Plum Streusel cake with a delicious cashew cream layer. 😍 Do you like crumb streusel cakes? I do, I always did, especially as a child. My parents are from Prague and in the Czech Republic streusel cakes are very popular. My favorite one from my mom was filled with poppy seeds but I also love the ones filled with plums, apples or other fruits. 😋 I already have a recipe for Strawberry Crumb bars on my blog (direct link in my bio @elavegan). Meine Eltern sind aus Prag und in der Tschechischen Republik sind Streuselkuchen sehr beliebt. Ich habe diese Menge für eine Portion genommen, weil ich das Aquafaba noch über hatte, ihr könnt die Mengen- Angaben auch mal 3 nehmen für eine ganze Dose Flüssigkeit 🌹 1/3 Flüssigkeit aus der Dose Kichererbsen (Aquafaba) 🌹7g Kokosöl* 🌹7g Backkakao 🌹etwa Süße nach Wunsch 🌹Optional: Vanille Flavourdrops 👉🏼 das Aquafaba steif schlagen 👉🏼Kokosöl erwärmen, damit es flüssig ist und mit Kakao und Süße vermischen 👉🏼Aquafaba unterheben, in ein Glas füllen und für 2 Stunden kalt stellen und genießen 😍😍

Tofu & Broccoli and Homemade Sauce
*
Ingredients:
1 package 16-19 ounces/ 500 g of extra -firm tofu
1/3 cup corn starch, or more
2 cups of the steamed broccoli *
Sauce:
1 tablespoon ginger, finely chopped 
2 cloves garlic, minced 
2 tablespoons soy sauce 
1 teaspoon apple vinegar 
4 tablespoons brown sugar or maple syrup 
1 cup water 
1 teaspoon red jalapeño pepper, finely minced (more or less to taste)
1 - 1/2 tablespoon corn starch mixed with 2 tablespoons water

Directions:
1️⃣ Season and marinate the tofu with salt, black pepper and herbs to taste.
2️⃣ Fry the tofu in batches, and place to a paper towel to remove excess oil.
Fry the garlic, jalapeño pepper, and ginger all together, add soy sauce and water. Then, pour cornstarch mixture, and mix well. Stir constantly until boiling slightly. The sauce will thicken after you add the cornstarch mixture.
4️⃣ Remove the sauce from the heat and allow to cool slightly so that it doesn’t let the tofu soggy.
5️⃣ Add steamed broccoli, and serve it taste.

Creamy Pasta Dinner 💚
Easy and quick 4-ingredient pasta dish ✨

• Whole wheat pasta, 80 grams
• Cashews, about one handful
• Nutritionnal yeast, 2 tbs
• Green peas, cooked, 150 grams
.
Blend the cashews with the nutritionnal yeast until you obtain a powder. Add a pinch of salt if necessary. 
Cook your pasta. Keep some of the cooking water. In a pan, roast your fresh or pre-cooked greenpeas. Reserve. Put the cashew-yeast powder into the pan and gradually add cooking water until you get a creamy texture. Add your pre-cooked green peas and the al-dente pasta into the sauce, stir it well. That’s ALL.

I added chili flakes and fresh parsley for an extra fresh and spicy taste, but really you can add any spice you want, directly into the pan or upon serving.

CCRaVE Cups (Chocolate Caramel Raw and Vegan Energy) Cups! 🍫💓
Base Layer:
1 cup raw almonds
1/2 cup softened dates
*Process ingredients and press down into silicone muffin cups.
Caramel Layer:
1 cup raw cashews, soaked in boiled water for 10 mins or overnight in fridge
1/3 cup melted coconut oil
1/4 cup agave
1/4 cup water
1/2 tsp vanilla extract
1 tsp raw beetroot powder 
pinch of salt
*Process all ingredients, add to cups on top of base layer, and pop in the freezer for at least 30 mins.
Almond Butter Layer: 3/4 cup raw almond butter
*Simply add atop the Caramel Layer Chocolate Layer:
1/2 cup melted raw coconut oil
1/4 cup agave (or maple syrup)
1/4 cup raw cacao powder
*Whisk ingredients until thoroughly combined.  Add to the cups and freeze overnight (if you can wait that long!!) Devour 😋🙌💜

