The first avocado #margarita I ever had was where this silly photo was taken- at Curra's in Austin, TX when I was in college studying art 🎨 at @stedwardsu. 📚I knew when I opened Avo that a healthier #vegan version of that drink had to be on our menu. With the help of some willing taste-testers 😉 and some bad ass staff members, we created the healthiest margarita around. Here's my #recipe if you want to try making them at home, but you can always get this cocktail at my first restaurant, Avo, located in OneC1TY at 3001 Charlotte Ave. Enjoy! 👏🏼🥑 .

Yield: 1 margarita
1.5 oz vegan reposado tequila
1/4 avocado
pinch fresh cilantro
1 spoonful orange dust (dehydrate organic oranges until cracker-dry... Pulse to a powder in blender and voila! Don't have this made? Splash of OJ will do the trick in a pinch.) 1 oz fresh lime juice

Pour la petite histoire...
Suite à l’ouverture d’un bocal de pois chiches, je me suis évidemment penchée sur une recette à faire avec le fameux aquafaba, le jus dans lequel trempent les pois chiches en conserve. La première idée qui m’est venue en tête, c’était de revisiter la tarte au citron meringuée, en version végétale et à ma façon ! 🍋🌱
C’est ainsi que j’ai opté pour une pâte sans cuisson et que j’ai choisi d’associer le citron à la noix de coco, puisque c’est un mariage qui fonctionne toujours à merveille… ✨ Et le résultat est à la hauteur des espérances ! Très parfumée, cette tarte est un pur bonheur. 🌈 A la maison, elle est officiellement devenue notre petite tarte au citron fétiche ! 🌟
L’équilibre est parfait, tant en termes de saveur que de consistance. C’est à la fois d’une gourmandise et d’une légèreté incroyables. La pâte est aussi tendre que délicatement croquante, la crème est si onctueuse et si douce… L’agar-agar permet d’obtenir cette texture soyeuse, particulièrement légère en bouche. 🌼 Autre avantage : il permet de réduire la quantité de fécule, donc la charge glycémique.↘ Et que dire de cette meringue, tellement aérienne qu’elle est à peine perceptible sur la langue ? Un vrai petit nuage. ☁ Voilà un dessert qui allie la fraîcheur du citron et la douceur de la noix de coco dans une harmonie évidente. Un délice, tout en raffinement et en subtilité. 💛

Tonight I veganized (is that even a real word?) Hungarian Goulash and served it with a vegan cheesy cashew cream 😍 It turned out absolutely delicious and perfect for this horrible weather ☺️ It's also a one pot wonder so less to wash up 👍

Ingredients:

8 chestnut mushrooms sliced
1 onion chopped
4 cloves garlic crushed
3 tbsp tamari 
1 tsp sweet paprika
1/2 tsp smoked paprika 
1 tsp thyme
1/2 tsp oregano
1 vegetable stock cube
1 green pepper sliced 
1 stick celery sliced
1 tin tomatoes
2 tbsp tomato purée
1 tbsp maple syrup
500g pasta
1/2 ltr water
1 tin green lentils drained & rinsed
Salt & pepper

Method:

In a large pot heat the tamari and fry the mushrooms for 2 minutes.
Add onion and garlic to the pan, stirring regularly until onion is soft.
Stir in the herbs and spices along with the rest of the veg and cook for about 5 minutes.
Next add the tin of tomatoes, pasta, water, stock cube and tomato purée. 
Bring to the boil and simmer until pasta is cooked.
Add the drained and rinsed green lentils to heat through before serving.
Season to taste

Cashew Cream:

Soak one cup of cashew nuts in water overnight (if you forget to do this then soak in boiling water for 10 mins)
Rinse the cashews well and blend in a food processor or nutrition bullet with 2 cloves of garlic, 3/4 cup of nutritional yeast, a pinch of Himalayan pink sea salt and water to destined consistency

Serve & savour 💚

London Fogs are my fav, but making a conscious effort this year to save $ where I can, below is a very easy recipe, and healthier than most cafe's!

Almond Milk (I usually use my mug as a measuring cup)
Earl Grey tea bag *or loose leaf tea
1/2 tsp vanilla
1 spoon of honey (to taste) or substitute sweetener of your choice to make it vegan friendly.

