So my monday wasn't bad at all! It's been a productive day and I am back to my healthy routine, and it feels great!! I made for lunch a fresh salad and a delicious artichoke and sundried tomatoes risotto. I saw the recipe a few days ago and I was so looking forward to trying it! It was amazing! LOVE

He preparado para comer una receta que vi hace unos días de @cilantro_and_citronella de este maravilloso risotto de alcachofas y tomates secos. Muchas gracias por compartirla, esta increíble!! La he acompañado de una ensaladita fresca con el tomate rosa de Altea que me tiene loca. Y me han traido naranjas y mandarinas de la huerta y estan de vicio tambien! 🍄My Monday Wild Mushroom Risotto🍄 So deliciously creamy 😍 Side of broccoli🍃not pictured - too hungry🙈

Recipe below🤗👇

Prep. 10 mins.
Cooking 30 mins.
Serves 2

INGREDIENTS 
1 tbsp. olive oil**
1/2 large white onion, finely chopped
4 cloves garlic, minced
150g mushrooms*
150g risotto rice
750 ml veg stock
200ml white wine**
3tbsp. soya cream**
Large handful chopped parsley

METHOD
1. Heat olive oil in large saute pan, add onions and garlic and cook on med/ low heat until soft.
2. Add mushrooms and wine then cook for a further minute. Stir in rice and pour in stock.
3. Bring to boil then simmer for 30 mins or until liquid is absorbed. You may need to add more water. Stir in cream.
4. Stir in chopped parsley.
5. Enjoy 💚 * I used a mix of Pioppini, Grey Oyster and Chestnut Mushrooms
**These are optional for wine and oil free version, but being a bit of a Nigella I think it adds that extra flavour and creaminess! 
You can also stir in nutritional yeast at the end of cooking for a 'cheesy' taste!

Risotto 😏😍 Ich esse es wirklich viel zu selten, dabei ist es so schnell zu machen 😊 Dieses hier hat meine Mutter zubereitet. Dazu hat sie etwas Knoblauch in Olivenöl angebraten, klein geschnittene Champignons hinzugeben und zum Schluss den Risottoreis, Wasser und Gemüsebrühe. Das ganze Zeug wurde dann gekocht, bis der Reis fertig war und von uns in sekundenschnelle aufgeputzt 😊

Risotto com o que tem sobrando na geladeira? ✨SIM✨ e só exige um pouco de calma & paciência.
Não sei dizer exatamente a quantidade que eu fiz, foi pouco, portanto a quantidade de arroz arbóreo que vc for usar precisa ser proporcional a água, segue o que eu utilizei:

🍚 Arroz arbóreo
🌱 Cebolinha, cebola e alho
🌰 Noz moscada
🍄 Shimeji preto
🍋 Caldo de legumes c/ limão + sal
🍸 Vinho branco

Infelizmente eu tava sem meu queijo de castanhas mara, mas caso tenha, acrescente por último, quando seu risotto estiver prontinho. Primeiro fervi o shimeji juntamente com a água e após 5 min retirei e reservei o shimeji. 🚨Guardei a água porque ela é utilizada (é ela que vai dar o sabor mais acentuado do shimeji no seu risotto)🚨
Numa panela, reguei azeite e fritei alho, cebola e o shimeji até dourar, em seguida o arroz arbóreo e a cebolinha, mexi por 2 minutos e acrescentei o vinho branco até cobrir tudo e esperei secar de leves, em seguida adicionei aos poucos (utilize uma concha) aquela água do fervimento do shimeji e observei bem para que a água não secasse completamente, fui adicionando a água aos poucos e segui esse ritual forever. Para a segunda fase do processo de cozimento, fervi mais água e dessa vez coloquei o caldo de legumes e limão + sal a gosto e novamente com a concha, fui adicionando a água (fervente please) na panela aos poucos e tornei a observar de perto o cozimento (pode mexer tudo vez ou outra) fui experimentando e me certificando de que o grão ficasse aldente. Eu prefiro desligar o fogo sem deixar que o risotto esteja muito seco, porque a água tende a secar. Adicionei a noz moscada por último e finalizei com azeite, gergelim e rúcula. 💛🍴🍸🍚

Celeriac mushroom risotto 🥄
I love using celeriac in this dish because it takes so nutty and it’s a great idea if you want a healthy meal that isn’t ‘boring’!
It’s also dairy free and #accidentallyvegan 
I bought this diced celeriac ‘rice’ from @waitrose. I chopped onion, 2 cloves of garlic and mushroom and sautéed in a pan ⸰
I added the celeriac rice, some oregano, fresh basil and a little water and cooked for another 5-10 mins until the water boils off and the texture is slightly sticky ⸰
I topped with roasted tomatos and @the_tofurky_company tempeh bacon ⸰

-2 Tbsp Brown Rice (30g dry)
-60g Raw Cashew Nuts
-2 Tbsp fresh lemon juice and zest
-1 Handful Chopped Dills
-1 small clove garlic,minced
-1 Tbsp Olive Oil
-2 Tbsp Water
✨Put all ingredients in your food processor except rice Process on high speed for 5 minutes until Cashew is extra smooth.Add a little bit of water in order to make it as smooth as you want.Stir in warm cooked rice and add dill and stir serve warm.