Es gibt einen Spruch, der mir ziemlich häufig in den Sinn kommt " wenn du Liebe schenken kannst und den Tag eines Menschen durch eine kleine Geste besser machen kannst, dann tue es". An jeden von euch, der sich entschieden hat mir zu schreiben anstatt einfach weiter zu kicken : ihr seid wundervoll ❤💕 auf dem Foto sehr ihr einen glutenfreien, zuckerfreien, weizenfreien Apfelkuchen. Den habe ich heute in übrigen für die Kollegen meines Freundes gebacken 🙂Super lecker geworden! Hello Monday friends😂....I know there aren't probably any at all😂😂😂but anyway even on that day we need to eat and this is what I had today for breakfast. Overnight rice and quinoa flakes soacked in almond milk, cinamon and dates😍 layered with slightly  carmelised apples + almonds and xylit.
So this is what I used for these 2 glasses:
Overnight flackes:
400 ml almond milk 
5 chopped dates
200 g rice flakes 
150 g quinoa flakes 
1/2 tsp vanilla powder 
1/2 tsp cinnamon + any other spices
2 tsp any nut butter (I used peanut butter)
Put all ingredients in to a pot and let it to get warm on an oven plate. Switch off the oven  and let it cool down. Leave it in the kitchen for overnight. 
for the apple layers:
1apple
2 tbsp almond flakes 
1/2 tsp cinnamon 
2 tsp xylit
1 tsp coconutoil 
Melt the coconut oil in a frying pan and add chopped apple and the rest of ingredients. Stir and fry it a few min. and do not burn anything.
Serve in glasses or bowls mixing both mixtures and add your favorite toppings.

Hello, ihr Hübschen! Den Montag gut überstanden? Ich hab mich durchgeboxt. Diese graue/kalte Jahreszeit macht mir generell zu schaffen. 😅 Wem geht es da ähnlich? Ich brauche nicht das ganze Jahr Sonne (bin keine Sonnenanbeterin), aber die Kälte, die kurzen Tagen sind nicht meine Favorites im Winter. Zünde mir Zuhause dann auch so viele Kerzen wie nur möglich an, um eine gemütliche und angenehmere Stimmung zu schaffen. Wie verschönert ihr Euch die kalte Jahreszeit? Zum Abend gibt es Wedges und ein Hasselback, Pimientos, Falafel, Hummus und eine halbe Avocado. Hatte mich zwischenzeitlich am Ofen angewärmt. Vllt. auch eine Methode es einem angenehmer zu machen? 🤷🏻‍♀️Okay, ich gönn mir jetzt. Habt einen schönen Abend!

Call me crazy but these carrots are so good they could be the star of a dinner. 😍 Am I the only one that’s not totally fond of sweet potatoes? 🍠 I’ll eat them anyways but they get a lil too mushy for me. My resolve was to experiment with carrots and the result was a great success. Key is to mix salty and garlicky with cinnamony (Is that even a word?) and sweet. Strange, I know. But just trust me. 6 Slices of Sourdough Bread
2 cups Mushrooms
2 Cloves of Garlic
4 Scallions
2 tbsp Balsamic Vinegar
2 tbsp Olive Oil
Salt and Pepper

Directions
Toast the bread, heat the oil over a low heat and sauté chopped garlic until it starts to soften increase the heat to medium and add the sliced mushrooms, cook for a few minutes turning occasionally until the mushrooms are cooked to your liking, add the balsamic and some salt and pepper and serve on top of the toast with a bit of fresh spring onion.

