2 tablespoons extra-virgin olive oil
1 yellow onion, finely diced
2 crushed garlic cloves
2 bay leaves
1 large kabocha squash, un-peeled, halved, and cut into 3⁄4-inch cubes (you can also use peeled and cubed butternut squash)
8 cups low-sodium vegetable broth
3/4 cup uncooked quinoa
1 tablespoon soy sauce (or try Bragg’s Liquid Aminos)

That’s it! This is one daily habit that could actually change your health!
Until then, try this method for easy, yummy OIL-FREE salad dressing: ~2 cans beans plus the liquid(Great Northern beans work great.)
~1/3 cup soft-ish seeds or nuts (like roasted salt-free sunflower seeds or water-soaked raw cashews)
~2 cloves of garlic
~1 teaspoon onion powder
1. Combine all ingredients in a blender or food processor until smooth.
2. Store bean mixture in an airtight container in the fridge and use throughout the week.
3. When you’re ready to top off your salad, kick your bland veggies up a knotch, or wanna spice up your grains, simply pour a portion into a jar and shake it up with your favorite flavors using citrus juice and zest, flavored vinegar, fresh herbs, dry spices, and even salsa!

I (Michelle) am so bad at taking pictures of my food and never posting it!! 🙈 So, here is the last handful of meals I never got around to posting. 1-Buffalo cauliflower and chickpea tacos. 2- @daiyafoods Alfredo mac with sautéed @the_tofurky_company kielbasa sausage and kale. 3-Black bean and potato soyriso burritos with vegan sour cream, guacamole, and hot sauce, with @traderjoes Chile and onion flour tortillas. 4-Salad of romaine lettuce, cabbage and carrot mix, sunflower seeds and ginger dressing. 5-potato pancakes I made by finely grating potato and mixing it with one Vegan egg and seasoning, and frying them in a pan. Another freezing cold day but at least it’s perfect soup weather 😏 I had this kale and lentil Dahl soup at @chapelartscafebath today for lunch with some sourdough on the side and it was absolutely delicious and just what I needed! Honestly just love soup and how cost it makes you feel (I know I’m a loser ok? 😂)- my all time fav has to be the classic butternut squash soup I reckon.. what’s everyone else’s favourite flavour?! Hope you’re all managing to keep warm today ❄️
Packed lunch for today: fruit n salad (greens, white kidney beans, chickpeas, corn, peas, edamame, roasted sweet potato, pumpkin seeds, and orange-flavored cranberries, topped with a homemade spicy peanut dressing)
Plant based creole style gumbo with turmeric-coconut rice. I've been tasting this for months, and the flavors are balanced so perfectly. A ground seaweed concoction I whipped up gives off that fishy taste that's reminiscent of seafood gumbo. And of course there's file powder and lots of other spices going on. I'm so pleased with this dish. Yum, yum.
