This is a quick & easy peanut stir fry with store bought vegan "chicken" strips. The recipe is extremly easy - perfect for a weeknight ☺ Instead of "chicken" strips I also like to use tofu which I fry in a non stick pan with 1-2 tbsp. sesame oil for a few minutes 🍃 Hope you love it as much as I do! 💛😚
Super easy Peanut Stir Fry
•pasta, enough for two (250-300g)
•2 tbsp. vegetable oil (preferable sesame oil)
•vegetables for two, chopped ( I like to use: 1 zucchini, 2 red bell peppers, 1 onion, 2 handful broccoli florets)
•1 tbsp. curry paste
•1 tbsp. + 2 tbsp. soy sauce
•1 can coconut milk (400ml)
•1/3 can water
•Juice of ½ lemon
•2-3 tbsp. peanut butter
•Ca. 200g fried vegan „chicken“ strips (store bought) or basically any plant-based meat replacement you like for example fried tofu, tempeh etc.
•Optional: 1 tbsp. sesame seeds
•Bring a pot with water to a boil and cook pasta according to package instructions
•Meanwhile heat 2 tbsp. oil in a non-stick pan over medium heat
•Add vegetables and cook for about 3-4 minutes
•Add 1 tbsp. soy sauce and curry paste, cook for 2 minutes
•In a bowl, mix together coconut milk, water, lemon juice and peanut butter and add sauce to the vegetables. Stir well
•Cook for another 4-5 minutes on medium-low heat until sauce is hot
•Add in cooked and drained pasta and fried chicken strips or tofu
•Serve with sesame seeds

All the colours!! I could eat this deconstructed vegan sushi bowl again and again 💗 So fresh and healthy with plenty of good fats and quality 🌿 protein. Every day Joey and I have a good laugh at how "boring" our food is since making the switch to plant based 😂 😂 😂 I can honestly say that I've never felt better and the food is truly incredible! Sweet & sour tofu made by Skye. Tofu is a great choice, it’s rich in protein (all essential amino acids), calcium, zinc, magnesium, copper, iron and some vitamins. Unlike chicken it’s not full of cholesterol and you don’t need to sterilise your kitchen after touching it (you can eat it straight from the packet). The best thing is, tofu doesn’t scream. Chickens are very social and intelligent animals, they don’t deserve to be treated so horrifically. In the meat industry they’re crammed into sheds too small to move, they’re de-beaked which is incredibly painful, the males are minced alive after hatching, the females are thrown into crates and taken to the slaughterhouse at just 6 weeks old where they’re strung up by their feet and dipped headfirst into an electrical bath before having their throats slit to bleed out (I’ve worked in a chicken slaughterhouse and seen it). Great Sunday All! I’m doing a weekend special to show everyone what our family eats as vegans.😋 Delicious food, easy to make, and meals take less than 30 mins to make. I’m starting with breakfast meals first. These are our breakfast options:
A) Smoothies with veggies, fruits, nuts and superfoods. Use rice milk.
B) Smothie bowl with berries and nuts. Use rice milk.
C) An all natural juice with fruits and veggies of your choice. Add turmeric and ginger.
D) Waffles with tofu and avocado. Can add tempeh as well. Waffle recipe is on my @theveganarks page.
E) Oatmeal pancakes with fruits. Use rice milk.
F) Pancakes with fruits. Add chia seeds and maca powder to pancakes or waffles.
G) Oatmeal with nuts, seeds, and fruits. Add superfoods like goji berries, maca and cacao. Use rice milk.
H) Organic spelt bread with almond butter, organic jelly, flax seeds, bananas and strawberries
I) Mushroom sandwich with vegan cheese, romaine, tomatoes, onions, pickles, hummus and any other veggies of your preference. *

Tried a @lindamccartneyfoods quarter pounder burger last night with some avocado, corn and mango salsa with roquette on sourdough buns with sweet potato chips on the side 🤤
We were actually really impressed with the burger patties! They tasted how we remember hamburgers tasting, although it's been about 8 years since either of has eaten the real thing so we may not be the best judges 😂 Tasty all the same though. Have you ever tried this burger? What did you think?
