This year, I'm trying to be more intentional about making our meals vegan. Usually, I just make things that don't require dairy or eggs. Now, I'm trying to convert our favorites into vegan meals! Tonight, I made vegan lasagna rolls. Y.U.M!! I used Chao cheese for the top (a fave around here!) And a little Daiya cheese in the middle of the rolls (NOT a fave. Lol!) But the Daiya was cool in small doses. Anyway, I'll definitely be making these again, even the baby had two servings!! 😂😂😂😂 #VeganCooking#VeganWin
If you can get your hands on this.... Do! It's so yummy! I'm not keen on bbq flavours so I went for this pizza option from @dereksarno instead and it was beautiful I used the herb dressing as a dip and glad I did as it was a little salty for me so I only had a small amount. @wickedhealthy

So happy I was able to get my hands on the wicked kitchen range at @tescofood this bbq beans and mash is delicious! It has a nice smoky bbq flavour and the flavours compliment each other very well. My only negative view is I wish there was more potato and less mushroom and bean mix....... But that's only because I'm Irish!! Lol

So I was making some lentil soup (because it's a thing my toddler will eat that isn't a starch) and shout out to @stillshoutin for letting me know @dariuscooks is doing a month of vegan recipes for January!! Chickpea flour "egg" scramble!
If you are tired of eating eggs 🥚🍳 all the time, are allergic or are looking for plant based options, here is something a little different! This was so yummy, not to mention it is packed with protein, calcium, potassium, iron and healthy fats!
1.5 cups of chickpea flour
2 cups of water or plain almond milk
2 teaspoons of tahini paste
2 teaspoons of nutritional yeast
Season to your taste ( I add garlic and rosemary powder and sea salt)
Add in veggies of your choice
Add to skillet on medium low flame and as it begins to cook, begin to break up like scrambled eggs. ( If you want to release the flavors , cover the pan for a few minutes). You can also cook without breaking it up so that it comes out like an omelette! 🌱
How is it that I’ve been meat free for almost 4 years now and I’m just finding out that you can make your own homemade mock meat?! And not from veggies but from vital wheat gluten. I came across a handful of recipes on YouTube while trying to figure out a way to make chick’n nuggets because every brand I’ve tried sucks, I wanted like KFC style (you know without all the cruelty) well people were using vital wheat gluten, I didn’t even know this was a thing! I also didn’t know where to buy it 😩 so I pushed the idea out of my head figuring it was a lost cause. Now last weekend Allan and I were in winco, in the bulk section (that I may be slightly obsessed with) as I was stocking up on nutritional yeast I saw way back in the corner ‘VITAL WHEAT GLUTEN’ what?! At winco? For under $3 a pound?! Okay... We filled up a big bag (about 8$ worth) and then headed to the vegetarian section to stock up on @gardein & @morningstarfarms because we need our orange chicken & bbq ribs!
I hunted down those recipes on YouTube for friend chick’n on the way home and dove right into the recipe hoping and praying along the way that it would be good! I couldn’t follow any recipe exactly because I didn’t have all the spices they used so I just used my favorites. Letting it boil for an hour was the worst part 😩 I have no patience.
I followed all the steps, flour, ‘egg’, breading, frying & repeat.
Finally the time came! I had Allan try it first mainly because I was scared I just wasted 2 hours of my life and it was going to be disgusting 😩 HE LOVED IT. My omnivore boyfriend loved it! •
