegetables as seen on the video, while the "dressing" is cooling. Transfer the vegetables to a bowl, pour the mixture over- let the vegetables rest and absorb the flavours for about 5-10 minutes before serving.
Cooking tips: begin by marinating tofu pieces, followed by making spicy peanut sauce , but don't add the peanuts, until just before serving. Once that's done, make the vegetable relish, and finish off by grilling tofu. Enjoy!

Happy wednesday, the half of the week is done and i hope you all doing good💓
Wanted to show you my breakfast in my biggest bowl from monday which was so quick done and i didn't expected that it would look that good🤔😻
Underneath all this are actually cooked 10-minutes-oats with chocolate proteinpowder from @nu3_de and i tried new toppings like my beloved goji berries, kakao nibs from @govindanatur 🍫, lots of my favourite fruit mangoe💛 and a chiapudding😋
And this new combo was HEAVEN ON EARTH!😍 #handsupforsimplicity
Today is my restday because i had to do something which actually just was for 10 minutes but i excepted it longer.. but anyway, i still struggle with resting and my exercise addiction would say now that i need to workout but no, i won't. Resting is important too, also for progress in the workouts so i just came home, drank my turmeric with almond milk and maybe will do somethibg outside in this hot sunny weather☀
The course was also a bit tough today and i was also not very happy with everything i've done.. but at least it's done, i tried my best and tomorow will be the first part of the exams..
Well, i hope i'll manage it, i just try to relax now, be thankful for this day and wish you all a good time✨
Who said #veganfood wasn't attractive 😊? I have to say I still struggle with #wholewheatpasta which I had with this meal 😣 it might take me a while to adjust as I'm so used to my non nutritious white #pasta 😹!

Had a super yummy breakfast! 🌿☀️❤️️ It takes no time to prepare which is a huge plus for me since I tend to be a bit lazy in the kitchen 😆😆😆 Vegan yogurt, some berries, pecan and Brazil nuts, mango and fresh ginger-mint tee ☕️ I'm all set for the day ☀️☀️☀️Guten Appetit!!!
What's the most beautiful thing in the world? 203 horses running to pasture, finally free again ... 🐎
I was on a vacation meeting my boyfriends family for the first time. It was at a dude ranch, where I later found out hunting for sport was an activity choice. I also found out on the last day that when the horses are no longer useful to them for riding, or they become lame, or unable to be shoed, they get sent off to slaughter instead of re-homed or sent to a sanctuary to live the rest of their lives in peace. "You don't understand, it's expensive to save lives..." to which I would have easily replied "you can build it into the cost of your guests ranch experience, which is NOT cheap." It's complicated, folks. Old traditions die hard. My first thought was... I'll never come back. My second thought was that my boyfriends family was so kind and generous to include me on this vacation at this ranch, where these horses seemed to live very good lives. My third thought was to ask the difficult questions of the people who actually worked there. So I, and two other animal activists also on the trip did. And I'm glad, because we found out that one of the ranch hands is working diligently to re-home these horses in their old age, and that she is actively fighting the almost 100 year long protocol of sending the horses off to the slaughter house. It's a process changing traditions and so as vegans and animals activists we have to be patient and support the people and places who are making positive changes, albeit imperfectly or too slowly for our comfort level. Boycotting is not always the answer. Otherwise the people we're trying to affect write us off as hysterical and then nothing positive comes in the end. 🐎
My approach to all of this is shifting as I learn to open my eyes and be more understanding of people. A lot changed when 45 became president. I HAD to try and understand the opposition, because change absolutely must follow. So how do we do it? How have you learned to be effective in the face of wrongdoing?
Like most children, Ellie loves the water. She's drawn to the ocean like a magnet & her favorite thing is being outside. But out beyond that blue service is an ocean that needs our help from damage we've been causing. If you love the ocean too you can help by avoiding single use plastics. And another big way you can help is by joining the thousands of people globally that will be taking part this September 16th for International Coastal Cleanup Day. Take part & be the change, link in bio to sign up for free. @healthebay
Except that they are killed 😪 Research what you're putting into your body! 🙌
Side note: I realized that certain people that I've been friends with IN REAL LIFE have unfollowed me and I'm assuming it's cause of all my vegan posts. Bye, I won't miss you. These issues need to be addressed. I think people should focus on fixing themselves and cause less harm to animals instead of unfollowing me cause they don't like what they see. You're part of the problem 😔
