I caved and bought the Vegan Egg by @followyourheart and I am so impressed. We made “omelet” with a bunch of veggies and cheeze, served with veggie sausage. Vegans can eat good too, if not better. I decided to go vegan when I finally made the connection between what was being served on my plate and what was going on in factories. To me, it’s not only unethical, but it actually grosses me out to think about drinking milk or eating animal carcass... Knowing that every time I eat something off my fork/spoon, I am not adding to the destruction of the climate or the pain of animals is what keeps me going. Yesterday it POURED here in Chicago. Non stop 🌧 all day. I woke up to thunder and lightning, so I knew I was not going to run right away. Instead, I took advantage of the long morning and made one of my favorite breakfast: vegan omelettes 😋
OK, so they do you also look like pancakes but they're cheesy… Would you call these pancakes or omelettes? 🤷🏻♀️🥞🍳
Regardless, these are naturally #soyfree and #glutenfree and one serving has between 12-18g of protein depending on the vegetables you use for filling. It was great morning fuel for my late morning run, dodging the ⛈⛈

Good morning! I made a yummy @followyourheart VeganEgg omelette for breakfast, filled with mushrooms, peppers, tomato, and @daiyafoods vegan cheddar cheese, and some whole grain toast with @earthbalance vegan butter. I used to love omelettes pre-vegan, and this tastes just like I remember, but better, because no animals needed to suffer for my food choices. ✌🏻
i wanted to try this vegan omelette, as i saw them quite often here on instagram🌮
but i wasn't really sure, if it turns out that tasty!
But it was a success!! really tasty and flavorful😍
Stuffed them with sautéed bell pepper, spinach, zucchini, onions and sun dried tomatoes with a drizzle of tahini🍯
Now i'm on my way to zug🚊with a beautiful sunshiny weather🌤

Repas unique de la journée (une fois de plus 😩), mais me suis fait péter le bide avec mon omelette aux lardons et au fromage !!! Tout vegan bien sûr !
J’ai fait revenir de l’oignon et du tofu fumé #soy coupé en lardons, puis pour l’omelette : farine de pois chiche, lait de soja, curcuma et 5 baies (je ne suis pas fan du poivre, le 5 baies me convient mieux...). Et pour le fromage, juste de la vécurent maltée (plein!). Quelques cornichons, une salade et... j’en peux plus !

Tortilla vegana de papas, plátano, espinacas y cebolla.
En vez de huevo: batir harina de garbanzos y agua.
¡Qué mal nos alimentamos las personas veganas, eh!

WHITE| Day 7 of @melissasproduce's #7days7colorschallenge . Roasting #PearlOnions (or any round onion really) in its skins then pushing them out and getting the tender, delicate, sweet inner membranes is like striking gold. It is one of my favorite things right now. Here, I prepared what I call my vegan egg (garbanzo bean with sweet potato base) with roasted pearl onions, @beyondmeat crumbles, fire-roasted eggplant and peppers. Cooked it omelette-style. This recipe was inspired by my momma, who used to make something similar growing up, whose name happens to be Perla and whose favorite color is yellow because it's almost like gold hahah. Yesterday evening we had the best sushi night ever 😱🍣🍙. We are still amazed by some of the flavors. The vegan raw tuna for instance, was unreal 🌱🐟.
We ate until our stomachs almost exploded 😁.

Chickpea Flour Omelette from #cookingwithplants ...made w/ chickpea (or garbanzo) flour, water, turmeric, salt, pepp, garlic powder, nooch & ground flax seed. Best cooked in a non-stick skillet (very sticky batter) then flipped like a pancake. Once done, fold over into an omelette.
We stirred into batter b4 cooking: pre-baked tempeh crumbles, minced roasted garlic & spinach adding vegan pepper jack shredded cheese at the end.🌈🚴♀️🌞🌻

What, omelette made with chickpeas?? 🤔 well, yeah! This absolutely delicious vegan omelette is made with chickpea flour! And it works freaking good! You need no eggs for this. Just kala namak salt for the egg like taste and the chickpea flour for the texture 😏 everyone need this in his life! 🙏🏼