Last weekend I bought a NON STICK FRYING PAN WITH A LID and it's changed my life. Me and Ross had a risotto competition and sorry mate, I won 👸🏻
🍃VEGAN🍃GLUTEN FREE🍃LOW FODMAP🍃5 DIFFERENT TYPES OF VEGGIES🍃ONLY ONE PAN🍃

Fry up the green part of leek in some garlic infused olive oil (if you're not low-FODMAP then you get the pleasure of using actual real life garlic and onion) and add in 2 tsps of Italian herbs. 🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃
Stir in X cups of risotto rice (roughly half a cup = one serving) and make sure it's coated in the mixture. 
Chuck in a handful of cherry tomatoes (I used a whole packet) and measure out your veggie stock. 1 cup of stock for every half cup of rice. 🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃
Chuck the stock in and bring to the boil, yes there is a lots of liquid but don't panic, u got this. Bang a lid on the pan and turn the heat right down so it simmers away. Leave for like 25 minutes or until most of the water is dissolved and chuck in a few cups of grated pumpkin, chopped parsley and half a bag of spinach. Let it all sweat down for another 5 - 10 minutes and then give it a right old stir. Try the rice and if it's cooked to perfection then serve with a sprinkle of chilli flakes (of course) and lots of freshly ground black pepper. 🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃

i was halfway into cooking this risotto when i reslised i had no arborio in the pantry.😱 I had the onions, garlic and carrots sweating and the fennel already roasted in the oven. so in went the basmati rice! i had to cook it in the organic vegetable stock for 7 minutes or so then put the lid on and let it cook through à la pressure method (the way i usually cook basmati rice). it was a bit strange but fantastically flavourful thanks to my Italian Seasoning Blend. Cauliflower risotto with leek, kale, mushrooms and spinach 🍚
Risotto is one of my favorite dishes, I still remember the first one I've made (mushroom) and it was sooo tasty 😊
This one, even without the risotto rice, was absolutely delicious and the best thing is: low cal 😉
Definitely making it more often 😄

Recipe
3 cups cauliflower rice
2 cups shredded kale
2 cups sliced mushrooms
2 cups spinach
1/2 cup leek, chopped
1/4 onion, chopped
1/4 cup non dairy milk
1/4 cup white wine
1 tsp oregano
1/2 tsp ground ginger 
Pinch of: black pepper, salt and garlic powder • Start by adding the onion and the leek to a pan with some water. Let it "fry" for about 5 min or until leek is tender.
• Then add kale, mushrooms and spinach. Cook for another 5-10 min.
• Mix in the cauliflower rice and spices. Let it cook for about 5 min.
• Finally add wine, milk and cook for another 5 min. I would recommend to pour the wine first, let it boil for awhile and then add milk. 
Serves 2

I made a wintery risotto (incredibly for the first time) so it didn't prove quite as calming as I had intended. End result was thankfully very tasty- a harmonious combo of chestnut mushrooms, garlic, kale, peas, oregano and a white onion. Ingredients:
- 1 cup risotto rice (or any other rice)
- 200 g mushrooms (brown champignons here)
- 1 serving asparagus
- 100 g green peas
- 1 serving parsley or coriander
- 5-6 cherry tomatoes

Preparation:
- chop the veggies, mash the tomatoes
- put it all in a pan or bowl with just enough water to cover it all
- cook for 5-10 min: until the tomato sauce starts to blend with the water
- add the 1 cup of rice and 3 full cups of water
- partly cover the pot with a lid, but allow for some air
- cook until the water is all but reduced & the rice is nice and soft
- lift off the stove, lift the lid, and let it stay for ca 10 mins
- serve warm and enjoy! 😋

And now, the mystery! 😎😀 The 1:3 rice:water ratio is super important. For white risotto rice, that is. If you use brown, red, or black rice, they take a longer time to cook, but absorb less water. Make sure to check the appropriate ratios for the type of rice you're preparing. Granted, one can simply cook the rice on the side and just mix it with the veggies in the end, but, well, it's just not the same. 🙃

Preparation: - chop the veggies, mash the tomatoes - put it all in a pan or bowl with just enough water to cover it all - cook for 5-10 min: until the tomato sauce starts to blend with the water - add the 1 cup of rice and 3 full cups of water - partly cover the pot with a lid, but allow for some air - cook until the water is all but reduced & the rice is nice and soft - lift off the stove, lift the lid, and let it stay for ca 10 mins - serve warm and enjoy! 😋 . And now, the mystery! 😎😀 The 1:3 rice:water ratio is super important. For white risotto rice, that is. If you use brown, red, or black rice, they take a longer time to cook, but absorb less water. Make sure to check the appropriate ratios for the type of rice you're preparing. Lately I convinced my parents to eat more plantbased meals - and look! They cooked vegan pumpkin risotto and green beans 😍 I added burger patties made from jackfruits by @jackyf.jackfruit. Brown Rice Risotto! This is a new dish for us, and it is definitely a delicious work in progress 😉. We cooked the rice in almond milk, onions, garlic, and rosemary. To add a final burst of flavor, we mixed in balsamic soaked shiitake mushrooms, and drizzled the remaining balsamic on the sautéed brussel sprouts🤤. In an attempt to avoid any imitation cheese, we left it out of the dish. However, it could always be a little more creamy, ya know?!