Ok. I can't stop myself using persimmons for everything. They are soooo delicious. I made a salad for one of my assignments from them. Also fresh thyme is another great herb that I love using. Plus avocado cubes, strawberry, radish and pink sauce.🙆

💕💜 BlackBerry oatmeal topped with gojis, mulberries, blueberries, grapes, pecans, and strawberries! The oatmeal is very simple. I just tossed about 1/4 cup of blackberries into a small saucepan with the juice from one lemon. I turned the heat to medium-low and let them simmer until they were tender (about 5 min). I mashed them with a fork and added the mixture to my cooked oats. Easy as pie. Speaking of pie, stay tuned for some doozies for Thanksgiving! Hope everyone is having a fabulous day! °

Aquí va una súper receta de pan Casero 100% integral 🥖🥖🥖
⠀⠀⠀⠀⠀⠀⠀⠀
Es muy fácil de hacer, y queda delicioso! 😋
El pan me lo ha hecho mi amiga Adriana, y está tan rico que he tenido que pedirle la receta para compartirla!
⠀⠀⠀⠀⠀⠀⠀⠀
Si lo cortáis en 10 rebanadas os salen unos 50 gr de carbohidratos en cada rebanada, lo cual es una buena porción para desayunar, por ejemplo.
⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTES: ( molde 10x20)
⠀⠀⠀⠀⠀⠀⠀⠀
PARA EL PREFERMENTO:
▪ 250 gr de harina de trigo integral
▪ 250 ml de agua tibia
▪ 1,5 gr de levadura de panadero seca.
⠀⠀⠀⠀⠀⠀⠀⠀
PARA EL RESTO:
▪ 250 gr de harina de trigo integral
▪ 80 ml de leche tibia
▪ 1,5 gr de levadura de panadero seca
▪ 1 cucharada de miel
▪ 2 cucharadas de aceite de oliva virgen
▪ 10 gr de sal
⠀⠀⠀⠀⠀⠀⠀⠀
PROCEDIMIENTO: 
En un bol ponemos los ingredientes del prefermento, lo mezclamos con una cuchara, lo tapamos con un film y lo dejaremos un par de horas, si la temperatura es mas fría, déjalo tres horas. Pasado este tiempo añadimos el resto de los ingredientes. Si tienes amasadora, lo amasaremos
durante aproximadamente 5 min. a velocidad baja-media.
Si lo amasas a mano, tendrás que hacerlo durante unos 10 min. o hasta que veas que la masa está lisa y elástica.
Pincelamos con aceite el molde y reservamos, o bien usamos uno de silicona. 
Pon unas gotitas de aceite en las manos, para poder manipular la masa con facilidad.
Una vez que tenemos la masa en las manos, vamos a darle  forma redondeada, con suavidad.
Ahora vamos a alargar la masa. Ponemos la masa en la encimera y hacerla rodar para que vaya cogiendo forma.
Cuando la tengas, acomódala en el molde, tápala con un paño limpio y déjala durante 1 hora, en un lugar cálido y libre de corrientes.
A la media hora enciende el horno a 250°, con calor arriba y abajo, para que vaya cogiendo temperatura. 
Cuando haya pasado la hora, metemos el molde en el horno y lo dejaremos aprox. 30 min. a esa misma temperatura. 
Si ves que se tuesta más de la cuenta, pon un trozo de papel de horno y encima otro trozo de papel de aluminio.
Déjalo en el molde 10 min., desmolda y ponlo encima de una rejilla. Listo.

