Times are changing and people are waking up! I’m not a pushy vegan, and people I love are still not vegan. However I think it’s important to share by example. I have been vegan 2.5 years and I have never felt better in my entire life. It used to be taboo for somebody to eat only plants and especially uncooked plants. However now days you see more vegan options at restaurants, and you hear more stories about people switching to plant based and it’s pretty wonderful. Spelt Vegan Dark Choc Donuts with Activated Pistachio by @vitalityandmore 🍩🍩 #donutday
Recipe (makes 8)
1 cup organic spelt flour
1/3 cup organic coconut sugar (powdered down)
1 1/2 tsp baking powder organic or aluminum free
1/4 tsp nutmeg organic
1/4 tsp cinnamon organic
1/2 cup organic almond milk or other plant milk
1/2 tsp organic Apple cider vinegar
1/2 tsp vanilla extract organic (alcohol free)
4 tbsp. melted organic coconut oil
1 flax egg
1/4 cup Dark choc vegan melts for chocolate glaze (plus 1 tbsp. coconut oil)
1/8 cup activated pistachios crushed.
Simply mix all dry ingredients in one bowl and heat all wet ingredients on low, do not overheat should only be warm. Then whisk all items together. Scoop into your donut rings, this made a total of 8 donuts.
Bake in pre-heated oven for 15 minutes on 180 degrees. Meanwhile melt some of the vegan chocolate with coconut oil and crush the pistachios in readiness for topping.
