Who said that plant based meals have to be boring? Besides looking delicious, this plate is PACKED with nutrients, vitamins, minerals, protein and fiber! The beans, quinoa and sweet potatoes are very filling. The nuts, cucumbers, peppers and olives add a great texture and are outrageously delicious. Top this dish with a homemade creamy dressing, and can I say yum!! -
With so many ailments in our bodies that is caused by the food we eat, it’s important to intake fruits and vegetables!Most people find it hard to cut meat out cold turkey, so my recommendation would be to add meatless meals to your diet at least 3 times a week. I understand the struggle is real but I promise you it’s not as bad as you think.

My first post and my first vegan dhal! I’m so excited to begin sharing my meals and exercises and becoming a healthier, happier person both mentally and physically💪🏼. I’ve made this profile mostly to keep myself on track, but to also find a positive environment and like-minded people I can connect with! 🌞🌱🌸🌏
The recipe & method are very simple and is as follows 👇🏼
Ingredients: - 2 cups red lentils
- 6 cups of water
- Half of a red capsicum & half of a yellow capsicum, chopped
- 1 red onion chopped
- 1/2 tsp ginger, minced, fresh or store bought
- 3 garlic cloves, minced, fresh or store bought
- Juice of 1/2 a lemon
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 pinch cayenne pepper - 1 tsp curry powder
- Place all ingredients into a large pot and bring to the boil
- Once boiling cover and reduce to a low simmer
- Simmer for 25-30 minutes or until desired thickness
- Serve with your favourite rice, quinoa or both and a sprinkle of coriander and enjoy!
