Pasta for dinner 🍝 I used a low sodium garlic pasta sauce, but I doctored it up with some fresh veggies, lentils and herbs. This recipe is gluten-free, vegan, soy-free, low sodium.
1 cup brown lentils
1 large carrot
1/2 white onion
1 small red bell pepper
1 tsp garlic
1 tsp dried basil
2 tsp dried oregano
1/2 tsp red pepper flakes (1 tsp for spicer)
2 tbs nutritional yeast
2 small bay leaves
3 cups low sodium garlic pasta sauce
2 cups of water
Wash and cut all the veggies. Put everything in a large pan or pot and simmer for 45-50 min. Depending on your lentils. Mine took a while to break down. Some lentils cook faster depending on the color and brand. You want to cook this with the lid on so you don't loose too much liquid during the cooking process. Keep testing the sauce to ensure the veggies and lentils are to your liking. Add the sauce to pasta. Or just eat it straight from the pan like I did! 😜 Garnish with chives, basil, parsley, etc. .

After a hike, my sister and I went to @ora_bistro ! I had their Superfood Smoothie Bowl topped with granola, goji berries and chia seeds (and @alexannelauzon had the veggie sandwich with a brocoli soup) ❤ Their menu isn't 100% vegan, but they have lots of great vegan options 😘

I know there's no pb in this but IT WAS STILL AMAZING 😂 this was my first attempt at making something from @earthfawn's eBook about a week ago (I make it sound like the recipes are hard to follow but they so aren't, I'm just good at reading the end of ingredients lists after I've started making it 🙃) sooooo this was meant to be the Shiitake Congee and it was going really well until I realised I'd used the wrong kind of rice so I made the rest up (but amazingly used the right ingredients minus the rice obvs) and it tasted so damn good but just didn't quite look how it's meant to 😂

I have made banana bread more times than I can count because my local IGA has ripe bananas on special and its just sooooo hard to walk past a ripe banana bargain! Plus there is always a couple of over ripe apples in the bottom of the fridge fruit drawer and what better way to use them both by making an Apple Banana Loaf (recipe link in bio) Now I must confess that I made this recipe 3 times and all 3 times I couldn’t decide which was the better outcome hence I’ve written 2 or 3 bananas. I prefer the recipe with 2 large bananas and then when I cut a slice to eat I pour a tsp of agave syrup over it yet my daughter preferred a more moist loaf using the 3 bananas and only a thin spread of organic butter on top (photo is using 3 bananas). I seriously can’t decide so I’m giving you the option. Can you tell I’ve partly given up? It occurred to me then that we all have different tastes and preferences. I mean I don’t think I have EVER followed a recipe exactly as it is written. I am always thinking I can do better or adapt it to suit our family’s tastebuds. Therefore there is nothing wrong with you guys doing the same. If you don’t like one version then adapt it by using the other version! You will also notice in the ingredients that there are vegan options for those who follow a vegan diet or for those who are fasting and as usual this recipe is gluten free using @orgran_nutrition plain flour. Hello beautiful people! Here are some next level jackfruit nachos! I would say I put the jackfruit to good use this week. What I learned from using it, is that it's extremely similar to meat texture and can fool anybody. For the dish I used this brand of chips made from dehydrated juicing pulp. Topped it off with a rainbow carrot slaw, pink cabbage, cilantro, homemade pink nacho cheese, avocado crema and a sweet chipotle aoli. Recipe will be in my Ebook that I'm currently putting together! The first layer 🏛consist off you making your best effort to get to a place in which you think you will feel happy, would this mean surrounding yourself with other people 👩🏼💼👨🏽💼our moving to a different place🌆🌃. The big different between this layer and the one above 🌁is that in this layers you fulfill all the need you think you have oppose to the other were you are only concentrated on what you don't have not appreciating 🙏🏻what is already there for you to nurture off. So button line is that there is a fine line⛰ between what you need to be happy and what you think you still need to be happy. This said try to be less hard on yourself and be patient ☮️since the best things often come when you expect them the least.
Today we planted 🌱new potatoes in our garden because they had not survived the storm. Now we have little babies again. Let's hope that they will grow stronger this time. 😊🙏🏻

I prepared canapes from whole grain 🍞 with tahini and cucumbers 😊😊🌟🌟🌟 Have you ever made tahini paste? It is so easy and tasty and you need only 3 ingredients. Toaste sesame seeds, let them cool. Blend them with pinch of salt and some olive oil. And your homemade tahini is ready to use 😉👌👌👌
