I know you all know I can't go a day without a potato or some form of starchy vegetable! But I also can't go a day without beans😍 I love them in soups, in salads, in burritos, with quinoa, refried, and even plain! They're so so good😋 I love my leafy greens don't get me wrong, but beans + potatoes just fill me with so much joy! Does anyone else agree? It's okay to not have a big salad everyday. Eat whatever floats your boat! (As long as it's cruelty free😉). #whatveganseat
It’s 29 degrees in Melbourne today and boy are we excited 🤗🌞 even when it’s warm I’m still a big fan of cacao oatmeal 👅🍫 it’s so easy to make and fills you up for hours! To make I just boil 1/2 cup of almond milk with 1/2 cup of rolled oats and 1tbsp of cacao for a few minutes 🙌🏼 today I topped with cacao nibs, bluebs, strawberry, chia seeds, coconut flakes and my home made cacao PB (because the more chocolate the better) 🍓🙊🙏🏼

At home we are all so happy that butternut squash are back in season because we love butternut squash soup. Basically I just put steamed butternut squash in a high speed blender with some vegetable broth and blend it until desire consistency. Sometimes we add some spices and/or coconut milk and voila ! On la cuit simplement à la vapeur puis on la place dans un blender avec du bouillon de légumes et on mixe jusqu’à obtenir la consistance qu’on préfère. On ajoute parfois quelques épices et du lait de coco.
If you know me you know how ELATED I am in this picture because during my ~ 2.5 years of being vegan, I've never had a doughnut and in more vegan friendly cities I see instagrammers eating vegan doughnuts all the time! So thank God I found out Sugar shack offers vegan ones because I was getting so jealous and desperate to have that specific sweet fix. 🍩💕 also, had fun seeing my bruthaz at home for a little bit this weekend (was MAYBE worth the 10 hours back and forth of driving) 🙂

Homemade food is better, when I quit buying food I can make is just a great feeling even more when it's one of my favorite snacks: #hummus
And it's so easy to make.
1 cup drained cooked chickpeas
1 tbsp paprika
1/2 lime juice
1 tbsp tahini
1/3 cup olive oil
1. Add all the ingredients in a food processor and process them. You can add more olive oil to get a smooth puree texture.
2. Enjoy with pita chips ----------------

I don't go to bike races to blow off steam and have a good time. I go to compete, to win. Sometimes I can fake it on the race course and salvage a result but yesterday was not one of those days. No excuses, just nothing in the tank. Fair to say I've personally had a lot on my plate the last several weeks and I can't thank everyone enough for all of the kind words. But please do not cry for me. My heart and mind is on #PuertoRico#SantaRosa and victims of sexual predation and abuse. It is an emotional challenge to prioritize my job as an athlete and a team manager in the social, environmental and political reality we live in. Definitely times I ask and think, "how can I help more and do better?" ...So I'm looking for small victories and while I am dissatisfied with my racing I'm reminded how privileged we are to be able to compete at all and how fortunate we are to have incredible partners who believe in our program and support us whether we are winning or losing. @PointSracing riders/staff are headed to East Coast for a 3 weekend block of UCI CX races. So I'm looking to re-focus my energy and find some form at @dccxrace @dc.cx this coming weekend. #DCCX#HPCX
