Last night we got @veggiegrill to celebrate good news and good moods. 💖 So excited summer is finally here! Been having to do some uncomfortable work on myself while taking a short break from running, but the results are worth it! The bitterness and anger that 2016 left in it's wake is blossoming into taking risks, new opportunities, goals and intentions! It's not smooth sailing, but I never thought I'd get right here. ✨
I'll be 31 soon and 10 years ago I weighed in at 315lb. 8 weeks on a #wholeplantfoods diet. Cutting out all process foods chips, peanut butter, fake meats ect. My birthday is coming up in a week and my goal was to hit 210lb coming from 220lb. I took this pic this morning @ 203lb full of energy and strength. Never cut any calories just replaced it with more rice, beans, fruits and Veggies and didn't feel the slightest bit weak, tiered or dizzy from the weight drop as I did with years of yoyo dieting. I enjoy this life style and some people cannot wrap their minds around it 😆. #veganbody
Some days you just want some delicious creamy pasta, today is one of those days. I wish I could be back in NYC with my fav humans enjoying some delicious Mac' - like this one from @eatbychloe. The best part of this dish is the crunchy, smoky mushroom bacon. Yummm!
Sometimes your non #vegan friends find amazing vegan things and get so excited to share them with you that you are filled with the warm and fuzzies, even when you are eating the coolest ice cream around. Last night my friend took me to Charm School and I had the most amazing peanut butter fudge ice cream, topped with vegan magic shell and vegan fluff that felt like I was at an actual campfire roasting marshmallows. Shoutout to the @charmschoolrva staff who were so nice while I fully geeked out at all the vegan options, y'all are cool people.
Still dreaming about these shishito peppers at @donnajeansd! Our dinner was 💯. This dish had nori and smoked almonds in it - all the flavors meshed very well together! Chef @royelam is so talented, an inspiration to me, and feel honored to have worked under him in my career. Donna Jean is such a beautiful restaurant, there is attention to every detail of the dining experience, the food alone is spectacular, so everything else just adds to this very special place! Thank you, Chef!
Post-#RNRSD half, the destination was #dogfriendly , all-vegan @barkindred! We got Hashes for the Mashes (a plethora of goodies including soy curls, beans, smoked coconut, kale, jicama salsa, and hash browns) and the Tofu Benedict! I will always order the entree with hollandaise. The tofu was amazing, really meaty and flavorful! There was also some kale and seitan hiding under there. Can't wait to get back to #SanDiego for dinner at Kindred and brunch at Donna Jean! Oh yea, post race local SD IPA for me, which def hit the spot!
We had two really incredible meals in San Diego; behold the Nashville Hot Shrooms, which were the star dish of the trip! Juicy shrooms, battered, fried and topped with hot sauce, on a pile of pickles and sourdough bread! I loved them, @veganbeastmode loved them, and now we want to move next door. The Sexy Cake from @claracakes at @eatdrinkvegan was legit, very sexy. Lime cake + vanilla/lime/blueberry frosting got me like 😘😘😘😘😍😍😍. Like cheesecake in cake form. I've been thinking about it everyday. #clarascakes#eatdrinkvegan
My heart was set on hitting up @jaycelab's booth at @eatdrinkvegan! I couldn't wait to try the fried ravioli filled with @eatplantalchemy cheese! Was so excited to see the pickled deviled eggs on the menu as well - been thinking about them since @veganoktoberfest!
The other night I made jackfruit adobo for myself and @veganbeastmode. Adobo is a traditional Filipino dish that Mike's lola would make, but he couldn't eat anymore after he went veg as a kid. So he asked me to try, months and months ago. I've never had it before, so I scoured the internet, and most of my info came from @astigvegan's youtube videos! I used a chicken adobo recipe from @panlasangpinoy, which I veganized! Delicious! The next night I sauteed in white onions, and Mike made tacos out of them! (Typical 😂) Filipino food is full of flavors I'm not familiar with, but very excited to try more of (especially everything on @astigvegan's blog!!!!) Getting back into the swing of things after my rendezvous in NYC with lots and lots of veggies! Here I made a big bowl of cucumber noodles (or coodles if ya fancy) mixed with hearts of romaine (eat your water!), edamame, corn, carrot, and some #oilfree pan fried cabbage and onion, topped with an adapted version of @thugkitchen's peanut sauce.
Shoutout to Sweets @eatbychloe for having #glutenfree options! Enjoyed this chocolate cupcake that had impeccable texture, and just the right amount of sweetness! It wasn't quite chocolate enough for me (I live for chocolate anything and everything) but I was still really impressed!
My last night in New York/Stamford brought us back one of my favorite #vegan spots, @beyondsushinyc. I first ate here back in 2014 when @stefaniepowers was living in Union Square, I loved it so much then I ordered it multiple times that trip. This time it was our last stop in midtown before grabbing our train out of the city. I got the Pickle Me and the Spicy Mang. Both were fantastic.
Impromtu lunch date yesterday with a dish I've been craving for months - orange chikin!!! Post-10 mile run, post-baby shower feeding frenzy. Tried not to hungrily stare at @veganbeastmode's Pho, because I wolfed down my plate too fast. 😂 I was unsuccessful.
So these happened last night! General Tso's Brussels Sprouts at @cruciferousla. I never doubted @smveganchefs incredible talents and skills, first after trying their cream cheese a few years ago, following their food escapades via IG in the Bay Area and now here, and then after they won best savory dish at @veganstreetfair! This dish is 💯x infinity. Great food, warm and fun service (I had heard wonderful things about @ellemarquis, and the rumors are true!) I can't wait to go back. Best date night with @klean_slate, @veggiefixation, @foxnfig and @vegyogini!
Bae has been asking me to help him with meal prep for months now, and my answer is usually "Health food? New phone, who dis?" But he just signed up for a triathlon and has been buckling down this week (while I've had pizza for lunch everyday 🙃). Made him a jackfruit, garbanzo bean, veggie and sauerkraut bowl. Included soy sauce, liquid smoke, Braggs, red wine vinegar, and oregano with no added salt and minimal oil. Pre-made brown rice and quinoa pack on the side. Not my usual style at all, but very excited to watch him get pumped about his tri in September! ✨🎉💪
Last night I finally got to try @cocobellacreamery and pose my ice cream by the famous wall! I think I'm going to have to adjust my training routes through Hollywood so I can eat scoops of blueberry cheesecake regularly.
