Prior to us making the decision to go vegan as a family, we used make a chicken broccoli and cheese dish over rice, so, with a little adaptation and effort Lee made the same dish but veganized it! Ok so I got in a baking kind of mood today! Dan @debybee2150 is taste testing today’s creation! Lol 😂 So I’m always on the lookout to take regular recipes and make them vegan while hoping to keep the flavor! A friend sent me this recipe a week or so ago. (If I ate it Lord knows I’d gain 5lbs by morning🤣) So here’s his taste test comments.....”it tastes exactly like Pumpkin pie” “it’s not super dense, very light”. I asked him 1-10, 1 being not good and 10 being excellent, he gave it a 10. I know it’s not the healthiest, but that’s ok! Oh and I topped it with So Delicious Cool whip! He LOVED it! 10/23/17 Sunday dinner. I forgot to post this last night. Had a super fun and amazing weekend with @natalie_au1 at UC Berkeley. Got to pamper my girl a little, go to her sorority gala, meet her friends, and see other friends all in a short amount of time. So needed that! My awesome husband insist I go and ditch all weekend activities with them. He knew my heart was aching to see my girl. That’s the hardest part about parenting kids. You have a piece for every one of your kid. They are equal parts but sometimes one feels heavier then the other. The hubs also said that she and I need to see each other at least once a month and I am planning on that. Two months was way too long! Happy to say she registered for second semester today and has Fridays free. This means I can fly up for the weekend if she’s busy or she can fly down too after Thursday class! So needless to say I didn’t go any cooking yesterday except for this silly meal. It’s #vegan hot dogs in crescent rolls and organic chili. All vegan and pre-made. The hubs was like your not going to post that are you? 😂😂 I was like I am! I want to show that #veganism is not always perfect and healthy. But it is compassionate and cruelty free. Also it helps with a lot of people I know who are transitioning. Such a weird meal since we never even really ate hot dogs when we ate meat. I only took a bite where as the hubs and on devoured it. 😆May do this again for the son’s friends!

Visste ni att det är bland det mest D-vitaminrika man kan äta? ☺️ Halten är högre än i animalier som exempelvis mjölk, ägg och fisk. Samtidigt är kantareller den enda vegetabilien som är "naturligt" rik på detta vitamin. Växtbaserade mejeriprodukter, som soygurt och havredryck, är dock ofta D-vitaminberikade, precis som komjölksbaserade mejeriprodukter.
Se till att få i dig tillräckligt med D-vitamin, som vi på sommaren får via solen, i höstmörkret ☀️

Lunch today at work! I got the spud ole and veganized my meal from McAlister’s with veggie chili (I asked, it’s vegan), nixed the butter and cheese, and added onions 🤤 but really, thanks to the staff for accommodating my needs 😬

This Brazilian veganized dish is one of my favorite things ever! I don't have exact quantities but you can basically use the vegetables and beans you have at home 😁
Method: soak your beans overnight, changing the water twice. It will still be hard, but edible, easier to cook and free from toxins. Put them in a big pan and cover with water, that should be 2 or 3 fingers higher than the the beans. I didn't have the traditional Brazilian seasonings, so I've used pepper, garlic, salt, chilli and Dill on mine. Let it cook for 30-45 minutes. Cut vegetables - I've used carrots, celery, leek, bell peppers and broccoli - and add them to beans. Cover and allow to cook for 30 minutes more. It should thicken and the vegetables and beans should be well cooked. Serve in a bowl or with rice for a traditional version. Enjoy the Brazilian-like warmth 🇧🇷

Eu amo essa versão veganizada da feijoada, um dos meus pratos preferidos! Não tenho as quantidades exatas mas você pode basicamente variar com qualquer feijão e legumes que tiver em casa
Método: deixe o feijão de molho durante a noite trocando a água duas vezes. Vai ficar duro ainda, mas mais fácil de cozinhar (não tenho panela de pressão aqui) e sem toxinas. Cozinhe por 30-45 minutos com água o suficiente pra cobrir o feijão e ficar acima por uns 2-3 dedos e tempere com alho, Pimenta, sal, chili e manjericão (não tinha louro aqui). Corte os legumes - eu usei cenoura, alho-poró, aipo, brócolis e pimentão - e coloque no feijão. Cozinhe por mais 30 minutos. A água deve engrossar e os legumes e feijão devem ficar macios. Aí é só aproveitar o gostinho de casa, do calor brasileiro 🇧🇷

This one was so easy to make, for the butter cake I used
cashew butter (can be replaced with vegan butter),
@freeefoods (gf) self-rising flour,
soy milk and
vanilla protein powder.
The filling consisted of cashew butter, soy milk, protein powder and millet flour, which I cooked on the stove, and the final product tasted like my grandma's pastry cream. 😋
