Fridge 27/52 - CHOP, CHOP. I'm busy at work on the 2nd edition of my food prep ebook 🙌🙌🙌 That means lots of recipe development which also means lots of cooking! So, not surprisingly, this week's fridge is all about prepping for cooking. I like to do all my chopping and dicing at once, typically when I get home from the store! If you're not into batch cooking then you should seriously consider batch chopping--it makes your cooking go SO MUCH FASTER!! ✊️✊️✊️ I'm so excited to share everything I've been working on for the 2nd edition--I'm hoping to have it ready by the end of the year! FRIYAY and porridge on fleek 👌🏼 the best way to start an important day 😊
100g different cereal flakes (I used millet flakes, buckwheat flakes, rice flakes)
2 tbsp flax seeds
1 tbsp chopped hazelnuts
2 tbsp smooth peanutbutter
300ml plant milk
Pinch of salt
Pinch of cinnamon
Blend bananas, peanutbutter and plant milk. Add remaining ingredients and bring to a boil. Let it simmer for 5 minutes on minimum heat and serve immediately.
I was an extremely put out vegan this evening...I overheard a dude in my drama class talking to another dude in my drama class and he legit said the most disturbing thing - brace yourselves - "I bought an entire litre of milk today and drank it all" - I DO NOT THINK THE BOY WAS NOT TALKING ABOUT OAT MILK GUYS! My head when I heard this shot up like 😲 WTF DID I JUST HEAR?! The poor fella 😧 it makes me so sad and stressed to think that people are so severely uneducated on what cow's milk is, where it comes from and the effect it has on the body. This guy took in today a whole litre of cow's milk which is just full of saturated fat, cholesterol, pus, IGF-1 and bovine growth hormones designed to turn a 65 lb calf into a 700 lb cow as quickly as possible...he is literally unintentionally turning himself into a cow 😖 how on Earth did our world get like this? And worst of all, he has no clue on the pain and suffering a tormented mother was forced to go through in order to produce that litre of milk. It's just so messed up on every level 😩 anyway, that's why it's important to be vocal about veganism at every chance we get - we need to speak up to keep both people and animals from harm - freedom for the 🐄
Besides that, this nutrition haul on a plate hit more than just the spot let me TELL ya my friend 👌veggies stir fried in loads of fresh flavours like ginger and lemon, herby bean salad and buckwheat 🤤 it was so nice and light and fresh on a super duper hot day 👍

Makes two cups. Serving size is 1/4 cup: -1/2 cup hulled pumpkin seeds
-1/2 cup walnuts
-1/2 cup dried apricots
-1/4 cup dried cherries
-1/4 cup sunflower seeds

-1/4 cup green lentils (baked)
-1/4 cup red lentils (baked)
-1/2 cup banana chips
-1/4 cup shredded coconut
-1/2 cup almonds
When you’re working out, you’re tearing and stretching your muscles and pushing your body. Post-workout you want to choose a snack mix that will replace your energy and replenish your muscles.This snack was mixed with protein-rich ingredients. Lentils are chock-full of protein and iron, while the dried fruit provides energy, and fiber-rich almonds slow your sugar absorption so your blood sugar doesn’t spike. The coconut serves as a healthy fat, which is essential to keeping joints lubricated. Banana chips provide a powerhous of potassium.

LOVE this pasta! There are so many high protein plant based pastas on the market and they are amazing. Pair this with some tomato sauce and some veggies in the side, and you've got yourself a simple, complete and healthy meal. Over 20g of protein per serving! This is only one of many, many options.
Celebrated my first ever Veggiving in true boring vegan style 😋 this was insanely delicious! (I also snuck in some evidence of Craig eating a vegan meal 😄😋）I ate way too much (as one is supposed to do on Thanksgiving I’ve been told) but it was so worth it! In Shanghai American holidays are enthusiastically celebrated, by Americans and non-Americans alike, so Thanksgiving was quite a big event yesterday!
Being from South Africa, where Thanksgiving is not celebrated, it was just an excuse to indulge in a huge plate of vegetables, followed by a creamy coconut pumpkin pie and apple crumble with a vegan caramel sauce 😍😜 thank you @happybuddhashanghai for a warm, homely night and gorgeous food 😊
