Day 16 of 30. SOS free!! I failed a little today. By being lazy and bringing my store bought dressing to work with me. It's all oil, salt and sugar. But in good news! I feel like this challenge has taught me not to eat when I'm bored, and to only eat when you're actually hungry. And stop when you're actually full. I was able to eat soo much, but it's because I was eating a bunch of shit. And that shit was delicious. Fried foods, potato chips, pasta smothered in earth balance and nooch.. ahh. It's so delicious!! But soo bad for you. And high caloric intake with no nutritional value.. ugh. Anyways. Cheers to anyone who misses junk food. ๐Ÿป

Full day of eating today! Breakfast was chocolate oat pancakes (same recipe as before, but with some unsweetened cocoa added), lunch was broccoli "cheddar" rice, and dinner was red pepper mac n' cheese with spinach and mixed veggies! Totally delicious and completely vegan! ๐ŸŒฑ๐ŸŒฑ๐ŸŒฑโค๐Ÿ’ช๐Ÿ’ช

The next 3 days are going to be all prepped meals bc I'm scheduled for long work days ..I'm currently making my pancakes for tomorrow morning so all I have to do is heat them in the microwave real quick to eat. I also have enough prepped meals of tofu, rice and veg..potato curry chili, rice and veg...AND red pepper mac n' cheese and veg to last me for 3 lunches and 3 dinners! Phew! Tonight I made sweet potato black bean and corn enchiladas and it was #mouthwatering ๐Ÿ’ฆ In a large pan heat 2 tbsp of olive oil, and add 2 cups of diced sweet potato. Cook on medium-high heat for 8 min or until cooked through (be sure to stir often to keep from burning), then add 1 more tbsp of olive oil and 1 diced bell pepper and cook for 3-4 min. Next, add 1 can of black beans and 1 cup of frozen corn and let cook for another 4 min with lid on.  After this sweet potato mixture is cooked transfer to a bowl and add 1 cup of your favorite medium or mild salsa, 1/2 cup chopped cilantro and 1 tbsp of lime juice. Mix all together with the sweet potato mixture and set aside. Next preheat oven to 350 and get a 9x13 baking dish and pour enchilada sauce into dish until bottom is completely coated. Next get your tortillas, place one in the baking dish, fill it with sweet potato mixture, roll it (with seam facing down) and continue to do that with as many tortillas as you can fit. Bake for 15-20 min. Easy Lentil Meatballs 
Serves: 12-13

INGREDIENTS:

MEATBALLS:
3 Tbsp (45 ml) + 1 tsp olive oil, divided
1 shallot, minced
3 cloves garlic, minced (1 1/2 Tbsp or 9 g)
1 flax egg (1 Tbsp (7g) flaxseed meal + 2 1/2 Tbsp (37 ml) water)
1 1/2 cups (297 g) cooked + cooled green lentils (cooked in vegetable stock)
1 1/2 Tbsp (5 g) dried Italian seasonings (dried basil + oregano)
1/4 cup (15 g) fresh Italian parsley
1 Tbsp (16 g) tomato paste
5-6 Tbsp (25-30 g) vegan parmesan cheese, plus more for coating
Sea salt and black pepper to taste (~1/4 tsp each)
optional: 1 Tbsp coconut flour, gluten-free oat flour, or panko bread crumbs*

FOR SERVING optional:
Carrot noodles or gluten-free pasta
Marinara sauce

While I'm no major vegan guru, with all the health issues I've had as of late (bloating, gastritis flare ups and endometriosis, fatigue) I've taken on a serious pledge to eat healthy, not just for weight loss but for my overall being. It's amazing how much foods you can incorporate into meal without the addition of meat and it tastes great! I feel full and satisfied without the nausea and bloated feeling I get after eating. I'm also appreciative of the support of my mother who is a Vegetarian herself for helping me with different meal options.

Anyone who knows me knows I'm a foodie addict, but I also want to ensure that the pleasure of eating does not outweigh the feeling of good health. Honestly this place is unreal and I'm so thankful it's in the KW, right by the terminal, so it's so easy to bus to โ˜บ๏ธ I strayed from my norm (The Club) and ventured out to try the A.L.T sandwich today. This sandwich is an organic panini with tempeh, avocado, organic romaine lettuce, and daiya cheese. Even though it was a warm-ish day today, I still went with the soup (mainly because the description/name was too cute to refuse). Both were AMAZING as always! ๐Ÿ“ Mr. Pokรฉ in Walnut, CA. I loved this so much! I was just going for a rice bowl and veggies (been wanting to try this place out)  but once I saw tofu on the menu I got extra excited! Every bite was so flavorful. Tofu could be boring & tasteless if you don't know how to dress it up, this was perfect ๐Ÿคค ๐Ÿ‘Œ๐Ÿฝ Will be back! Today we had refried beans, salsa, avocado, and veggies with chickun, and we were sadly lacking in cilantro. Cilantro haters, jog on. It's a plant I always wish I grew and never did. Maybe it's not too late to sow those seeds, but I have a feeling it would be August before I could reap any of that bounty. And then I would just eat cilantro salads every day.

Don't waste those broccoli stems! You can peel and cut them to roast along with the florets.

Gluten Free, Vegan Lemon Pound Cake muffins

Ingredients
1/4 cup unsweetened vanilla almond milk
1/2 cup coconut oil
1/4 cup fresh lemon juice
1/3 cup mashed banana
1 1/2 cups gluten free all purpose flour (I used bobs redmill 1:1 baking flour)
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup granulated sugar
1/4 cup grated lemon zest about 4 lemons, zested
Glaze
1 cup powdered sugar
2 tablespoons fresh lemon juice
Instructions
Vegan Lemon Pound Cake Cupcakes
Preheat oven to 425 degrees F and line a standard muffin tin with liners (you'll only use 9 out of the 12).
In a large bowl, whisk together almond milk, oil, lemon juice, and banana.
In another bowl, whisk together flour, baking soda, salt, sugar, and lemon zest.
Combine the wet and dry ingredients and stir until JUST combined.
Using a 1/4 cup measuring cup, fill the prepared muffin tin.
Bake for 5 minutes in preheated oven, then lower the heat to 350 degrees F (keeping the cupcakes in the oven) and bake for an additional 10-12 minutes, or until the cupcakes are baked through.
Remove from oven and cool.

Glaze
In a medium sized bowl, whisk together powdered sugar and lemon juice.
Dunk the cupcakes into the glaze and serve!
