Back from holidays 😫Drove home from Kalbarri on Thursday and went into work yesterday to organise and set up for the coming year 🌺 Port Gregory (in WA) is a beautiful place if you like to go to the beach. It was very windy there so our beach days were shortened by short visits. I did heaps of beach walking which was so nice and knowing I didn't need to rush (bliss!). I had more time to cook up tasty lunches. We had no internet so I read and it was so relaxing. There are no shops there except a deli. This meant we had to be really organised with the food we were taking, especially catering to my vegan food. I took rice and quinoa though so I always had that to fall back on. You can't buy any fresh fruit or veggies. Our car was packed with a few crates of food 🤣😂🤣🍌 #holidays#veganfood#veganholiday#nointernet#beach#pinklake
I've perfected my vegan cheesecake on the second attempt and it went down a storm in our pop-up cafe. Here's the recipe.
For the base, 200g of walnuts, 150g of dates put in a blender until it goes sticky. Push into the base of a 22cm springform tin, ideally lined.
For the filling, but the following ingredients into a blender
300g of cashew nuts, soaked overnight
A tin of coconut milk
140g of coconut oil
100ml of Agave syrup
1tsp vanilla extract
The juice of 1lemon
* 1.5 tsp of activated agar agar
To activate the agar agar put the powder into a pan with 4tbsp of boiling water, and continue boiling until it's all dissolved.
Blend the ingredients for a few minutes until completely smooth. Pour into the tin, and add the topping of your choice. I like to use red fruit or to make nice patterns by dribbling fruit coulis and passing a skewer through the coulis.
Refrigerate for at least 2 hours.
This recipe is vegan, gluten free and sugar free.

When I knew I was moving to Paris my first and big concern was the idea to live in a big touristic city, which means mainly lots of traffic, cars and people everywhere.. and more .. how to manage the cold seasons. I’ve been living in Africa for 6 years and in south of Mexico for 4 years.. so you know, they aren’t places where you actually have winter or autumn.. I got used to feel cold when it was 25 C degrees! So this transfer worried me for many things. 2 dogs used to have space for running and play, a kid used to spend the noons in the pool, a baby girl very small... and me. I was used to put on a short and a shirt and go for my run in the park or to the gym and sweat like hell for the weights and more for the heat every single WOD!
But here.. Here all is different! The first difference I re-experienced was the change of seasons. I’m Italian so I know how it works but living since long time in places where it’s summer almost all the year, well I got used with the hot.
But this year in France I discovered again the beauty of seasons. I waited so long for taking out my bike again since October when I decided it was too cold and rainy for me. Today I felt blessed riding and riding, it’s still cold but the beautiful sun make it more acceptable ☀️ and that burn in my legs was the best price! I loved it 💖

Right after I had decided to do my 300-hr YTT in Bali with @kulacollective this spring... I was deep in the interwebs trying to find the perfect place to host a yoga retreat on that side of the world post-training... meditating on the idea, asking lots of questions, and praying for guidance in the direction that would serve all involved.
Enter my vegan gal pal 🌱 @greencollean 🌱... who was on a journey of her own in Bali, and posting the most INCREDIBLE photos of her travels. I could feel the good vibes through the screen, and instantly fell in love. So I sent an email to the folks at @baliecostay... “Do you have availability for May 12-19, 2018 to accommodate a group of yogis from the states?” And the response... “No, but We DO May 11-18, 2018. Would that work??” PERFECT. My heart beat faster as I read all they will offer our group, and the possibility sunk in that this place really WAS as amazing as Colleen’s photos (and the equally great @tripadvisor reviews)?!
And now here we are, just a little over a month later, and we’ve just got ONE bungalow (that can hold up to 3) left (plus one space for a solo traveler!) Thank you divine universe... and thank you Colleen!!!

🌲Hall Family Christmas 2017🌲! Not only was it so yummy but extremely healthy and even though we are STUFFED no-one is feeling completely bogged down by their tummy. I took all the classics and made them super healthy, fully plant based, and extremely flavorful with lots of herbs and spices😍😍😍 plus Joel smoked a duck and Cornish hens for him and the kids. This is for sure our pretties Christmas dinner to date!
