One ( of many ) results from my hospital stay was too much protein in my diet. So twice a week I’m having meat free days. Funny as I have named myself the meat eating vegan - the girl that would go vegan but loves a good steak. So - now I am - BOTH lol. Today’s Vegan lunch, tofu nuggets from @colessupermarkets with roasted pumpkin, cooked mushrooms, quinoa, salad with greens, mango, prunes and cherry tomatoes. Dressing is made from apple cider vinegar and avocado topped with almonds. 100% wholefoods ( foods that have not been processed ) 100% healthy and 100% meatfree
Healthy food is not hard, nor time consuming, nor tasteless. What is hard is changing YOUR ways. I was told there was a problem and I’ve adapted my diet accordingly - because at the end of the day - YOUR HEALTH MATTERS!!! .
Vegan super bowl! Crispy silken tofu, mushrooms, broccoli and snow peas on a bed of black rice, then doused in a sweet and tangy dressing. Finish with a fling of spring onion, coriander & sesame seeds.. Tofu is tossed in Chinese 5 spice, cornflour, chilli powder & grapeseed (or vegetable) oil and fried. Recipe for dressing: 3 tbsp dark soy, 3 tbsp mirin, 1 finely diced small red chilli, 3 tbsp maple syrup, 3 tbsp toasted sesame oil, 2 cm grated ginger, 2 grated garlic cloves, 1-2 tbsp lime juice. Put all ingredients in a jar then shake it like hell (emulsify).
