Today has been a really busy day and all I've had is this alpro go on protein yogurt with 4 tablespoons of flaxseeds it is very very filling and very high in protein- I definitely recommend it! Carbs: 10g fat: 26.4g protein: 30.2g
This might not look great but tasted crazy amazing! It's difficult to find low carb high protein high fat meals as a vegan so I end up creating a mismatch of things! 😂😂 onions, garlic, broccoli, mushroom, coconut cream and soy sausages. Carb: 10g fat: 79.7g protein:42g 💃🏻

Serious comfort food kinda night! It might not be particularly beautiful but I made pasta with cauliflower based lemon and dill sauce. It’s got roasted garlic, a dehydrated potato flake crust, and it is oh-so-tasty! Happy Wednesday!
I know it’s taco Tuesday but @wolsquid and I have a burger date planned! Working on some toppings including a quick dill pickle, salted peppers and jalapeños, black pepper caramelized onions and roasted garlic, and a vegan mayo burger spread.
Creamy mushroom and broccoli pasta.
This is one of my favorite dishes from my pre-vegan days and this was my first time “veganising” it.
It’s a seriously easy, cheap, delicious and comforting.
I used @alpro single cream which I spotted in the supervalue up the road from me for only €1.05 each and I used two of them.
I decided to sort of hack into the head of broccoli and use the different size pieces to add a little variety of texture to the dish 🥦 .
Put pasta on to boil
Sauté one white onion and two cloves of garlic until soft
Add broccoli and sauté for a few more minutes
Add mushrooms and sauté again for a few minutes
I added a good grinding of black pepper, dried basil and oregano
Next I added two vegetable stock cubes followed by the two cartons of cream.
Let it come to the boil and then turn it down to a simmer
Check seasoning and adjust accordingly, possibly adding another stock cube if necessary
Add in strained pasta and two tablespoons of nutritional yeast
Combine and serve .
Getting to breakfast a little late today (or lunch a little early!) Smokey berbere spiced lentils and kale on toast with a side of oat milk chia seed pudding. I am really crazy about the berbere spice blend I got at Yagerbet Market in Oakland. (Check out my story for a photo that includes address details)
For the past two days I've not been good at preparing my food for various reasons and had this veggie burger and curly fries last night.. although it's good on occasion to have such options I really noticed the effect of eating outside 2 days in a row. I've had issues with food and still having them it's a constant struggle but I'm glad to say I'm back on track today and had a lovely breakfast with flaxseed tortillas (recipe coming soon) and avocado. I'm really happy that I'm actually not craving any of these foods or enjoy them anymore (yet! Haha) hopefully this continues 🙏🏻✌️