Warm milk in a pot, while the tea bag steeps in it. 
Stir in honey and vanilla while it heats.
Once it is hot *NOT boiling*** throw it in a blender (nutribullet for a few seconds, or blendtec for 10 seconds) to make it super frothy and creamy
POUR, SIP, ENJOY♡

Spaghetti noodles (I used about 9 oz)
3 tablespoons of oil of choice 
3 cloves of garlic 
1/2 zucchini 
1 cup of broccoli 
1 cup of cashews (soaked overnight)
Cilantro or parsley 
1 1/2 c Shiitake mushrooms (chopped)
1/4 small onion 
Dried parsley 
Garlic salt 
Parmesan cheese
1.) cook the spaghetti per instructions on package 
2.) blend oil, garlic, cashews, broccoli and zucchini until smooth. I added about 1/4 cup of water to help blend smoothly
3.)cook mushrooms onion in a little water until soft. 
4.) mix the cooked spaghetti, sauce, mushrooms and cilantro or parsley together. Season with garlic salt and dried parsley. Sprinkle with Parmesan cheese. Enjoy!

simply just toss you prepared kale, smokey tempeh, tahini + hot sauce into a bowl - mix together and enjoy 👅
👉🏼 smokey tempeh — add 1/2 a cup of low sodium veg broth to a pan, crumble in your tempeh, sprinkle with smoked paprika, garlic powder, black pepper + onion powder - cook until veg broth is gone + slightly toasty!
👉🏼 tahini dressing — add in 1/4 cup of tahini to a mason jar, garlic powder, dijon mustard, 1/2 tsp maple syrup, lemon juice, black pepper + water - put lid on and shake until combined, adding more water if needed!
👉🏼 massaged kale — take the stems off your kale + tear it into small bite size pieces, adding to a container - add on 1/8 tsp of sea salt (I do 2 lbs of kale + 1/8 tsp sea salt) then massage the kale until it becomes soft + fragrant 🌿

They have moved from Oxford Street/ Tottenham Court Road area to just opposite the M&Ms store in Leceister Square. It's the perfect place to go with friends, to take a date or to just have some alone time. Beautiful energy and high buzzing vibrations. I feel awesome when I go to this place. Happy Friday, citizens of planet earth! 🌏 
Comfort food meets whole food clean eating with this absolutely scrumptiousssss cheezy broccoli casserole! It’s super easy to make and is loaded with fiber, potassium, vitamin c, beta carotene, manganese, potassium, b-vitamins, and the list goes on. 💛💛💛
For the casserole
Ingredients: 
4.5 cups of butternut squash, chopped into small 1/2 inch cubes
4.5 cups of broccoli, chopped into small florets and chunks 
2/3 cup of cashews, soaked overnight 
1/2 cup of filtered water 
1/2 cup of nutritional yeast
2 tsp of apple cider vinegar 
2 tsp of mustard powder 
1 tsp cumin
1 tsp chilli powder 
1 tsp smoked paprika 
1/8 tsp of cayenne pepper 
1 tsp of Himalayan salt ✨
For the Pumpkin Parm topping:
1/2 cup of pumpkin seed 
1/3 cup of nutritional yeast
1/2 tsp of Himalayan salt ✨
Instructions: 
Roast the cubed butternut squash on a lined baking sheet at 400F until they’re soft enough to pierce with a fork.  Once soft, remove the squash from the oven and let cool for about 5 minutes. 
Transfer squash into a food processor or high-performance blender and combine with all the remaining ingredients EXCEPT for the broccoli. Blend until smooth (this may take a couple minutes). Add the broccoli florets and chunks into a mixing bowl and combine with the butternut squash mixture until thoroughly mixed through. Transfer the contents into a glass 8x8 inch casserole dish. Bake on 400F for about 20 minutes. Meanwhile, prepare the Parmesan topper by blending the pumpkin seeds, nutritional yeast and Himalayan salt in a blender or food processor. After the casserole has baked for 20 minutes, remove from the oven and top it off with the pumpkin Parmesan. Transfer back into the oven to bake for until 5-7 minutes.
Remove the dish from the oven, and allow it to cool for 5 minutes before serving. Enjoy! .

If you’re not filling your own cup up there’s NO WAY 🙅🏻‍♀️ you can perform your best in any other areas (work, school, relationships) 😭 because you won’t have the ENERGY to! 🤷🏻‍♀️Take it from someone who did that for WAY too long... it’s no fun and it’s a vicious cycle of never ending stress & anxiety that won’t change until YOU do👏🏼

So before you sell yourself short for another month, 6 months, year PLEASE just do yourself a favor and ask yourself if you actually want change more than you want to stay the same❤️ You DESERVE to feel your best and be confident AF, but you have to make yourself a priority to get there babe 💕
