Tried the @impossible_foods burger today at @kumastoo. The patty itself had a realistic burger texture, but was incredibly dry (cooked like a well done patty) and lacked flavor. I feel that the @beyondmeat burger is superior, has great flavor and way less dry (more of a medium rare texture). The Beyond Burger still has my vote for the best vegan patty (and gluten allergy friendly), but it’s great to see more options for vegans in Chicago!

Sandwich of green apple slices, sundried tomato, parsley-garlic vegan mayo, vegan havarti-jalapeño cheese on toasted Dave's organic "Power Seed" bread. Yummy lunch enjoyed all the more because it was after jogging! Thrilled with my 1.8 miles because it's been a long hiatus.

My husband and I just moved into a new place and haven't been able to make a home cooked meal in a week. Magical afternoon sharing with other women meal planing and preparing for the week ahed. It brings so much satisfaction to know I’m able to help others by saving some money and take the stress out of meals during the week. I used to spent hours in the kitchen (lesson learned) to meal prep, now I try to be as efficient as possible so my entire Sunday isn’t spend in the kitchen; it is all about preparation.
