I was nervous for tonight's hill workout because I wasn't sure how my foot was going to hold up. 15 min warm up, 45 mins of hills at a hard effort, then 15 min cool down. Started out wayyyy too fast and paid for it at the end but my foot felt great, even with some speedy downhills pavement running. 9 miles total @ 8:15 min/mi and 1,266 feet of climbing. Last really hard workout before Whiteface Sky Race!
"Cheesy" Chickpea Soup with Roasted Brussel Sprouts!! Easy Yumminess! I must admit, however, that I ate half the Brussel Sprouts before I ever put them into the soup! The chili flakes on the Sprouts are next level! Found the recipe on a favorite vegan website @onegreenplanet. It's a @jennymustard recipe. Definitely worth a go!! 🌱💚🌱💚🌱
Gorgeous day for a run. It feels to clean the junk out of the mind and to get a lil sweaty. Feeling thankful today to be able to do what I do. I'm thankful to be able to rep an amazing business like @amritabars. During these last two years after quitting my career of teaching I've been thankful to have found people like Arshad (founder & CEO of Amrita) who have supported me. It's never ceases to amaze me that when you put your heart and intentions in the right place the world will conspire to support and guide you.

WOTD: Elliptical 30 minutes & arms. I've spent the past five days packing, loading, cleaning, driving, unloading, unpacking, and cleaning. I'm exhausted, and I even told my partner my legs feel as sore as they do after a marathon. I could've easily skipped today, saying if I was taking the day to recover from yesterday's run might as well not do anything.
But instead I hit the gym and worked up a sweat and lifted some weights. Being injured isn't easy. The elliptical is NOT my jam. But I know raising my HR and getting time on my feet is helping me prevent losing all fitness. It's setting me up to be stronger when I can get back to 6 days a week of running. So an hour a day is worth it💪

Close up of tonight's dinner 🍝 Tofu bolognese with brown rice spaghetti 👌🏼 so today I started a low FODMAP diet which I'll be following for 4/5 weeks to try & sort out my digestive issues! If anyone has any vegan low fodmap meal ideas/recipes I would love love loveeee to know about them 🙏🏼 please & thank you 😘
I stop here often on my runs. A perfect spot to relax for a moment and take in the scenery. The more I get out there, the more spots like this I discover. Trail running has opened up a whole new world of exploration. I'm grateful to live in a region with beautiful landscapes everywhere I decide to run.