Baked apple and cinnamon spiced donuts with a salted caramel glaze by @the_smallseed_ 💖
Recipe (makes 6): 1 C Spelt flour. 1 C Almond Meal. 1/2 C + 1 1/2 Tbls. Coconut sugar. 1 1/4 Tsp Baking powder. 1 1/4 Tsp Cinnamon powder.
Wet: 3/4 C peeled grated Apple. 2 flax eggs (2 Tbls flaxmeal mixed thoroughly with a fork with 6 Tbls water and left to sit for a 10mins). 3 Tbls Maple syrup. 2 Tbls Almond milk.
Add all wet ingredients together and combine. Now add the wet ingredients to the dry, stir to combine, it will seem really dry but keep combining gently.
Place spoonfuls into donut mould and level the top. Place in oven for aprox 17 mins check if cooked by sticking a skewer in, if it comes out wet it needs longer, if comes out clean they're cooked.
Leave to cool or 10-15 mins before turning out onto a wire rack. Once Donuts are cold glaze them.
For the glaze: 130g @loving_earth salted caramel. Place caramel into a small bowl and melt either in a microwave or in a ban Marie. Dip donuts and place on wire rack to dry before dipping again.

Baked apple and cinnamon spiced donuts with a salted caramel glaze by @the_smallseed_ 💖 Recipe (makes 6): 1 C Spelt flour. 1 C Almond Meal. 1/2 C + 1 1/2 Tbls. Coconut sugar. 1 1/4 Tsp Baking powder. 1 1/4 Tsp Cinnamon powder. Wet: 3/4 C peeled grated Apple. 2 flax eggs (2 Tbls flaxmeal mixed thoroughly with a fork with 6 Tbls water and left to sit for a 10mins). 3 Tbls Maple syrup. 2 Tbls Almond milk. Add all wet ingredients together and combine. Now add the wet ingredients to the dry, stir to combine, it will seem really dry but keep combining gently. Place spoonfuls into donut mould and level the top. Place in oven for aprox 17 mins check if cooked by sticking a skewer in, if it comes out wet it needs longer, if comes out clean they're cooked. Leave to cool or 10-15 mins before turning out onto a wire rack. Once Donuts are cold glaze them. For the glaze: 130g @loving_earth salted caramel. Place caramel into a small bowl and melt either in a microwave or in a ban Marie. I decided to go with blue chia pudding because I want to do something similar like her. Create photos and „art“ which has never been before on Instagram. Her Fairy bowls were something new! 1 banana 
1 1/2 cups wholemeal flour 
1 1/2 tbsp baking powder 
1 cup almond milk 
2 tbsp coconut oil 
1 tsp vanilla bean extract 
2 tbsp maple syrup 
3 tbsp cocoa powder .
Pinch of salt.
In a medium bowl, combine all ingredients and whisk until you have a smooth batter. Cook batter according to your waffle iron's instructions. Serve warm with your choice of fruits. Enjoy! .

Here is crepes for breakfast, beet crepes and plain crepes with caramelised banana, budwig protocol and blueberry compote filling. Topped with honey turmeric sauce and fresh strawberries.

I layered vegan caramel cookies, frozen berries and vegan curd. It's easy to prepare, layer everything and put it in the fridge . ( for a few hours or overnight ) Topped with cookie crumbles.

But sometimes you've had a crappy day, and how do you stay motivated throughout that? Our trick is a repertoire of simple yet healthy recipes that are just easy. This veggie stir fry is such low effort to make and cook, tastes great, and won't jeopardize your goals.

Ingredients
1 Onion
1 cup Mushrooms
1 cup Sugar Snap Peas
1 cup Green Beans
1/2 cup Baby Corn
2 cups Broccoli
2 Cloves of Garlic
1 Red Chilli
2 tbsp Soy Sauce
2 tbsp Vegetable Broth
1 tbsp Brown Sugar
2 tbsp Corn starch
1 tbsp Fresh Ginger
2 tbsp Peanut Oil
7oz Rice Noodles
2 tbsp Sesame Seeds

Directions
Boil and drain the noodles according to the packets instructions, make a sauce out of the soy sauce, vegetable broth, sugar and corn starch and put to one side. Slice all the vegetables into bite size pieces, heat a pan over a medium heat and in the peanut oil and sauté the onion, ginger and garlic. After about 5 minutes when the onion is softening and getting a bit of colour increase the heat a little bit and add in the chopped chilli, mushrooms, green beans, sugar snap peas, and broccoli. You want to keep the heat high and keep everything moving around, a splash of water helps everything cook through. Once cooked, combine with the sauce and continue cooking for a couple of minutes over a medium heat add a bit of water if necessary, and serve with the noodles.

