hi there! My name is Josephine and welcome to my vegan/plant based journey! I am 21 and a student at the University of Florida. I have bounced between vegetarian, vegan, and meat eating since I was 9. I am largely vegan now due to health reasons and social reasons. I began my vegan journey on 9/25/2017, cold turkey. My goal for this Instagram is to make a community of like minded friends, share fun vegan/plant based content, and keep track of the changes my body goes through, throughout this journey. I was drawn to veganism after several failed attempts at it in the past two years- however, after being placed on an ssri coupled with poor college eating habits, I gained 60 pounds. I was no longer conscious of the products I was putting into my body, I felt sluggish, even more depressed, and no longer having a loving relationship with my body. I do not view veganism as a diet, but rather a way for me to connect emotionally and physically with food, the environment, animals, and lastly, myself. I aim to focus on healthier living for myself, the animals, and the planet. I would love to make friends with college vegans, lgbtq+ vegans, and body positive vegans! more content is soon to come!

Sauteed Onions, garlic, bell pepper, mushroom, cherry toms & chickpeas. Seasoned with onion & garlic powder, salt, oregano, basil & liquid smoke. I forgot it was still on the stove so it got a little burnt and dry so I added veggie broth 🤣 I still hate chickpeas but I had half the can leftover from last night's crab cakes and I didn't want to be wasteful.
Yellow rice with peas and potatos. I wish it was sweet potatos but we only had one left and I gave it to Micah.
