Experimenting with whole foods plant based cold soak hiking meals. Now if that isn't a niche I don't know what is... As as you as you can see I also gave in to my inner organisational freak and organised everything into meals and days. I also haven't quite learnt to buy small quantities... my shoulders are going to suffer over the next few days.
This is six days of food assuming my portions are right.
Breakfasts: Muesli - oats, flax, desiccated coconut (left over from lunches), almonds, raisins, peanuts. (I bought this pre mixed except the coconut).
Lunches: chia, flax and desiccated coconut pudding thing. Yay for protein.
Snacks: pre mixed dried fruit and nuts. Dates, raisins, all kinds of nuts and added extra pumpkin seeds.
Dinners: cous cous with TVP (textured vegetable protein) and soy sauce.
I prepare these by putting them into an empty peanut butter jar (one of the big ones), adding water and letting it soak for a few hours.
Incidentally I don't really miss hot food, even on cold days. I look forward to the heat of my sleeping bag most. I do often fantasize about hot chocolate or vegan chilli or curries etc. but in the same way I fantasize about a hot shower and warm fluffy bed sheets.

Backpacking pancakes. Brought Bobs Red Mill pancake mix, with home dehydrated blueberry, home packaged syrup, and coconut chips. Of course I had to lug in almond milk in my Klean Kanteen and found a new container that kept my Earth Balance butter from spilling everywhere. Yay! 🤗🥞 #myvidaverde#whenthingsgoright
A collection of photos from the last few days. From Mangawhai we walked along the beach to Pakiri, then through the Omaha forest to Matts house, where he treated us to a beer! We were also treated to a visit from Marks Mum and gran and we got ice creams in Matakana. It sure was nice to see a familiar face after so long! She bought us fresh peas so we added it to our spaghetti bolegnase for dinner! Then today through dome valley, we stopped at the cafe and this rooster was checking us out, from there we walked an extra 10kms to Denise's house, she has some super cute goats!