As I've had quite a bit of sweet treats in the last days, I'm in a serious craving for these puff pastries at the moment...🤤😍 Too bad I don't have any olives left at home, otherwise I'd not hesitate a second to make these! 👅 It looks like I'll just have some veggies for breakfast now 🍅🥒🥕 But hey, I'm glad I've always had the passion to show my food to my mom as I took this picture months ago for her to see how delicious these pastries were, made with my Turkish black olive tapenade 😇♥ Here's the recipe of this deliciousness:

🥐 Puff Pastry with Olive Tapenade 🥐
*Puff pastry
*Homemade or store bought black olive tapenade (I made my own by just blending black olives, adding a pinch of salt and my favourite herbs: chili flakes, dry mint and basil)
*Tahini
*Sesame seeds
• Divide the puff pastry into 8 pieces (or more if you'd like), add the olive tapenade filling and give them a shape your heart desires 😊 I love the bagel look for breakfast, but if you plan on having them as a snack then I'd recommend the stick version, I don't know why 🙈😀 I guess I like to nibble on them while watching stuff 😇😂
• Once done styling, garnish them with tahini (don't omit it as it is the key ingredient), and sprinkle sesame seeds on top!
• Bake at 180 °C until they are golden brown (about 10-15 minutes). ENJOY 👌😙

Neue Woche🍀 Neue Ziele🏁 Große Ziele sind wichtig. Eine Richtung die man ansteuert, selbst wenn es nicht immer gerade aus geht, sondern mal nach links, rechts oder einen Schritt zurück. Auf meinem Weg aus der Essstörung hatte ich mein großes Ziel, gesund zu werden, zwar immer im Hinterkopf, im Mittelpunkt standen jedoch immer die kleinen Ziele. Schritt für schritt. In meinem Tempo und ohne mich mit anderen zu vergleichen(!). Mein großes Ziel, was vor 2 Jahren noch völlig utopisch für mich war und Angst und Überforderung in mir ausgelöst hat, habe ich heute erreicht, dank all den kleinen Zielen und Erfolgen. Eine Richtung die man ansteuert, selbst wenn es nicht immer gerade aus geht, sondern mal nach links, rechts oder einen Schritt zurück. Aber viel wichtiger sind die kleinen Ziele auf diesem Weg. Auf meinem Weg aus der Essstörung hatte ich mein großes Ziel, gesund zu werden, zwar immer im Hinterkopf, im Mittelpunkt standen jedoch immer die kleinen Ziele. Schritt für schritt. In meinem Tempo und ohne mich mit anderen zu vergleichen(!). Mein großes Ziel, was vor 2 Jahren noch völlig utopisch für mich war und Angst und Überforderung in mir ausgelöst hat, habe ich heute erreicht, dank all den kleinen Zielen und Erfolgen. I made a vegan version of them by replacing the egg with half a banana - 4 tbsp of applesauce work as well. There are so chewy, crispy... and much more better than regular cookies ! A pure happiness in your mouth. 💞
👉 Ingredients : 67g oat flour, 45g old-fashioned oats, 23g quick oats, 3/4 tsp baking soda, 1 tsp cinnamon, a pinch of salt, 1,5 tsp vanilla extract, half a mashed banana (50g) or 4 tbsp applesauce, 5 tbsp brown sugar (lightly packed), 105g coconut oil, about 90g dark chocolate chips.

These bliss balls are fudgy choc cherry with a touch of the festive season with the addition of dried figs, spices and orange zest. All ingredients (except 2) can be found in your local bulk foods health store. I shop at @nkdfoods_braddon / @nakedfoods and more consciously doing this in the lead up to the festive season as I want to minimise waste!
