"Chicken" quesadilla at #TheGreyhoundCafe . Way more food than I expected. Got through half of it before I admitted defeat and got a to go box. Also my first time having #guacamole and it's not bad. Seriously if your in SE PA you should check this place out regardless if your vegan or not. It's so good and you can't even tell it's 100% plant based. I'm slowly working through the menu. Found a super cute hole in the wall vegan Korean restaurant while in Chicago! Got some tasty miso soup, kimchi pancakes, and red bean mochi! Loved the mochi and the soup, but the pancakes as cool as they were I didn't think had enough kimchi taste. It was more doughy and had some shredded veggies. However I noticed the restaurant is focused more on low or no oil items which is pretty awesome because it does add up in some of the Korean food recipes. I was so glad to try it out and happy that Chicago has places like this!

"Raspberry Fool" takes on new meaning when you make it with whipped coconut milk - it will fool you into thinking it's regular whipped cream! I mean, mom approved even 👌 So light and fresh tasting.
I gently mashed a half pint of raspberries with some sugar, and whipped half a can of chilled coconut milk. It does take a little longer than dairy, so you will want to use an electric mixer, but you can't over beat it. Fold more than half of the raspberries into the cream, put into snazzy bowls, and finish with remaining raspberries. Serve immediately... as if you could wait!
For the coconut haters, the flavor is so mild I think you may be surprised - it's nothing like the cloying sweetness of candybars and other baked goods.
Confession...I have always loved cheap Americanized Chinese take-out. Fried meat covered in sweet sticky glaze was my favorite thing to eat. I'm so happy there are products like @gardein sweet and sour pork bites so I can still enjoy these flavors in an ethical way! You can veganize almost anything, it doesn't even take much effort or creativity with all the options available. (Ps these pork bites make great tacos if you fry them and don't use the sweet and sour sauce!)
