I always seem to get the chewing motion happening when I drink my smoothies so eating it out of a bowl with a spoon 🥄 is perfect for me 😝...
👩🏻🍳1/3 Cup frozen blueberries
1 frozen Banana 🍌 chopped
1 Tbs Natural peanut butter
1/2 Cup Soy milk
And then un-measured amounts for the topping of Shredded coconut, black & white Chia seeds, goji berries, walnut pieces, cacao nibs and blueberries. Enjoy!

Another simple lunch! Wraps-one with leftover bbq "ribs" with cabbage and one with "egg" salad, and leftover brussel sprouts. Of course, I have to have watermelon...cause before we know it summer will be over and the watermelon will be gone😢
💕Quinoa Berry Bake💕
Makes 2 servings:
1 cup cooked quinoa
2 cups mixed (frozen or fresh) berries
1 cup plant milk
2 tbsp chia seeds
1 tbsp ground flax seeds
1 tbsp maple syrup
1 tsp vanilla extract
1 tsp cinnamon
Preheat oven to 400 F (200 C)
Mix plant milk with chia and flax seeds, vanilla extract and cinnamon and let sit to thicken. Then layer your baking dish with 1 cup berries, quinoa, milk mix and another layer of berries and bake for 20-25 mins.
Let cool slightly and enjoy 💕
I topped mine with some granola and a drizzle of cashew yogurt!
I just baked some really Yummy Vegan cookies 🍪🌱... Thought I better share the recipe 😋! "Cranberry, Apricot and Rolled Oat Cookies" (from the recipe book 🌱Taste for Life🌱)
1 Cup wholemeal SR flour
1 Cup rolled oats
1 Tbs brown sugar
1/2 Cup dedicated coconut
1/2 Cup finely chopped dried cranberries
1/2 Cup finely chopped dried apricots
1/2 Cup dairy-free margerine
1/2 Cup golden syrup
1 tsp pure vanilla extract...
👩🏻🍳 preheat oven 170degrees Celsius. Mix together flour, Oats, sugar, coconut and dried fruits. Melt margerine in a bowl, stir in golden syrup and vanilla until well combined. Pour over flour mixture and stir until combined. Roll teaspoons of mixture into balls and place on baking tray, flatten slightly with a fork. Bake for 10 minutes or until lightly golden. Take care not to overlook the biscuits or they will be crunchy rather than chewy! *These will keep well for up to a week. (If they last that long 😝) 🙋🏻 I added some chopped up dark (dairy free) chocolate into mine. I also used Maple syrup instead of golden syrup. Enjoy! 😘
Tofu Scramble from @naturesbrew this morning! OMG this is so yummy, and I thought I would miss my breakfast omelettes!! Tofu scrambles are life!!! Breakfast was so perfect as I got to share it with two of my dearest sisters, it was so good that I forgot to take a picture of my food so yes this is ripped off from Yelp and I actually got my order with tomatoes instead of bell peppers but you don't need to know that.

Hostess hours are truly horrendous for maintaining normal mealtimes.

Meatless Mondays (meatless everyday 💁) no chicken here ;) this is tofurky chick'n and it is the best meat alternative I have tried! I know some people think it's strange to replace meat with something that is meat-like, but I didn't give up eating animals because I didn't like the taste or texture, I just realised eating dead decomposing flesh is super weird, cruel and unsustainable. So I like trying fake meats and also they are usually packed with nutrients that my diet needs because they are products made for a vegan diet, to replace what is missing. I really recommend this if you can find a local store to get your hands on the stuff.
