Often so much attention is played on macronutrients we forget about the different functions vitamins and minerals play in our body and how they work together. Here is a little run down from my new blog post all about their relationship with one another:
🌞 Vitamin D & Calcium: Calcium is needed for the protection and development of bones and teeth, blood clotting and in the regulation of muscle contractions. To absorb calcium you MUST absorb vitamin D which also has an important role in protecting our bones.
🍋 Vitamin C and Iron: Iron comes in two categories: heme (meat) and non-heme (plants). Non-heme iron is best absorbed when eaten with a vitamin C source that helps the body create a compound that is more easily absorbed (which is why spinach is so incredible because it contains both!).
🥜 Zinc & Copper: These two micronutrients have an interesting relationship when the intake of one these elements causes the other to decrease in your body. For example too much zinc can cause a copper deficiency. When zinc levels are too high, metallothionein, a protein begins to accumulate, attaching itself to the copper and preventing your body from absorbing it.

💫 good Morning and happy Sunday 😊 I hope you’re doing well😋 I’m back with a food pic today. Anyone up for another swirl? 🌪 this time I made some Peanut Maca cookie dough and topped it with star fruit (it was on sale! Yes! They’re usually super expensive and most of the time no one sells them here in Austria) and some chopped almonds, cacao nibs, dried mulberries and some physalis (the orange cherry-like berries.... what is that in English?) 😊 So that being said, this is an other entry to the #PlantProteinParty by the lovely girls @xanjuschx and @laurafruitfairy , as well as an entry to the amazing #dreambrekkieparty by @ellencharlottemarie and @vanelja ☺️.... When I was younger, I used to eat all of them (regarding the Physalis) when I got my hands on some. Doesn’t matter if at home or if someone offered us a bowl of them at a family or friends party. It’s less about the taste, but more about the fun part, opening the crispy and dry leaves 😂🙈 Anyways, today it’s supposed to snow even more here. The snow from yesterday is nearly gone, so we’ll see what comes 😇💫

Hello everyone! I have something important to say in regards to the next three weeks. I’ll be travelling to Japan with my friend. So I’m not quite sure if I can post as much here but I will try my best to. Have you guys travelled to Japan before?
And here's the fun part, the recipe for Bibimbap
1/2 zucchini, julienne slicing
4-5 button mushrooms, sliced
1 handful of bean sprouts, rinse
1C of cooked rice
1tsp sesame oil
1/2 tsp salt and pepper
2tsp soy sauce
Korean spicy chilli paste and water and syrup mix to your liking. Start with 1tbsp and see how you go.
For this one, I had it with Korean spicy chilli sauce used to marinate food which tastes as good.
However, you can use sweet chilli sauce if you don't have the above.
1. Have a saucepan over medium to high heat then add the zucchini and stir it for a min and add the sesame oil, stir and add salt and pepper. Stir again and at this time it will be ready to put it in the rice bowl.
2. Next, add the mushroom to the saucepan keeping the heat the same (med-high) and stir them. Add the soy sauce and stir again. Once it's cooked, put in the rice bowl.
3. Add a handful of bean sprout to the saucepan and stir until it's cooked and turn off the heat, add the bean sprouts in the rice bowl.
4. Choose which sauce you prefer from above (Korean Chilli paste, Korean chilli sauce marinated, sweet chilli sauce)
5. Mix it all together and enjoy!! .

Working back slowly from my foot sprain focusing on my muscle activation and balance. Rushing back will only make it linger like my ankle injury in the past (definitely not worth it).

I realise that a lot of what I share is smoothie bowls and banana ice cream, an I'm going to try to share more of my main meals 🌱 I think a lot of people can get the impression that most of what vegans eat is fruit and veg (blended to different consistencies 😂) - and it's not, those bowls just sometimes turn out so pretty that I have to share.
This was my Christmas Day brunch (pancakes count as a meal, right? Refilled this plate 3 timed)

K E T O D I E T ~ Too often I have had people come to me that feel sick, lethargic and depressed from following a keto diet. This diet can cause a build of ketones, which can in some cases result in Ketosis, leading to a feeling of nausea, weakness and can bring on migraines.
There has always been a huge backlash against the essential macronutrient, carbohydrates, and demonising a food group does not promote a healthy attitude towards food. Most qualified Nutritionists and Dietitian’s would NOT recommend cutting out carbs completely ~ here are the reasons why:
🥒 Carbohydrates are a big food group. Not all carbs are equal. They consist of fibre, starch and sugar. Vegetables, fruit, pulses, bread, pasta for example are ALL part of the carb group.
🥕 The idea of ‘cutting out carbs’ is very broad. Fibre and certain starches provide a slow and steady release of energy. After they are consumed, they are broken down into glucose which is our bodys and brains main fuel.
🥗 Rather than cutting carbs out, think about the QUALITY of carbohydrates you are eating. The TYPE of carbohydrate you choose is significant as some are healthier than others. For example whole wheat bread, brown rice, quinoa are better dietary choices than highly refined carbs such as chips or white bread. Healthy diets should contain at least 55% energy from good quality carbs!

What comfort. Am more appreciative than not lately for big hearty proper meals like these these days where I’ve not been making the best (far from it in actual fact) decisions when it comes to food. Been mindlessly eating uncontrollably much more than necessary and it isn’t something I’m very comfortable with putting out there as struggling with emotional binges isn’t something worthy of praise is it? Quite a lot of unnecessary distress and anxiety I admit and I’m still learning to trust myself and let the past go but days like these I just feel so stupidly horrid in my own skin. But I guess that’s just how humanity is, we’re all struggling one way or another and I’m learning to accept that it’s alright, suffering is what make us human and what connects us with other humans. So go on and have a happy weekend mates, please remember to always treat yourself kindly, you guys are all gorgeous and worthy no matter🌟
BURRATA PIZZA 🍕 @brownice_sg! This pizza was made with the perfect thin crust thickness, topped with tomatoes 🍅, soy ham, sundried tomatoes, arugula and a generous amount of vegan cheese ! I really Love most of the pizzas @brownice_sg so it’s hard to pick a favourite! This is Definitely a place I would recommend bringing non vegans to!😆😆

Went back to The Sambal on Kent for lunch today. @lydiakurnia and I shared some nasi goreng, gado gado, salt and pepper mushroom, tofu and tempeh (I only ate the tempeh), and I also had an eaten cendol that I shared with Kaelan. Yummy! 😋👍
flashback to a year ago when I was volunteering in Fiji, I definitely miss this trip all the time. If you're thinking about volunteering then I definitely recommend diving in and doing it especially if you're wanting to go with @vesabroad 💖✨
.............................................Chickpea Gyro 🥙 Sandwich. 👅🍽🍅🌿🙌 This Roasted Chickpea Gyro recipe by @liveeatlearn is sooooo delicious and simple to make! 😁 The chickpeas and extra virgin olive oil are from @sprouts, the sea salt from @redmondrealsalt, paprika and cayenne and black pepper from @spicelyorganics. I made a tzatziki using unsweetened @so_delicious coconut 🥥 yogurt. I hope everyone enjoys their weekend. 👍
Road tripped down to Ballina and stopped for a delicious dinner @thebeetbyronbay 😍📷 Featuring the Vegan Cheeseburger and Philly Cheesesteak roll 🌿Loved the creativity of their juicy vegan quinoa soy patty and also how they made their own seitan for the “steak”, along with the sweet potato “cheese” sauce 🙌🏼 my fave goes to the cheeseburger which really reminded me of maccas cheeseburger but better 😋
