I swear the beach is life!
Growing up I always figured that getting to visit any of the Caribbean islands was a dream outside my reach. This summer we are about to head back for round 2 of 3, possibly 4 😮
How freaking unbelievable is that?! When I started coaching I really just signed up to get a discount. Little did I know my family's life would be turned around so dramatically. Losing 90+ lbs, earning an income helping others get healthy, and holy shit SO MANY FREE VACATIONS. I had no clue! #notComplaining 🌴 And the coolest part is that I get to find people just like me, with the same goals and visions and bring them with me. The "get shit done" people with a unstoppable urge to help others lead a healthier, happier life. Where my go-getter #beachBums at?!
Someone recently told me that I was brave for being vegan. I disagreed and said no, it's not about being brave. The opposite of being brave means that there is some of fear in you and vegan is not something anyone needs to be afraid of. For many people veganism is unknown and unfamiliar and that is something I can relate to, but not fearful. Becoming vegan was not brave, but I believe that for many people it stems much deeper into your soul. For me it was a realization and a point in my life when I found empowerment. I used that empowerment to make an change that would impact my life and the world. 🌻 photo credit: @find.real
The first time I tried a Beyond Burger, my mind was blown 😳 This burger is 100% plantbased and has no animal products whatsoever. But it tastes like what I remember a whopper to taste like. Its a bit of a mind f*ck but a delicious one. #vegan
~Day 25: Longtail boat Island tour and snorkelling adventure. Started the day off losing parts of the boat out on the water during a monsoon, ended the day happy in the sun on the beach in Maya Bay. When you're travelling things can go wrong, but just go with the flow and be patient because things will turn around.🌞~
This was the vegan dinner (carrot-orange soup) I ordered yesterday. We were in a restaurant and I was super excited when I realised they have vegan meals. But sadly it wasn't that yummy bc it was too spicy for me.
After I first saw Berlin, I felt in love. It was kinda clear that I want to live here some day for a few years. The city is beautiful but very very expensive, so not really recommendable for a student.

CREAMY PASTA SALAD 🥗🍜
- 1 cup brown rice/quinoa PASTA - handful of chopped ARUGULA
- 1/4 block of cubed TOFU (patted dry, baked @ 385° F until firm/ 20 ish min, seasoned w turmeric & pepper)
- Tbsp tahini
- Salt & pepper
- Garlic powder
- Water (add in little amounts - patiently mic- around 1/4 cup) - Juice of 1 lemon 🍋

Insalata di Stagione basically translates into "Seasonal Salad". Right now watermelon 🍉 is in season here in Florida so keep in mind that your mileage may very when ordering this dish depending on the time of year you visit.
I was a little hesitant after I pointed this selection out to our server and he said "Oh, you want the watermelon salad"? Um...yeah. I'm game for anything...even though watermelon isn't my favorite. I tend to lean more towards the tart and acidic fruits.
After I had cleaned my plate, the only thing I was thinking was "I wish there were more".
If you zoom in on this photo you can see that the watermelon it's self was sprinkled with black sea salt. Sweet and salty together in one bite. 👌🏼And on top of the honeydew are what I could only describe as microscopic tart popping Boba balls. They could have been some kind of citrus fruit segments. This was another perfect combination of sweet and salty.
Also on the plate were some sort of crunchy nuts, micro greens, watermelon radish and yellow and red cherry tomato segments.
Be sure to let your server know you you'd like the dish vegan so they omit the cheese schmear that normally comes on the plate. Even if you're not vegan, trust me when I say that the dish doesn't need it. It's super tasty just like you see it plated here.
Pro Tip: Trattoria al Forno does not advertise the fact, but chef did tell us that they do now offer vegan cheese!

Todo mundo sabe que a Suíça é um país bem caro né. A grande maioria das pessoas por aqui come em casa e reserva restaurantes pra ocasiões especiais, e essa é uma das razões pelas quais eles - e eu também tô viciada nessa opção - preferem comprar pães, vegetais e frutas no mercado e fazer um piquenique. Pra mim essa tem sido a melhor saída: nada de comida sofisticada, mas da pra economizar e sempre aproveitar as vistas maravilhosas que o país tem a oferecer - e isso vale pra qualquer viagem que fizer pela Europa. Sempre sai mais barato, turístico e ainda da pra economizar pra tomar mais vinho ou cerveja 😂
Hoje estava em Zurique - uma das cidades mais caras por aqui - e na correria, acabei comendo isso mesmo no trem de volta pra casa, apesar de ter pesquisado inúmeros restaurantes legais por aqui que queria ter conhecido.
Então fica a dica: ande sempre com uma cenoura e uma maçã na bolsa 👍🏼
My naughty dinner👧 Shaved ice is a popular dessert in Taiwan. You can see all kinds of shaved ice here. Once it doesn't have dairy products(e.g. condensed milk), it's vegan! My shaved ice had taro balls, tapioca balls, mung beans, pearl barley, a scope of mashed taro😋 The ice was made with cane juice which made it mildly sweet👍 That scope of mashed taro was very dense, creamy, smooth and taro! So tasty❤
Of course one bowl of shaved ice couldn't fill me up. So I had a giant bread😋 This one had raisins, cranberries and orange peels in it. Smelled so fruity! I stay in my brother in law house when I'm in Taiwan. His dog kept staring at me while I was eating the bread. So cute and adorable that I couldn't resist😂 Although she barked 24/7, I still gave it few pieces😂
I am ready for a #vegan lentil burger from Moo Burgers 100% of the time 🙌 I have had a LOT of veggie burgers in my life (I consider it my specialty 😉🤤) and this one ranks in the top 5 for sure. I am going to need another one (or 5) before leaving Sydney 😍🍟🍔🌱

I usually like and prefer to stay away from Loving Hut when I'm travelling, but this is the nearest vegan restaurant and I'm hungry (I had 🍟 for breakfast 😨). I'm not saying I dislike Loving Hut; I love their food!!! But I just want to try some varieties than a chain. I would go to other vegan restaurants, but I'm couch surfing not staying at hostels (thank goodness - it's a group of school kids at Generator right now) (I lied to the receptionist, I haven't booked a bed and wanted to know if there are free bed, and I will think about it 😂)(I just wanted to use their wifi and charging spot). 🍚 🍛 🍚
I came during their lunch hours - €6.90 with a main and either spring rolls or soup. Their spring rolls were ok; nothing special. I ordered the "Happy Skewer" - "soy-meat, courgette, pineapple, sesame and fried rice". I was expecting it to come with bamboo skewers - but thankfully not, as less waste! I wish they gave me more rice! The main was better, but not extraordinary. Good for the price 👍🏻.
