The road to Hana is filled with so much beautiful scenery, fresh coconuts, tacos and homemade banana bread! Tucked along the road is @coconutglens vegan ice cream stand!! This place was worth the all the curvy turns and one lane bridges! Snapped this pic right before this amazing tropical rainforest down pour. Tried the coffee toffee and ginger lemongrass flavors. So good!!!
Here as promised the recipe for the banana bread I posted lately....try it, it’s worth it!
Combine 5 bananas, 240 ml sunflower oil, 160 ml plant-based milk of your choice and 4 tablespoons vanilla powder in a large mixing bowl and blend with a potato masher.
(You can leave the bananas chunky).
Add 200 g sugar and 50 g brown sugar (or replace sugar with any sweetener you prefer) and blend with a cooking spoon or a dough scraper.
Add half a teaspoon of salt and 2 teaspoons bicarbonate of soda and blend.
Add 380g feslour and blend....(you can add additional flavours like cinnamon or tonka bean or whatever you like).
Transfer into a greased loaf pan, cut a banana lengthwise and place on top of the dough, bake 50 to 60 minutes on 175°.
Let cool down after baking and prepare the frosting:
Mix 2 tablespoons of peanut butter with 80 g of icing sugar and 2-3 tablespoons of water, mix until smooth and spread on the loaf. Sprinkle with almond or hazel nut flakes...

Happy Sunday morning so time to channel your inner Jack Johnson with these vegan banana-blueberry pancakes! Dry ingredients: 1,5 cups flour (I use mixtures, say; 1 cup all purpose, 1/2 cup buckwheat), 1/2 tsp cinnamon, 2 tsp baking powder, 1/4 tsp salt, 2 tbsp arrowroot. Mix well. Wet ingredients: 1,5 cup and 3 tbsp plant based milk (soy, oat, almond), 2 tbsp liquid sweetener (agave, maple, date syrup), bit of vanilla essence. Mix well, mix wet into dry, don't over stir because your batter will get gummy. Fold in 1 cup mashed bananas and blueberries. Make small pancakes (I use a 1/4 cup for measuring) in a hot frying pan with a bit of oil, flip when top of batter is 'dry and bake on the other side till golden brown (when using date syrup the pancakes will be darker).
